⭐️🌿ESPINACAS A LA CREMA CON BECHAMEL KETO⭐️



Hace unos días os contaba por stories algunas de las cosas que he estado haciendo para perder algo de peso y sentirme más cómoda después del verano y recibí muchísimos mensajes vuestros.

Muchas me contabais que estabais en un momento parecido: queriendo volver a cuidar un poco más la alimentación, recuperar hábitos que durante el verano se habían relajado y, en algunos casos, perder algún kilo. Algunas habíais empezado una alimentación keto o low carb, otras estabais pensando en hacerlo y muchas me pedíais, sobre todo, recetas saludables pero ricas para que ese proceso sea lo más amable posible.

Porque una cosa es querer cuidarse y otra muy distinta resignarse a comer platos aburridos durante semanas.

De hecho, cuando os enseñé por stories que estaba preparando estas espinacas gratinadas con bechamel keto, algunas me dijisteis que no me iba a dar tiempo a cocinar, hacer fotos y subir la receta.

Claramente subestimasteis los poderes de una madre.

O, lo que viene siendo lo mismo, aceptar un rato de pantallas para tener cinco minutos de tranquilidad en la cocina 😂.

Y menos mal, porque esta receta merecía que la compartiese con vosotras porque ¡es un recetón!

Una de esas recetas fáciles que conviene tener a mano cuando buscas una comida o una cena keto o low carb sin complicarte demasiado. Cremosas, sabrosas, gratinadas por encima y con una bechamel sin harina que se acerca muchísimo, tanto en textura como en sabor, a la tradicional y que funciona genial para este tipo de platos.

También podéis preparar una bechamel keto de coliflor si buscáis una alternativa algo más ligera, pero si lo que queréis es ese sabor más intenso y parecido al de una bechamel clásica, esta versión me parece difícil de superar.

Y lo mejor es que no tiene ningún misterio.

Mientras nuestra bechamel low carb va espesando lentamente en un cazo, salteamos las espinacas con un poco de mantequilla. Después solo hay que mezclarlo todo, cubrir con parmesano rallado y llevar al horno hasta conseguir esa capa dorada por encima que hace que unas simples espinacas se conviertan en otra cosa.

El resultado son unas espinacas a la crema keto, muy sabrosas y saciantes, que podéis servir como plato principal ligero o utilizar como guarnición para acompañar huevos, pescado o carne.

Además, es una receta muy práctica para esos días en los que quieres seguir comiendo bajo en carbohidratos pero no te apetece preparar nada demasiado elaborado. Pocos ingredientes, una preparación muy sencilla y un resultado bastante más especial de lo que el esfuerzo hace pensar.

De esas recetas keto que empiezas preparando porque son fáciles y acabas repitiendo porque están realmente buenas.

Espinacas gratinadas con bechamel keto

Ingredientes

  • 1 taza y 1/2 de nata para cocinar (eco y de vacas de pasto)
  • 120 g de queso crema (yo compro uno bio sin aditivos chungos)
  • Una pizca de sal
  • Pimienta negra recién molida
  • Una pizca de nuez moscada
  • 1 cucharada de mantequilla bio
  • 300g de espinacas frescas
  • Queso parmesano rallado al gusto para gratinar 


Preparación

  1. Prepara la bechamel keto poniendo en una cazuela pequeña la nata, el queso crema, una pizca de sal, pimienta negra y nuez moscada.
  2. Calienta a fuego medio mientras remueves con una cuchara de madera hasta que la mezcla llegue suavemente a ebullición.
  3. Baja el fuego y continúa removiendo hasta que vaya espesando y adquiera una textura similar a la de una bechamel tradicional.
  4. Mientras tanto, derrite la mantequilla en una sartén, añade las espinacas y cocínalas unos minutos, justo hasta que empiecen a perder volumen.
  5. Vierte la bechamel sobre las espinacas y mezcla bien. Prueba y rectifica de sal y pimienta si fuera necesario.
  6. Cocina un par de minutos más para que la mezcla termine de espesar.
  7. Pasa las espinacas a una fuente apta para horno, espolvorea generosamente con parmesano rallado y gratina hasta que la superficie esté dorada.
  8. Sirve inmediatamente y ¡disfruta!!

A few days ago, I was telling you on Stories about some of the things I’ve been doing to lose a little weight and feel more comfortable after the summer, and I received so many messages from you.

