Receta express de TARTAR DE ATÚN CON GUACAMOLE 🍣

Esta semana me guiñaron un ojo en el mercado...

Salí pronto de una reunión, me pillaba de paso y me acerqué a curiosear entre los puestos, sin prisas. Y de pronto... algo me llama.

Y ahí estaba.
Un lomo de atún fresco, brillante, con ese color imposible de fingir. Me miró. Lo miré. Y ya no hubo vuelta atrás.

No estaba en los planes.

Ni el atún, ni la receta...

Así nació este plato.
Fresco, rápido, sin una lista grande de ingredientes, pero con todo el sabor.

Porque cuando el producto es bueno, lo mejor que puedes hacer es no complicarlo -siendo sincera, tampoco tenía ganas de pasarme horas cocinando-.

Una capa de atún marinado con lima y ralladura. Otra de guacamole muy básico, con cilantro y un toque de tabasco si te va la marcha.
Y para terminar, unos daditos de tomate rosa que son verano en forma de fruta.

Sí, fruta. Porque el tomate es fruta y de la familia de las fresas.
(¿Ves? Ya tienes un dato curioso para soltar en la próxima comida familiar 😉)

Lo preparas en menos de 10 minutos.
No necesitas encender fogones, ni ensuciar media cocina.
Solo un buen cuchillo, ingredientes frescos de calidad y ganas de algo rico.

Tartar de atún con guacamole

Ingredientes (para 1 persona)

  • 1 lomo de atún rojo
  • 1 lima y su ralladura
  • 1/2 aguacate
  • Tabasco (opcional para el guacamole)
  • Cilantro fresco
  • 1 tomate (me gusta el rosa de Barbastro)
  • Aceite de oliva virgen extra
  • Sal y pimienta

Preparación

  1. Corta el atún en tacos.
  2. Añade al atún el zumo de 1/2 lima y su ralladura, sal y pimienta.
  3. Pica 1/2 aguacate y sazona con el zumo de 1/2 lima, cilantro, sal y pimienta. Mezcla bien.
  4. Corta el tomate en cubos.
  5. Emplata colocando las tres capas. Sazona de nuevo ¡y a disfrutar!

This week, I caught a wink at the market…

I finished a meeting early, it was on my way, so I stopped to wander around the stalls, unhurried. And suddenly… something called me.

And there it was.
A fresh tuna loin, bright, with that colour that can’t be faked. It looked at me. I looked at it. And that was it.

It wasn’t planned.

Neither the tuna, nor the recipe...

That’s how this dish was born.
Fresh, quick, with no long list of ingredients, but full of flavour.

Because when the product is good, the best thing you can do is not overcomplicate it — and honestly, I didn’t feel like spending hours in the kitchen either.

One layer of tuna marinated with lime juice and zest. Another of very simple guacamole, with coriander and a touch of Tabasco if you like a bit of heat.
And to finish, small cubes of pink tomato that taste like summer in fruit form.

Yes, fruit. Because tomato is a fruit, from the same family as strawberries.

You can make it in under 10 minutes.
No stove needed. No half the kitchen to clean.
Just a good knife, fresh quality ingredients and a craving for something delicious.

Tuna tartare with guacamole

Ingredients (for 1 person)

  • 1 fresh tuna loin
  • 1 lime and its zest
  • 1/2 avocado
  • Tabasco (optional, for the guacamole)
  • Fresh coriander
  • 1 tomato (I like pink Barbastro tomato)
  • Extra virgin olive oil
  • Salt and pepper

Method

  1. Cut the tuna into cubes.
  2. Add the juice of 1/2 lime and its zest to the tuna, season with salt and pepper.
  3. Chop 1/2 avocado and season with the juice of 1/2 lime, coriander, salt and pepper. Mix well.
  4. Dice the tomato.
  5. Plate by layering the three components. Season again and enjoy!

