RECETA DE MOUSSE DE CHOCOLATE 💥🍫 vegana!!! .


A los que sabéis preparar postres, quizá os esté rondando la pregunta: ¿y cómo se prepara una mousse sin claras de huevo o sin nata?

Pues muy fácil hombre, y muy intuitivo! ¿Adivinas qué puede hacer que sepa igual y que encima monte como unas claras a punto de nieve? ❄️

Y la respuesta está, probablemente, en algo que más de una vez habéis tirado por el fregadero sin pensarlo dos veces.

Una pista: viene dentro del bote de garbanzos.

Sí, hablamos del acuafaba, el líquido de cocción de los garbanzos. Y si todavía no habéis probado a montarlo, preparaos porque la primera vez cuesta bastante creer lo que está pasando delante de tus ojos.

Con unas varillas eléctricas y unos minutos de paciencia, ese líquido acuoso empieza a transformarse hasta quedar blanco, firme y esponjoso, prácticamente como unas claras montadas a punto de nieve.

Y ahí empieza la magia de esta mousse de chocolate con acuafaba.

No lleva huevo, no necesita nata y, utilizando un chocolate sin ingredientes de origen animal, podéis convertirla además en una mousse de chocolate vegana. Pero lo mejor de todo es que la textura sigue siendo ligera, aireada y muy parecida a la de una mousse clásica.

Eso sí, hay que tener un poquito de paciencia con las varillas.

El acuafaba puede tardar varios minutos en montar (no desesperéis si al principio parece que no está pasando absolutamente nada), pero poco a poco irá ganando volumen hasta formar picos firmes. Unas gotas de limón pueden ayudar y, una vez conseguido ese punto, ya tenemos prácticamente resuelta la parte más difícil de la receta.

Después solo queda mezclarlo con chocolate negro fundido, un poco de azúcar de coco, vainilla y, si os apetece darle un punto más intenso, unas gotas de licor de café.

La clave está en hacerlo despacio, con movimientos envolventes, intentando conservar todo ese aire que hemos conseguido incorporar.

Después, a la nevera.

Y un par de horas más tarde tendrás una mousse de chocolate sin huevo y sin nata, cremosa pero ligera, con muchísimo sabor a chocolate y hecha además aprovechando un ingrediente que normalmente acabaría descartado.

Así que la próxima vez que abras un bote de garbanzos, ni se te ocurra tirar el líquido.

Los garbanzos pueden acabar en un hummus y el acuafaba, directamente en el postre.

Mousse de chocolate con acuafaba

Ingredientes

  • 120 g de chocolate negro
  • 160 g de acuafaba (el líquido de cocción de los garbanzos), a temperatura ambiente
  • 3 cucharadas de azúcar de coco
  • ½ cucharadita de extracto de vainilla
  • ½ cucharadita de licor de café (opcional)
  • Una pizca de sal
  • Unas gotas de zumo de limón (opcional, para ayudar a montar el acuafaba)


Preparación

  1. Funde el chocolate al baño María, a fuego muy suave. Cuando esté completamente derretido, retíralo del fuego y deja que pierda un poco de temperatura mientras preparas el acuafaba.
  2. Pon el acuafaba a temperatura ambiente en un bol amplio y empieza a batirlo con unas varillas eléctricas a velocidad baja para evitar salpicaduras. Ve aumentando poco a poco la velocidad. Puedes añadir unas gotas de zumo de limón para ayudar a que monte.
  3. Continúa batiendo hasta que el acuafaba haya aumentado mucho de volumen, esté blanco y esponjoso y forme picos firmes, igual que unas claras montadas a punto de nieve. Puede tardar alrededor de 8-10 minutos.
  4. Añade poco a poco el azúcar de coco mientras sigues batiendo, como harías al preparar un merengue.
  5. Incorpora una pequeña cantidad del acuafaba montado al chocolate fundido y mezcla suavemente para aligerarlo.
  6. Añade después el resto del acuafaba, la vainilla, una pizca de sal y el licor de café, si vas a utilizarlo. Mezcla con una espátula mediante movimientos envolventes, con cuidado de no perder demasiado volumen.
  7. Reparte la mousse en vasitos individuales y deja enfriar en la nevera durante al menos 2 horas antes de servir.

If you know your way around desserts, you might be wondering: how on earth do you make a mousse without egg whites or cream?

Well, it’s actually very easy — and surprisingly intuitive! Can you guess what can give you a similar result and, on top of that, whip up just like egg whites into stiff peaks? ❄️

The answer is probably something you’ve poured down the sink more than once without giving it a second thought.

Here’s a clue: it comes inside a jar or tin of chickpeas.

Yes, we’re talking about aquafaba, the cooking liquid from chickpeas. And if you’ve never tried whipping it before, prepare to be amazed because the first time you do it, it’s pretty hard to believe what’s happening right in front of your eyes.

With an electric whisk and a few minutes of patience, that watery liquid gradually transforms until it becomes white, firm and fluffy, almost exactly like egg whites whipped to stiff peaks.

And that’s where the magic of this chocolate mousse with aquafaba begins.

There are no eggs, no cream and, if you use chocolate with no animal-derived ingredients, you can also turn it into a completely vegan chocolate mousse. But the best part is that the texture is still light, airy and remarkably similar to a classic mousse.

You will, however, need a little patience with the whisk.

Aquafaba can take several minutes to whip up — don’t give up if at first it looks as though absolutely nothing is happening — but little by little it will start gaining volume until it forms firm peaks. A few drops of lemon juice can help and, once you reach that stage, you’ve pretty much conquered the trickiest part of the recipe.

After that, all that’s left to do is combine it with melted dark chocolate, a little coconut sugar, vanilla and, if you fancy giving it a slightly more intense flavour, a few drops of coffee liqueur.

The key is to take your time, folding everything together gently and trying to preserve all that air you’ve worked so hard to incorporate.

Then, into the fridge it goes.

And a couple of hours later, you’ll have a chocolate mousse without eggs or cream: creamy yet light, packed with chocolate flavour and, as an added bonus, made using an ingredient that would normally have ended up being thrown away.

So the next time you open a jar or tin of chickpeas, don’t even think about pouring that liquid down the sink.

The chickpeas can go into a hummus and the aquafaba can go straight into dessert.

Chocolate mousse with aquafaba

Ingredients

  • 120 g dark chocolate
  • 160 g aquafaba (the cooking liquid from chickpeas), at room temperature
  • 3 tablespoons coconut sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon coffee liqueur (optional)
  • A pinch of salt
  • A few drops of lemon juice (optional, to help the aquafaba whip)


Method

  1. Melt the chocolate in a bain-marie over very low heat. Once completely melted, remove it from the heat and allow it to cool slightly while you prepare the aquafaba.
  2. Pour the room-temperature aquafaba into a large bowl and begin whisking with an electric whisk on low speed to avoid splashing. Gradually increase the speed. You can add a few drops of lemon juice to help it whip.
  3. Continue whisking until the aquafaba has increased considerably in volume and is white and fluffy, forming firm peaks just like egg whites whipped to stiff peaks. This can take around 8-10 minutes.
  4. Gradually add the coconut sugar while continuing to whisk, just as you would when making a meringue.
  5. Add a small amount of the whipped aquafaba to the melted chocolate and gently mix it in to lighten the chocolate mixture.
  6. Then add the remaining aquafaba, the vanilla, a pinch of salt and the coffee liqueur, if using. Fold everything together gently with a spatula, taking care not to knock out too much of the air.
  7. Divide the mousse between individual glasses and chill in the fridge for at least 2 hours before serving.