Many of you told me you were in a similar place: wanting to start taking a little more care of what you eat, get back into some of the habits that had slipped over the summer and, in some cases, lose a few pounds. Some of you had started eating keto or low carb, others were thinking about giving it a try, and many of you were asking me, above all, for healthy but delicious recipes to make the whole process as enjoyable as possible.

Because wanting to take care of yourself is one thing. Resigning yourself to eating boring food for weeks is quite another.

In fact, when I showed you on Stories that I was making this spinach gratin with keto béchamel, some of you told me there was no way I’d have time to cook it, take the photos and post the recipe.

You clearly underestimated the powers of a mother.

Or, in other words, accepting a little screen time in exchange for five peaceful minutes in the kitchen 😂.

And thank goodness I did, because this recipe absolutely deserved to be shared with you. It’s SO good!

It’s one of those easy recipes worth keeping on hand when you’re looking for a keto or low-carb lunch or dinner without making life too complicated. Creamy, full of flavour, golden on top and made with a flourless béchamel that comes surprisingly close to the traditional version, both in texture and flavour, and works brilliantly in dishes like this.

You could also make a keto cauliflower béchamel if you’re looking for a slightly lighter alternative, but if what you want is that richer flavour and something closer to a classic béchamel, I think this version is pretty hard to beat.

And the best part is that there’s really nothing complicated about it.

While our low-carb béchamel slowly thickens in a saucepan, we sauté the spinach with a little butter. Then all you have to do is mix everything together, cover it with grated Parmesan and pop it into the oven until you get that gorgeous golden layer on top that somehow turns a simple dish of spinach into something else entirely.

The result is a wonderfully creamy, flavourful and satisfying keto spinach dish that you can serve as a light main course or as a side with eggs, fish or meat.

It’s also a really practical recipe for those days when you want to keep things low carb but don’t feel like making anything too elaborate. Just a handful of ingredients, a very simple method and a result that feels much more special than the amount of effort involved would suggest.

One of those keto recipes you start making because it’s easy and end up making again and again simply because it’s genuinely delicious.

Keto spinach gratin with béchamel

Ingredients

  • 1 1/2 cups cooking cream (organic and from grass-fed cows)
  • 120 g cream cheese (I use an organic one without any weird additives)
  • A pinch of salt
  • Freshly ground black pepper
  • A pinch of nutmeg
  • 1 tablespoon organic butter
  • 300 g fresh spinach
  • Grated Parmesan, to taste, for the topping


Method

  1. Make the keto béchamel by placing the cream, cream cheese, a pinch of salt, freshly ground black pepper and nutmeg in a small saucepan.
  2. Heat over medium heat, stirring with a wooden spoon, until the mixture gently comes to a boil.
  3. Reduce the heat and continue stirring until the sauce begins to thicken and reaches a consistency similar to a traditional béchamel.
  4. Meanwhile, melt the butter in a frying pan, add the spinach and cook for a few minutes, just until it begins to wilt.
  5. Pour the béchamel over the spinach and mix well. Taste and adjust the salt and pepper if necessary.
  6. Cook for another couple of minutes so the mixture can finish thickening.
  7. Transfer the spinach to an ovenproof dish, sprinkle generously with grated Parmesan and place under the grill/broiler until the top is beautifully golden.
  8. Serve immediately and enjoy!!

GRANOLA DE PLÁTANO Y CHOCOLATE CON MANTEQUILLA DE CACAHUETE


La semana pasada hablábamos de qué cosas merece la pena tener siempre preparadas en la nevera y llegábamos a la conclusión de que un buen hummus podía ahorrarnos más de una cena improvisada.

Pues bien, hoy vamos a salir de la nevera y a ocuparnos de otro territorio que en septiembre necesita bastante atención: el desayuno.

Porque no sé cómo serán vuestras mañanas, pero las mías funcionan muchísimo mejor cuando hay algo rico esperando en la cocina y no tengo que tomar demasiadas decisiones antes del primer café.

Y aquí entra esta granola de plátano y chocolate con mantequilla de cacahuete.

Un tarro grande de granola casera es una de esas cosas que da bastante satisfacción encontrar en la despensa. Un poco de yogur, fruta, una cucharada generosa por encima y tienes un desayuno estupendo en cuestión de minutos. También sirve para una merienda rápida, para llevarte un puñado cuando sales de casa o para ir “probándola” cada vez que pasas por la cocina hasta que, misteriosamente, el bote empieza a bajar.

