Bundt cake de calabaza



Este bundt cake de calabaza y manzana es perfecto como receta de pasteles de otoño, hecho con puré de calabaza y puré de manzana y muchísimas especias para darle ese toque otoñal... Esta receta la preparé el año pasado para hacer estos cupcakes de calabaza para halloween que tanto éxito han tenido.

Para conseguir la forma del pastel he utilizado este molde de bundt cake pero solo lo he llenado 1/3 de su capacidad, de esta forma me ha quedado justo lo que buscaba, bastante diferente de lo que sería si lo llenamos de la forma normal. Con la receta que indico abajo, sale para preparar unos 20 cupcakes y este trozo de pastel ¿qué os parece?

Como ya dije en ese post, la receta me la fui inventando a medida que hacía el pastel, como veía que de ese experimento podía salir algo bueno, me fui apuntando todas las cantidades que le echaba. Y efectivamente, ya lo he preparado más de tres veces y cada vez me gusta más y más y más. Está increíblemente bueno, esponjoso, húmedo, ¡buf! una verdadera delicia, en serio.

Y para rematar, esta vez, preparé un glaseado de buttermilk, receta de mi amiga Beth, aquí tenéis el post donde lo prepara.

I created this recipe from scratch, I had three differente recipes I wanted to do and I didn't have a clue which one to use, so I started to pick some things from one, some from the other, and endeed, I ended up with my favourite ever cake recipe. It's not only tasty and delicious, but it's also moist in the inside, a point of crunchi on the outsied (more if you do it in this bundt cake pan).

And the best combination for this bundt was the buttermilk glaze I got from Beth Kirby's blog, Local Milk, wow, it was just like a marriage made in heaven!

Bundt cake de calabaza

Ingredientes

Para el pastel

  • 330 g de harina
  • 1 cucharadita de sal
  • 2 cucharaditas de bicarbonato de soda
  • 2 cucharaditas de levadura en polvo
  • 2 cucharaditas de canela molida
  • 1/2 cucharadita de jengibre
  • 1/2 cucharadita de nuez moscada
  • 1 pizquita de clavo molido (no es imprescindible)
  • 200 g de aceite de oliva suave
  • 400 g de azúcar de coco (yo lo compro aquí), sino azúcar moscobado o moreno
  • 4 huevos M
  • 250 ml (1 taza) de leche entera o leche de almendras
  • 250 ml de puré de calabaza (puedes hacerla tú mismo asando calabaza al horno junto un vaso de agua, triturándola después y dejándola en un colador unas 5 horas para que suelte el agua). Sino podéis usar una lata de calabazada en puré.
  • 125 ml de compota de manzana

Para el glaseado

  • 2 cucharadas de leche + un chorrito de limón (esto es nuestro buttermilk)
  • 120 g de azúcar glas

Preparación

  1. Precalentamos el horno a 175ºC.
  2. Engrasamos el molde con un poco de aceite de oliva suave.
  3. En un bol grande mezclamos los ingredientes secos: harina, bicarbonato de soda, levadura, sal, canela, jengibre, nuez moscada y clavo.
  4. En el bol de vuestra batidora (varillas o robot de cocina) ponéis el aceite y el azúcar y mezcláis unos segundos.
  5. Añadimos los huevos uno a uno batiendo bien cada vez.
  6. Añadimos los ingredientes secos (la mezcla de harina y especias) a la mezcla de aceite y azúcar, con muchísimo cuidado de no sobrebatir pues sino os quedará un bizcocho durísimo.
  7. Añadimos los purés de calabaza y manzana y mezclamos bien con una cuchara de madera.
  8. Rellenamos el molde 1/3 de su capacidad (si lo queréis como el mío, o lleno si lo queréis más grandote).
  9. Horneamos en la bandeja central del horno (sin aire, solo con calor arriba y abajo) durante unos 40 minutos o hasta que al meter un palillo o un cuchillo éste salga limpio (aunque húmedo)
  10. Cuando ya esté listo lo dejamos reposar unos 3 minutos en el mismo molde y dejamos enfriar pasándolo a una rejilla.
Glaseado
Tamizamos el azúcar y añadimos el buttermilk (la leche y limón) removiendo bien. Volcamos sobre la tarta cuando esté fría y dejamos secar.

Pumpkin Bundt Cake

Ingredients

  •     330 g flour

  •     2 teaspoons baking soda
  •     2 teaspoons baking powder
  •     2 teaspoons ground cinnamon
  •     1/2 teaspoon ground ginger
  •     1/2 teaspoon nutmeg
  •     1 pinch ground cloves (not essential)
  •     200 g of soft olive oil or sunflour oil (if not, 225 g butter)
  •     400 g of coconut sugar or 430 g brown sugar
  •     4 egg
  •     250 ml (1 cup) whole milk or almond milk
  •     250 ml pumpkin puree (you can do it yourself roasting pumpkin baked with a glass of water, after grinding it in a colander and leaving about 5 hours to release the water). But you can use a can of pureed calabazada.
  •     125 ml apple pure

For the  glaze

    2 tablespoons buttermilk
    120g icing sugar

Preparation

  1.     Preheat oven to 175 ° C.
  2.     Grease pan with a little olive oil.
  3.     In a large bowl mix the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and cloves.
  4.     In the bowl of your blender (or food processor) mix oil and sugar and for a few seconds.
  5.     Add the eggs one by one, beating well each time.
  6.     Add the dry ingredients (flour mixture and spices) to the mixture of oil and sugar, with great care because it will not sobrebatir be a very hard cake.
  7.     Add the pumpkin and apple puree and mix well with a wooden spoon.
  8.     Fill the pan 1/3 full (if you want the cake to look like mine, or full if you want more bigger).
  9.     Bake on the middle oven rack (airless heat only up and down) for about 40 minutes or until a toothpick or stick a knife comes out clean (but wet)
  10.     When you are ready let stand for 3 minutes in the same pan and let cool by passing a wire rack.
Glaze

Sift the sugar and add the buttermilk (milk and lemon) stirring well. We pour on the cake when it is cold and let dry.

4 diferent apples (red and green)
6 tablespoons sugar (I use coconut sugar)
1 cup water (250 milliliters)
1 cinnamon stick
Juice of 1 lemon (optional)

Instructions

Peel the apples and scrape out the heart.
Cut into very small pieces.

Hola Carolina! Vine aquí por recomendación de J.C. Alonso y estoy impresionada, es que después de ver tus fotos ya no quiero seguir posteando esas horripilancias en mi blog! Lo que me gusta más es que veo que trabajas cada tema de manera diferente, usas diversos colores y luces, uno no se cansa de mirar tus fotos después de ver dos o tres, por que las próximas serán diferentes.
