English version

Hands up if this has ever happened to you... You’re on holiday, the day runs away with you, you get home late, tired, hungry and with exactly zero desire to cook.

It happens to me too. Not once or twice, but hundreds of times!

And in those moments, I try to remind myself of something we sometimes forget when we’re trying to live a healthy lifestyle: you don’t have to do everything perfectly to do it well.

And yes, I could tell you to make your own pizza dough. Mix the flours, knead it, leave it to rest... but it’s half past eight in the evening, you’ve just got back from the beach or the pool, and you and I both know that’s not happening tonight.

So you pick up a good refrigerated pizza dough from the nearest supermarket and we carry on from there.

And while you’re there, grab some broccoli, eggs, Parmesan and goat’s cheese.

What happens next is somewhere between a pizza and a quiche. It probably wouldn’t win any prizes with purists from either camp, but at home we think it’s absolutely brilliant. Honestly, it’s ridiculously good.

First, I roast the broccoli so it gets nicely golden and develops loads more flavour. Meanwhile, I pre-bake the pizza base and mix together the eggs, milk, Parmesan and goat’s cheese.

Then all that’s left to do is bring everything together and let the oven do the rest.

And there’s dinner.

The lightly roasted broccoli, creamy goat’s cheese, Parmesan and crisp base make eating vegetables a lot more exciting than finding a sad pile of boiled broccoli on your plate.

But above all, you’ve got a delicious, easy dinner that you’ve made without making life difficult for yourself.

Because, for me, eating well is also about this. It’s knowing when something is worth making from scratch and when a good supermarket option can quite happily rescue dinner.

No guilt. No trying to reach some idea of perfection that, quite honestly, I don’t need on holiday either.

So save this broccoli and goat’s cheese pizza-quiche recipe for one of those summer days when you get home thinking the very last thing you want to do is spend time in the kitchen.

And now tell me… are you saving this recipe because you already know it’s going to rescue an improvised dinner one day, or are you going to let it pass?

I’m reading you, and if you want to see exactly how I make it, you can watch the video HERE 🥦🥧

Quiche de hinojo caramelizado, kale y curd de queso de cabra

*English Recipe at the bottom of the post* Hasta hace un par de años creo que no había probado nunca el hinojo.

Ingredientes

  • 125 ml de vinagre de jerez
  • 90 g de azúcar moreno
  • Sal marina y pimienta negra recién molida

Caramelised fennel, kale and goat's curd quiche (Donna Hay recipe)

Ingredients

  • 125ml sherry vinegar
  • 90g brown sugar
  • Sea salt and cracked black pepper
  • 500g baby fennel, trimmed and halved
  • 2 eggs
  • 250ml single cream
  • 1 tsp dijon mustard
  • 2 sheets shop-bought all-butter puff pastry
  • 30g kale leaves, blanched and chopped
  • 80g goat’s curd or creamy goat’s cheese, plus extra, to serve
Method
  1. Preheat the oven to 220C/Gas 7. Place the vinegar, sugar, salt and pepper in a small, deep-sided baking tray. Add the fennel, cut-side down, and roast for 35-40 minutes or until sticky and tender. Reduce the temperature to 180C/Gas 4.
  2. Place the eggs, cream, mustard, salt and pepper in a bowl and whisk to combine.
  3. Trim the pastry and use to line a lightly greased 34cm round ceramic tart base.
  4. Top with the kale ad the fennel, cut side up.
  5. Pour over the egg mixture and place spoonfuls of the goat’s cheese around the fennel. Bake for 40 minutes or until just set and golden. Serve with extra goat’s cheese (I didn’t do this and think its unnecessary).