En esta he utilizado avena, frutos secos, plátano, mantequilla de cacahuete y sirope de arce, y podéis elegir entre quinoa inflada o coco rallado. Tampoco hace falta respetar religiosamente los frutos secos de la receta: almendras, anacardos, nueces… aprovechad lo que tengáis abierto por casa. Porque una de las ventajas de hacer granola en casa es precisamente que puedes adaptarla muchísimo a lo que tengas en la despensa.

De hecho, si sois fans de la granola y os gusta ir cambiando, en el blog tenéis también mi receta de granola de chocolate y la granola carrot cake, hecha con zanahoria, naranja, frutos secos y especias. Dos opciones bastante diferentes entre sí para demostrar que, una vez le coges el gusto a preparar granola en casa, hay vida mucho más allá de repetir siempre la misma.

En la de hoy, el plátano aporta dulzor y ayuda a que se formen esos pequeños grupos crujientes que son, seamos sinceras, la mejor parte de cualquier granola. La mantequilla de cacahuete le da un sabor buenísimo y el chocolate termina de convertirla en una de esas recetas que cuesta creer que hayas hecho principalmente para el desayuno.

Y aunque encender el horno quizá no sea el plan que más apetece ahora mismo, aquí el esfuerzo es bastante asumible: mezclar, extender en una bandeja y hornear unos minutos. Después solo queda dejarla enfriar (fundamental para que termine de quedar crujiente) y guardarla en un recipiente hermético.

Así que seguimos con nuestro pequeño propósito de septiembre de no llenar la agenda de buenas intenciones imposibles, sino ponernos las cosas un poquito más fáciles.

La semana pasada fue un tarro de hummus esperando en la nevera. Esta semana, uno de granola en la despensa… Tengo la sensación de que vamos a agradecer bastante tener los dos.

Granola de plátano y chocolate con mantequilla de cacahuete

Ingredientes

  • 1 taza de quinoa inflada o coco rallado
  • 1½ taza de copos de avena (con o sin gluten)
  • ¼ taza de harina de almendras o almendra entera o anacardos o los frutos secos que os gusten
  • ⅛ chdta sal
  • ¼ chdta canela
  • ¼ taza mantequilla de cacahuete
  • 60ml (¼ taza) sirope de arce
  • ½ taza nueces picadas
  • 1 plátano grande picado
  • ⅓ taza chocolate picado


Preparación

  1. Precalienta el horno a 180º y prepara una bandeja con papel de hornear.
  2. Tritura bien 1/2 taza de la avena, las almendras o anacardos y la quinoa inflada o coco rallado. Reserva.
  3. Mezcla con el resto de ingredientes excepto el chocolate. Te recomiendo mezclar con las manos para que se impregne bien del sirope de arce y el plátano.
  4. Pasamos a la bandeja de horno esparciendo bien para que quede la capa más fina posible. Horneamos unos 10 minutos removiendo a mitad de cocción. Dejamos enfriar y añadimos el chocolate picado a la granola, mezclando bien.
  5. Guardamos en recipientes herméticos (aguanta unos 15 días o más fuera de la nevera )

Last week we were talking about the things that are always worth having ready in the fridge, and we came to the conclusion that a good hummus can rescue more than one improvised dinner.

Well, today we’re moving away from the fridge and turning our attention to another area that needs a little extra care in September: breakfast.

I don’t know what your mornings are like, but mine work so much better when there’s something delicious waiting in the kitchen and I don’t have to make too many decisions before my first coffee.

And that’s where this banana and chocolate granola with peanut butter comes in.

A big jar of homemade granola is one of those things that’s incredibly satisfying to find in the cupboard. Add some yoghurt, fruit and a generous spoonful of granola and you’ve got a great breakfast in a matter of minutes. It also works as a quick snack, something to grab by the handful on your way out of the house, or something to keep “tasting” every time you walk through the kitchen until, mysteriously, the jar starts getting emptier.

For this one, I’ve used oats, nuts, banana, peanut butter and maple syrup, and you can choose between puffed quinoa or desiccated coconut. There’s no need to follow the choice of nuts in the recipe religiously either: almonds, cashews, walnuts… use whatever you already have open at home. Because one of the great things about making granola yourself is precisely how easily you can adapt it to whatever you have in the cupboard.

In fact, if you’re a granola fan and like changing things up, you’ll also find my chocolate granola recipe and carrot cake granola on the blog, the latter made with carrot, orange, nuts and spices. Two very different options that prove that, once you get into the habit of making granola at home, there’s a whole world beyond making the same one over and over again.