Receta de vinagreta verde de tahini y matcha

Aliño de tahini, limón, menta y matcha

Este aliño es top máxima para tus ensaladas, verduras y pescados. 🍃🥗

Porque, a veces, lo único que necesita un plato simple y aburrido para convertirse en “ese plato que no puedes dejar de comer” es el aliño o la salsa adecuados.

Esta receta no solo cumple esa función, sino que va un paso más allá: tiene personalidad, textura y un sabor que sorprende.

Imagínate: la cremosidad del tahini, la acidez del limón recién exprimido, el frescor de la menta y ese punto sutil, herbáceo y elegante del té matcha. Todo ligado con un buen aceite de oliva virgen extra y un toque (opcional) de dulzor.

El resultado es un aliño versátil y lleno de matices que puedes usar sobre verduras asadas, pescados al horno, bowls frescos o incluso como dip para crudites. Una combinación única, te sorprenderá.

En casa ha pasado de ser un experimento curioso a una receta habitual, que repetimos una y otra vez.

Además, puedes adaptarlo a tu estilo de alimentación:

¿Sigues una alimentación low carb o keto? Elimina la miel o el sirope, y sigue disfrutando del sabor y los beneficios de las grasas saludables.
¿Prefieres una versión más intensa? Aumenta la cantidad de matcha o juega con otras hierbas frescas como albahaca o cilantro.

Una receta fácil, rápida y deliciosa que demuestra que comer saludable no tiene por qué ser aburrido.

Aliño de tahini, limón, menta y matcha

Ingredientes

Para el aliño

  • 4 cucharadas de tahini
  • 1/2 cucharada de agua muy fría (o un poco más si lo necesitas)
  • 3 cucharadas de aceite de oliva virgen extra
  • 1 limón (su ralladura y el zumo)
  • 1/2 cucharadita de matcha en polvo
  • Unas hojas de menta fresca (unas 7 hojas)
  • Unas hojas de perejil fresco
  • 1 cucharadita de pimienta roja o pimienta negra recién molida
  • 1/2 cucharadita de miel o sirope de arce (opcional)
  • 1/2 cucharadita de sal kosher

Instrucciones

  1. En un bol pequeño, mezcla el agua fría y 1/2 cucharadita de matcha. Bate con un batidor de matcha de bambú o con un tenedor hasta que no queden grumos.
  2. En otro bol, bate el aceite de oliva, el tahini, el zumo y la ralladura de limón, la miel o el sirope (si los utilizas), la sal y la pimienta. Mezcla bien hasta que quede homogéneo.
  3. Añade la mezcla de matcha al aliño, batiendo constantemente. Si queda muy espeso, agrega un poco más de agua fría, poco a poco, hasta conseguir la consistencia deseada.
  4. Pica finamente las hojas de menta y perejil, añádelas al aliño y mezcla de nuevo.
  5. Prueba y ajusta los ingredientes a tu gusto: más limón, sal, pimienta o dulzor si lo consideras necesario.

Tahini, Lemon, Mint & Matcha Dressing

Ingredients

For the dressing

  • 4 tablespoons tahini
  • 1/2 tablespoon very cold water (or a little more, if needed)
  • 3 tablespoons extra-virgin olive oil
  • 1 lemon (zest and juice)
  • 1/2 teaspoon matcha powder
  • A few fresh mint leaves (about 7 leaves)
  • A few fresh parsley leaves
  • 1 teaspoon red pepper flakes or freshly ground black pepper
  • 1/2 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon kosher salt

Instructions

  1. In a small bowl, mix the cold water and 1/2 teaspoon of matcha. Whisk with a bamboo matcha whisk or a fork until no lumps remain.
  2. In another bowl, whisk together the olive oil, tahini, lemon juice and zest, honey or maple syrup (if using), salt and pepper until well combined.
  3. Add the matcha mixture to the dressing, whisking constantly. If it feels too thick, add a little more cold water, a splash at a time, until you reach your desired consistency.
  4. Finely chop the mint and parsley leaves, add them to the dressing and mix well.
  5. Taste and adjust the seasoning to your liking: more lemon, salt, pepper or sweetness if needed.
