Baba Ganoush ✨🍆 .

Hoy es domingo... Hay quienes los pasan en el sofá…
Y luego estamos quienes amamos el batchcooking y tenemos cita con la cocina.

Si tú también formas parte del club de las que preparan tuppers para sobrevivir a la semana sin caer en “¿y ahora qué como?”, esta receta es para ti.

Una de las cosas más fáciles (y deliciosas) que puedes tener en la nevera. Y sí, además de sana, versátil y absolutamente adictiva.

A mí me encanta dejarla lista en un tarro para añadirla en ensaladas, para acompañar cualquier segundo o, lo mejor de todo: para dipear.

Corta unas zanahorias o apio en bastones o tus vegetales favoritos y ¡prepárate para no poder parar hasta que se acabe el tarro!

La textura es cremosa, el sabor tiene ese punto tostado que enamora, y se prepara con unos pocos ingredientes que son básicos de cualquier cocina de hoy en día.

Baba Ganoush

Ingredientes

  • 2 berenjenas
  • 3 ajos machacados
  • 3 cucharadas de tahini
  • 3 cucharadas de zumo de limón
  • 1/2 cucharadita de sal
  • 2 cucharadas de AOVE
  • Perejil picado

Preparación

  1. Asa las 2 berenjenas durante 1 hora a 200ºC.
  2. Saca la carne del interior y machaca con un tenedor.
  3. Añade los ajos machacados, el tahini y el zumo de limón y mezcla bien.
  4. Incorpora la sal y el AOVE y sigue mezclando hasta que se integren.
  5. Sirve con un poco de perejil picado.

If you’re also part of the club of people who prep containers to survive the week without falling into “what am I going to eat now?”, this recipe is for you.

One of the easiest (and most delicious) things you can keep in the fridge. And yes — healthy, versatile and absolutely addictive.

I love having it ready in a jar to add to salads, to serve alongside any main dish or, best of all: for dipping.

Cut some carrots or celery into sticks, or use your favourite vegetables, and get ready not to stop until the jar is empty.

The texture is creamy, the flavour has that toasted note that makes you fall in love, and it’s made with just a few ingredients that are kitchen staples these days.

Baba Ganoush

Ingredients

  • 2 aubergines
  • 3 garlic cloves, crushed
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • Chopped parsley

Method

  1. Roast the aubergines for 1 hour at 200ºC.
  2. Scoop out the flesh and mash it with a fork.
  3. Add the crushed garlic, tahini and lemon juice and mix well.
  4. Add the salt and olive oil and continue mixing until combined.
  5. Serve with a little chopped parsley on top.

Receta de vinagreta verde de tahini y matcha

Aliño de tahini, limón, menta y matcha

Este aliño es top máxima para tus ensaladas, verduras y pescados. 🍃🥗

Porque, a veces, lo único que necesita un plato simple y aburrido para convertirse en “ese plato que no puedes dejar de comer” es el aliño o la salsa adecuados.

Esta receta no solo cumple esa función, sino que va un paso más allá: tiene personalidad, textura y un sabor que sorprende.

Imagínate: la cremosidad del tahini, la acidez del limón recién exprimido, el frescor de la menta y ese punto sutil, herbáceo y elegante del té matcha. Todo ligado con un buen aceite de oliva virgen extra y un toque (opcional) de dulzor.

El resultado es un aliño versátil y lleno de matices que puedes usar sobre verduras asadas, pescados al horno, bowls frescos o incluso como dip para crudites. Una combinación única, te sorprenderá.

En casa ha pasado de ser un experimento curioso a una receta habitual, que repetimos una y otra vez.

Además, puedes adaptarlo a tu estilo de alimentación:

¿Sigues una alimentación low carb o keto? Elimina la miel o el sirope, y sigue disfrutando del sabor y los beneficios de las grasas saludables.
¿Prefieres una versión más intensa? Aumenta la cantidad de matcha o juega con otras hierbas frescas como albahaca o cilantro.

Una receta fácil, rápida y deliciosa que demuestra que comer saludable no tiene por qué ser aburrido.

Aliño de tahini, limón, menta y matcha

Ingredientes

Para el aliño

  • 4 cucharadas de tahini
  • 1/2 cucharada de agua muy fría (o un poco más si lo necesitas)
  • 3 cucharadas de aceite de oliva virgen extra
  • 1 limón (su ralladura y el zumo)
  • 1/2 cucharadita de matcha en polvo
  • Unas hojas de menta fresca (unas 7 hojas)
  • Unas hojas de perejil fresco
  • 1 cucharadita de pimienta roja o pimienta negra recién molida
  • 1/2 cucharadita de miel o sirope de arce (opcional)
  • 1/2 cucharadita de sal kosher

Instrucciones

  1. En un bol pequeño, mezcla el agua fría y 1/2 cucharadita de matcha. Bate con un batidor de matcha de bambú o con un tenedor hasta que no queden grumos.
  2. En otro bol, bate el aceite de oliva, el tahini, el zumo y la ralladura de limón, la miel o el sirope (si los utilizas), la sal y la pimienta. Mezcla bien hasta que quede homogéneo.
  3. Añade la mezcla de matcha al aliño, batiendo constantemente. Si queda muy espeso, agrega un poco más de agua fría, poco a poco, hasta conseguir la consistencia deseada.
  4. Pica finamente las hojas de menta y perejil, añádelas al aliño y mezcla de nuevo.
  5. Prueba y ajusta los ingredientes a tu gusto: más limón, sal, pimienta o dulzor si lo consideras necesario.

Imagine: the creaminess of tahini, the brightness of freshly squeezed lemon, the freshness of mint and that subtle, herbal, elegant touch of matcha tea. All brought together with a good extra-virgin olive oil and a (totally optional) hint of sweetness.

The result is a versatile, deeply flavoured dressing you can drizzle over roasted vegetables, oven-baked fish, fresh bowls or even use as a dip for crudites. A unique combination that will definitely surprise you.

At home, it went from being a fun little experiment to one of those recipes we make again and again.

And you can easily adapt it to your way of eating:

If you follow a low-carb or keto lifestyle, simply skip the honey or maple syrup and still enjoy all the flavour and the benefits of healthy fats.
If you prefer a bolder flavour, increase the amount of matcha or play with other fresh herbs like basil or coriander.

It’s an easy, quick and delicious recipe that proves healthy eating doesn’t have to be boring.

Tahini, Lemon, Mint & Matcha Dressing

Ingredients

For the dressing

  • 4 tablespoons tahini
  • 1/2 tablespoon very cold water (or a little more, if needed)
  • 3 tablespoons extra-virgin olive oil
  • 1 lemon (zest and juice)
  • 1/2 teaspoon matcha powder
  • A few fresh mint leaves (about 7 leaves)
  • A few fresh parsley leaves
  • 1 teaspoon red pepper flakes or freshly ground black pepper
  • 1/2 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon kosher salt

Instructions

  1. In a small bowl, mix the cold water and 1/2 teaspoon of matcha. Whisk with a bamboo matcha whisk or a fork until no lumps remain.
  2. In another bowl, whisk together the olive oil, tahini, lemon juice and zest, honey or maple syrup (if using), salt and pepper until well combined.
  3. Add the matcha mixture to the dressing, whisking constantly. If it feels too thick, add a little more cold water, a splash at a time, until you reach your desired consistency.
  4. Finely chop the mint and parsley leaves, add them to the dressing and mix well.
  5. Taste and adjust the seasoning to your liking: more lemon, salt, pepper or sweetness if needed.