In today’s version, the banana adds sweetness and helps create those little crunchy clusters which, let’s be honest, are the best part of any granola. The peanut butter gives it an amazing flavour, and the chocolate turns it into one of those recipes that’s almost hard to believe you made mainly for breakfast.

And although turning on the oven might not sound particularly appealing right now, the effort involved here is pretty manageable: mix everything together, spread it over a baking tray and bake for a few minutes. Then all you have to do is let it cool — essential if you want it to become properly crunchy — and store it in an airtight container.

So we’re carrying on with our little September goal of not filling our diaries with impossible good intentions, but simply making life a little easier for ourselves.

Last week it was a jar of hummus waiting in the fridge. This week, it’s a jar of granola in the cupboard… I have a feeling we’re going to be very glad to have both.

Banana and chocolate granola with peanut butter

Ingredients

  • 1 cup puffed quinoa or desiccated coconut
  • 1½ cups rolled oats (with or without gluten)
  • ¼ cup almond flour, whole almonds, cashews or any other nuts you like
  • ⅛ tsp salt
  • ¼ tsp cinnamon
  • ¼ cup peanut butter
  • 60 ml (¼ cup) maple syrup
  • ½ cup chopped walnuts
  • 1 large banana, chopped
  • ⅓ cup chopped chocolate


Method

  1. Preheat the oven to 180ºC and line a baking tray with baking paper.
  2. Finely blend ½ cup of the oats together with the almonds or cashews and the puffed quinoa or desiccated coconut. Set aside.
  3. Mix with all the remaining ingredients except the chocolate. I recommend using your hands so that everything is thoroughly coated with the maple syrup and banana.
  4. Transfer the mixture to the baking tray and spread it out well to create as thin a layer as possible. Bake for around 10 minutes, stirring halfway through. Leave to cool and add the chopped chocolate to the granola, mixing well.
  5. Store in airtight containers (it will keep for around 15 days or longer at room temperature).

Receta fácil de HUMMUS DE GUISANTES ¡lista en dos minutos!


No sé si existe el concepto fondo de nevera, pero si no, creo que ha llegado el momento de inventarlo.

Ahora que septiembre nos ha devuelto de golpe a los horarios, los colegios, el trabajo y a esa pregunta recurrente de qué cenar entre semana, yo tengo clarísimo qué cosas quiero encontrar cuando abro la mía.

Y no hablo de tener el menú de los próximos siete días perfectamente organizado en táperes idénticos. Ojalá mi vida funcionara siempre así. Hablo de esas dos o tres preparaciones que puedes dejar hechas y que, llegado el momento, te solucionan una comida o una cena sin tener que empezar de cero.

Y un buen hummus siempre está entre ellas porque pocas recetas dan tanto juego con tan poco esfuerzo.

Puedes ponerlo en el centro de la mesa con unas crudités y un buen pan, untarlo en una tostada, preparar un sándwich, añadir una cucharada generosa a un bowl con verduras o utilizarlo como punto de partida para una cena improvisada con lo que tengas por la nevera.

Y como el hummus clásico probablemente ya te lo sabes de memoria, hoy vamos a darle una vuelta y preparar un hummus de guisantes.

Es fresco, cremoso, tiene ese color verde maravilloso y se prepara prácticamente en dos minutos.

La base sigue siendo la que ya conoces de sobra: garbanzos, tahini, limón, ajo y un buen aceite de oliva virgen extra. Pero añadimos guisantes y unas hojas de menta que le dan un punto mucho más fresco y diferente.

Y aquí tampoco tienes que complicarte la existencia. Los garbanzos pueden ser perfectamente de bote. Los guisantes, frescos si los tienes, pero también congelados o incluso en conserva.

Porque, al final, esa es precisamente la filosofía de este tipo de recetas, que se adapten a tu vida y no al revés.

Pones todos los ingredientes en la batidora, trituras y ajustas la textura con un poquito de agua si ha quedado demasiado espeso. Y en apenas unos minutos tienes un tarro de hummus de guisantes esperando en la nevera y, de paso, una pequeña parte de las comidas de los próximos días solucionada.

Porque comer rico y nutritivo entre semana no siempre depende de cocinar muchísimo. A veces depende simplemente de tener algo bueno a lo que recurrir cuando no tienes tiempo, ganas o ninguna de las dos cosas.

Así que guárdate esta receta porque sospecho que uno de estos días, cuando abras la nevera a última hora preguntándote qué demonios vas a cenar, te vas a alegrar bastante de encontrar ese tarrito verde esperándote.

