Receta de muffins de chocolate, con doble de chocolate


Double chocolate muffins Double chocolate muffins Muffins, madalenas, cupcakes, bizcochitos... llámemoslos como queramos, la cuestión es que esta receta de muffins de chocolate es un pecado para cualquier chocolatero que se tercie, es una bomba, una explosión de chocolate, intenso, amargo, ultra potente... Esta receta se convirtió hace ya tiempo en una de mis favoritas. La saqué del blog de Call me Cupcake, un blog que seguramente todos conocéis (si no lo conoces ya estás tardando), que me inspira a diario, tanto por sus fotografías como por sus recetas dulces. Linda Lomelino es realmente una de las top top en cuanto a estilismo fotográfico se refiere, sin duda, un icono en este mundo.

Muffins, mini cakes, cupcakes ... we can call these little beauties however we want, the question is that this recipe of double chocolate muffins it's a pure explosion of chocolate, intense, bitter... a bomb! This recipe turned already time ago into one of my favorites. I got the recipe from Call me Cupcake, a blog that for sure you know by know, it inspires me  for its photography and its stylism and sweet recipes.


Double chocolate muffins Double chocolate muffins Cuando hice esta receta por primera vez hace ya un año, me di cuenta (como casi siempre que preparo recetas extranjeras) que era un poco demasiado dulce para mi gusto (y creo que para la mayoría de los españoles), nosotros, a diferencia de los americanos e ingleses, estamos acostumbrados a utilizar menos azúcar en nuestra repostería. Pero quería probarla tal cual explicaba ella para luego poder comparar. Así que decidí quitarle una buena cantidad de azúcar y reemplazar la mantequilla por aceite de oliva suave y... ¡touché! ¡di con unos muffins de doble chocolate para caerte sentado! Por supuesto utilicé chocolate de la tienda de chocolate online El Árbol del Cacao para quien llevo las redes sociales y el blog: blogelarboldelcacao.com.

Para sustituir la mantequilla por el aceite de oliva suave, tenemos que quitarle una parte a la cantidad total en gramos pero debemos compensarlo o bien poniendo un poquito más de harina o bien bajando la temperatura de horneado.

When I prepared this recipe for the first time, I realized that for my spanish taste it was a bit too sweet, so I decidedto put a bit less of sugar and change the butter for olive oils (soft one, not intense as extra virgin olive oil), and the result was amazing! Of course the chocolate I used was one from the online chocolate store El Árbol del Cacao, for who I make the recipes on their blog: blogelarboldelcacao.com

Muffins de chocolate con doble de chocolate

Ingredientes

  • 310 gr de harina floja
  • 80 gr de cacao en polvo Simón Coll
  • 1 cucharadita de levadura química tipo Royal
  • 1/2 cucharadita de bicarbonato sódico
  • 1/2 cucharadita de sal
  • 210 gr de azúcar
  • 90 g de aceite de oliva suave (o 100 g de mantequilla fundida)
  • 250 ml de buttermilk (se hace mezclando 250 ml de leche entera con 4 cucharaditas de zumo de limón y dejándolo reposar 10 minutos)
  • 2 huevos L
  • 150 g de chocolate negro bitter picado con un cuchillo a mano.

Elaboración

  1. Precalentamos el horno a 180ºC.
  2. Preparamos nuestros papelitos para muffins o cupcakes en una bandeja para cupcakes y reservamos.
  3. Mezclamos la harina, el cacao en polvo, la levadura, el bicarbonato de soda y la sal todo junto en un bol. Reservamos.
  4. Mezclamos el azúcar, el aceite, el buttermilk y los huevos uno a uno en un bol grade.
  5. Añadimos los ingredientes secos a los húmedos y mezclamos bien.
  6. Añadimos el chocolate picado pero reservamos 1/4 del mismo para poner sobre los muffins.
  7. Dividimos la mezcla entre los papelitos de los cupcakes (unos 12), llenándolos por completo. Echamos el resto del chocolate picado por encima de cada muffin.
  8. Horneamos durante unos 20 minutos o hasta que al introducir un cuchillo éste salga casi limpio (un poco húmedo debe quedar)

Double chocolate muffins

Ingredients

  • 310 g all purpose flour
  • 80 g cocoa powder
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 210 g granulated sugar
  • 90 g olive oil (soft), or 100 g butter, melted
  • 250 ml buttermil
  • 2 large eggs
  • 150 g dark chocolate (70%), coarsely chopped

Method

  1. Preheat the oven to 180ºC
  2. Prepare a cupcake pan with 12 muffin or cupcake liners. Mix the flour, cocoa powder, baking powder, baking soda and salt in bowl. Set aside.
  3. Mix the sugar, soft olive oil (or butte), buttermilk and eggs one by one in a large bowl.
  4. Mix both dry and wet ingredients until just combined.
  5. Stir in chocolate, but save 1/4 of the chocolate to put on top of muffins.
  6. Divide batter between the 12 liners, filling them completely full.
  7. Sprinkle with remaining chocolate pieces. Bake for 18-21 minutes or until a cake tester comes out almost clean.

Preheat the oven to 180°C (350°F). Place paper liners in a muffin tin.

In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Mix well.

In another bowl, beat the sugar and egg until the mixture is smooth and creamy.

Add the yogurt, vegetable oil, and vanilla extract to the cup.

Add the dry ingredients to the wet ingredients and mix until well combined. Do not overmix.

Add the semisweet and white chocolate chips to the batter and stir gently.

Divide the dough between the cups, filling them 2/3 full.

Bake in the preheated oven for approximately 18-20 minutes, or until inserted

Remove from the oven and let cool in the pan for a few minutes before transferring the muffins to a wire rack to cool completely.