Y si ahora mismo estás pensando que los guisantes no te entusiasman y que mejor ni intentarlo, tranquila, la idea del fondo de nevera admite variantes. Puedes probar también con mis recetas de hummus de calabaza y ajos asados o de hummus de remolacha.

Lo importante no es tanto cuál elijas como tener uno preparado cuando llegue ese momento del día en el que cocinar desde cero te parece una idea francamente poco apetecible.

Hummus de guisantes

Ingredientes

  • 400 g de garbanzos cocidos (en casa o de bote, mejor ecológicos)
  • 150 g de guisantes frescos, congelados o en conserva. Si son frescos los herviremos 7 minutos hasta que estén tiernos.
  • 3 chdas de zumo de limón
  • 2 chdas de tahini (pasta de sésamo, si no tienes no pasa nada)
  • 1 diente de ajo picado (yo quito la Lila central)
  • unas hojas de menta (podéis no echarle)
  • 2 chdas de aceite de oliva
  • sal y pimienta negra


Preparación

  1. Colamos los garbanzos si son de bote y los lavamos bien, escurrimos.
  2. Echamos junto con todos los ingredientes en nuestro vaso de batidora y trituramos.
  3. Si quedase muy espeso y seco, podemos echar un poquito de agua, pero muy poco cada vez para no pasarnos.

I don’t know if there’s such a thing as a fridge staple, but if there isn’t, I think it’s about time we invented the concept.

Now that September has suddenly thrown us back into schedules, school, work and that recurring question of what on earth to make for dinner during the week, I know exactly what I want to find whenever I open my fridge.

And I’m not talking about having the next seven days’ meals perfectly organised in identical containers. I wish my life always worked like that. I’m talking about those two or three things you can prepare in advance that, when the time comes, can rescue lunch or dinner without having to start from scratch.

And a good hummus is always one of them, because few recipes are this versatile for so little effort.

You can put it in the middle of the table with some crudités and good bread, spread it on toast, make a sandwich, add a generous spoonful to a bowl of vegetables or use it as the starting point for an improvised dinner with whatever happens to be in the fridge.

And since you probably know classic hummus by heart by now, today we’re going to give it a little twist and make pea hummus.

It’s fresh, creamy, has that gorgeous green colour and takes practically two minutes to make.

The base is still the one you already know so well: chickpeas, tahini, lemon, garlic and a good extra virgin olive oil. But this time we’re adding peas and a few mint leaves, which give it a much fresher and slightly different flavour.

And there’s no need to make life complicated here either. The chickpeas can absolutely come from a jar or tin. Use fresh peas if you have them, but frozen or even tinned peas work too.

Because, ultimately, that’s exactly the philosophy behind this kind of recipe: it should adapt to your life, not the other way round.

Put all the ingredients into a blender, blend everything together and adjust the texture with a little water if it’s too thick. In just a few minutes, you have a jar of pea hummus waiting in the fridge and, at the same time, one small part of the next few days’ meals already sorted.

Because eating delicious, nutritious food during the week doesn’t always depend on doing loads of cooking. Sometimes it simply comes down to having something good to reach for when you don’t have the time, the inclination or either of the two.

So save this recipe because I suspect that one of these days, when you open the fridge late in the day wondering what on earth you’re going to have for dinner, you’ll be very glad to find that little green jar waiting for you.

And if you’re thinking right now that peas aren’t really your thing and you’d rather not even try it, don’t worry, the whole fridge-staple idea leaves plenty of room for alternatives. You can also try my roasted pumpkin and garlic hummus or my beetroot hummus.

What matters isn’t so much which one you choose, but having one ready for that moment of the day when cooking something from scratch sounds like a thoroughly unappealing idea.

Pea hummus

Ingredients

  • 400 g cooked chickpeas (home-cooked or from a jar or tin, preferably organic)
  • 150 g fresh, frozen or tinned peas. If using fresh peas, boil them for 7 minutes until tender.
  • 3 tbsp lemon juice
  • 2 tbsp tahini (sesame paste; if you don’t have any, don’t worry)
  • 1 garlic clove, chopped (I remove the central shoot)
  • A few mint leaves (optional)
  • 2 tbsp olive oil
  • Salt and black pepper


Method

  1. If using chickpeas from a jar or tin, drain and rinse them well.
  2. Place them in a blender with all the remaining ingredients and blend until smooth.
  3. If the hummus is too thick and dry, add a little water, but only a small amount at a time so you don’t overdo it.

Receta de FRAPPUCCINO HELADO sin azúcar añadido


Con septiembre me ocurre algo extraño. Por una parte, es un mes que me encanta pero, por otra, admito que me acaba rayando, al menos durante las primeras semanas. Esas en las que el calendario te dice que deberías empezar a pensar en otoño, pero sales a la calle y el termómetro te hace pensar que todavía es verano y quieres seguir de vacaciones.

Así que no. Hoy no vamos a preparar ninguna receta calentita, sino que vamos a sacar los hielos.

Porque si tú también estás sobreviviendo a estos últimos coletazos de calor, apunta esta receta de frappuccino helado sin azúcar añadido. Aunque, en realidad (atención, SPOILER), hoy te llevas dos recetas en una.

La primera es el frappuccino y la segunda posiblemente termine teniendo mucha más vida en tu cocina de la que imaginas: caramelo de dátiles. Y te aviso de que te va a merecer mucho la pena preparar un tarro de este caramelo y tenerlo en la nevera.

Yo lo utilizo para aportar dulzor de forma natural a diferentes recetas en las que quiero sustituir el sirope o el azúcar.

Para prepararlo utilizo dátiles Medjool, una variedad especialmente carnosa, jugosa y naturalmente dulce. Además, los dátiles aportan fibra y minerales como potasio y magnesio. Eso sí, que sea un alimento naturalmente dulce no significa que tengamos barra libre, porque los dátiles contienen sus propios azúcares. No son azúcares añadidos ni refinados, pero siguen aportando azúcar de forma natural.

Preparar el caramelo no puede ser más sencillo: dátiles y agua caliente. Y una vez tienes un tarrito esperando en la nevera, llega la segunda parte del plan.

La noche anterior (o unas horas antes), congela bebida vegetal en una cubitera. Este gesto tan sencillo es el que consigue que el frappuccino quede helado y cremoso sin tener que llenarlo de hielo y terminar aguando el café.

Y lo mejor es que puedes ajustar absolutamente todo a tu gusto: más caramelo si lo prefieres dulce, menos si eres de café intenso o algún cubito más de bebida vegetal si quieres una textura todavía más densa.

Caramelo de dátiles

Ingredientes

  • 10-20 dátiles Medjool israelíes
  • Agua hirviendo

Elaboración

  1. Si los dátiles tienen hueso, ábrelos por la mitad y retíralo.
  2. Coloca los dátiles en un bol y cúbrelos con agua hirviendo. Déjalos reposar unos 10-15 minutos, hasta que estén bien tiernos.
  3. Escúrrelos, pero reserva el agua del remojo.
  4. Pon los dátiles en una batidora o procesador y añade un poco del agua reservada. Empieza con poca cantidad; siempre podrás añadir más.
  5. Tritura hasta conseguir una crema homogénea. Ve incorporando agua poco a poco hasta obtener la textura que prefieras: más espesa para utilizar como caramelo o algo más fluida si quieres usarla como endulzante.
  6. Pásala a un tarro limpio, deja que se enfríe y consérvala en la nevera.


Frappuccino helado

Ingredientes

  • 250ml de bebida vegetal congelada (la ponemos en cubitos de hielo unas horas antes o la noche anterior)
  • 500ml de café enfriado en la nevera
  • 3-4 chdas de caramelo de dátiles Medjool (al gusto)

Elaboración

  1. Unas horas antes, o mejor la noche anterior, reparte la bebida vegetal en una cubitera y congélala.
  2. Prepara el café y déjalo enfriar en la nevera.
  3. Pon en una batidora el café frío, los cubitos de bebida vegetal congelada y 3 cucharadas de caramelo de dátiles.
  4. Tritura a máxima potencia hasta conseguir una textura cremosa y ligeramente espumosa.
  5. Pruébalo y ajusta a tu gusto. Puedes añadir otra cucharada de caramelo si quieres más dulzor o más cubitos de bebida vegetal si prefieres un frappuccino más espeso.
  6. Sirve inmediatamente y disfruta bien frío. 🧊☕

There’s something strange about September for me. On the one hand, it’s a month I really love but, on the other, I have to admit it drives me slightly mad, at least during the first few weeks. Those weeks when the calendar tells you that you should probably start thinking about autumn, but then you step outside and the temperature makes you feel as though summer is still very much here and all you want is to stay on holiday.

So no. Today we’re not making anything warm. We’re getting the ice cubes out instead.

Because if you’re also trying to survive these final bursts of heat, make a note of this iced frappuccino with no added sugar. Although, actually — spoiler alert — today you’re getting two recipes in one.

The first is the frappuccino, and the second may well end up becoming much more useful in your kitchen than you expect: date caramel. And trust me, it is well worth making a jar of this caramel and keeping it in the fridge.

I use it to add natural sweetness to different recipes whenever I want to replace syrup or sugar.

To make it, I use Medjool dates, a particularly fleshy, juicy and naturally sweet variety. Dates also provide fibre and minerals such as potassium and magnesium. That said, just because something is naturally sweet doesn’t mean we have free rein, because dates contain their own sugars. They are not added or refined sugars, but they still provide sugar naturally.

Making the caramel couldn’t be simpler: dates and hot water. And once you have a little jar waiting in the fridge, it’s time for the second part of the plan.

The night before — or a few hours earlier — freeze some plant-based milk in an ice cube tray. This simple little step is what makes the frappuccino icy and creamy without having to fill it with regular ice and ending up with watered-down coffee.

And the best thing is that you can adjust absolutely everything to suit your taste: more caramel if you like it sweet, less if you prefer a stronger coffee flavour, or a few extra cubes of plant-based milk if you want an even thicker texture.

So, as long as September insists on giving us days of unbearable heat, I plan to fight back using my own methods which, as you can see, are pretty simple: coffee, freezer and blender.

Date caramel

Ingredients

  • 10-20 Israeli Medjool dates
  • Boiling water

Method

  1. If the dates still contain their stones, cut them in half and remove them.
  2. Place the dates in a bowl and cover them with boiling water. Leave them to soak for around 10-15 minutes, until they are very soft.
  3. Drain them, but reserve the soaking water.
  4. Place the dates in a blender or food processor and add a little of the reserved water. Start with a small amount; you can always add more.
  5. Blend until completely smooth. Gradually add more water until you reach the texture you prefer: thicker if you want to use it as a caramel, or slightly looser if you want to use it as a sweetener.
  6. Transfer it to a clean jar, leave it to cool and store it in the fridge.


Iced frappuccino

Ingredients

  • 250ml frozen plant-based milk (freeze it in an ice cube tray a few hours beforehand or the night before)
  • 500ml coffee, chilled in the fridge
  • 3-4 tbsp Medjool date caramel, or to taste

Method

  1. A few hours beforehand, or preferably the night before, pour the plant-based milk into an ice cube tray and freeze it.
  2. Prepare the coffee and leave it to chill in the fridge.
  3. Add the cold coffee, frozen plant-based milk cubes and 3 tablespoons of date caramel to a blender.
  4. Blend at full speed until creamy and slightly frothy.
  5. Taste and adjust to your liking. Add another spoonful of caramel if you want it sweeter, or a few more frozen plant-based milk cubes if you prefer a thicker frappuccino.
  6. Serve immediately and enjoy it ice cold. 🧊☕

Receta de helado sin azúcar con solo 3 ingredientes y un truco 🍧🍧🍧


Septiembre ha llegado y vuelven los horarios, las agendas empiezan a llenarse, los días se van haciendo un poquito más cortos día tras día y esas tardes eternas de piscina o playa empiezan a quedarse atrás.

No sé tú, pero yo todavía no estoy preparada para soltar el verano del todo y, mientras siga haciendo calor, pienso seguir preparando helado.

Quizá la vuelta a la rutina hace que todo te dé pereza y lo último en lo que estás pensando es entrar en la cocina más de lo estrictamente necesario. Pues espera y ¡toma nota porque esta receta es para ti! Una receta fácil donde las haya y con solo 3 ingredientes: plátanos maduros, frambuesas congeladas y un poco de leche o nata. Nada más.

Las cantidades tampoco tienen que ser exactas. Como tantas recetas que preparo en casa, esta la hice completamente a ojo.

Yo usé una heladera de las baratas, una de esas que cumplen perfectamente su función sin necesidad de hacer una gran inversión. Pero si no tienes una en casa, sigue leyendo porque ¡te comparto un trucazo!

Pasa la mezcla a una bolsa de congelación con cierre zip y métela en el congelador. A las dos horas, sácala y machácala bien con un mortero. Vuelve a congelar y repite el proceso un par de veces más. De esta forma estarás rompiendo los cristales de hielo que se van formando y conseguirás una textura mucho más cremosa, bastante parecida a la que obtendrías utilizando una heladera.

Y ya está. Así de fácil tienes un helado casero de plátano y frambuesa preparado con tres ingredientes y sin necesidad de complicarte absolutamente nada.

Porque sí, septiembre está aquí. Volveremos a madrugar, recuperaremos horarios y, poco a poco, iremos guardando bañadores, sombrillas y capazos. Pero nadie ha dicho que tengamos que hacerlo todo el mismo día, ¿no?

Helado de plátano y frambuesa con solo 3 ingredientes

Ingredientes

  • Plátanos muy maduros, pelados, troceados y congelados durante al menos 4 horas
  • Frambuesas congeladas
  • Leche vegetal, leche de vaca o nata, la que más te guste (si es nata, mejor)

Las cantidades las hice a ojo, pero calculad que usé unos 4 plátanos muy pequeños, un puñado de frambuesas y unos 120 ml de leche.


Elaboración

  1. Tritura todos los ingredientes en la batidora hasta conseguir una mezcla cremosa.
  2. Si la mezcla sigue bien fría y congelada, puedes tomar el helado al momento.
  3. Si quieres conservarlo, pásalo a una bolsa de congelación con cierre zip y mételo en el congelador.
  4. Al cabo de 2 horas, sácalo y machácalo bien con un mortero para romper los cristales de hielo que se hayan formado.
  5. Vuelve a congelar y repite el proceso unas 2 veces más para conseguir una textura mucho más cremosa.

September is here, schedules are back, diaries are starting to fill up, the days are getting just a little shorter and those endless afternoons by the pool or at the beach are slowly being left behind.

I don’t know about you, but I’m definitely not ready to let go of summer just yet and, as long as the weather stays warm, I fully intend to keep making ice cream.

Maybe getting back into a routine makes everything feel like a bit more of an effort, and the last thing on your mind is spending any longer in the kitchen than absolutely necessary. Well, keep reading and take note, because this recipe is for you! It couldn’t be easier and you only need 3 ingredients: ripe bananas, frozen raspberries and a little milk or cream. That’s it.

The quantities don’t need to be exact either. Like so many of the recipes I make at home, I made this one completely by eye.

I used a very inexpensive ice cream maker, one of those simple machines that does the job perfectly well without requiring a big investment. But if you don’t have one at home, keep reading because I’ve got a brilliant little trick for you.

Transfer the mixture to a zip-lock freezer bag and put it in the freezer. After two hours, take it out and give it a really good bash with a pestle. Freeze it again and repeat the process a couple more times. By doing this, you break up the ice crystals as they form and end up with a much creamier texture, surprisingly similar to what you’d get from using an ice cream maker.

And that’s it. That’s how easy it is to make homemade banana and raspberry ice cream with just three ingredients and absolutely no unnecessary fuss.

Because yes, September is here. We’ll start getting up early again, our usual schedules will return and, little by little, the swimsuits, beach umbrellas and baskets will be packed away. But nobody said we had to do everything on the same day, right?

3-ingredient banana and raspberry ice cream

Ingredients

  • Very ripe bananas, peeled, chopped and frozen for at least 4 hours
  • Frozen raspberries
  • Plant-based milk, dairy milk or cream, whichever you prefer (cream will give you an even creamier result)

I made the quantities by eye, but as a rough guide I used around 4 very small bananas, a handful of raspberries and approximately 120 ml milk.


Method

  1. Blend all the ingredients together until smooth and creamy.
  2. If the mixture is still very cold and frozen, you can enjoy the ice cream straight away.
  3. If you want to keep it for later, transfer it to a zip-lock freezer bag and place it in the freezer.
  4. After 2 hours, take it out and give it a good bash with a pestle to break up any ice crystals that have formed.
  5. Return it to the freezer and repeat the process about 2 more times to achieve a much creamier texture.

Receta de pizza-quiche de brócoli y queso de cabra🥧🥦


Que levante la mano a quien no le haya ocurrido algo así... Estás de vacaciones, el día se alarga más de la cuenta, vuelves a casa tarde, cansada, con hambre y con exactamente cero ganas de cocinar.

A mí también me ha pasado. Y no una ni dos veces, sino ¡cientos!

Y en esos momentos intento recordar algo que, a veces, se nos olvida cuando queremos llevar un estilo de vida saludable, no hace falta hacerlo todo perfecto para hacerlo bien.

Y sí, podría decirte que prepares una masa casera. Que mezcles las harinas, amases, dejes reposar... pero son las ocho y media de la tarde, acabas de llegar de la playa o la piscina y tú y yo sabemos que hoy eso no va a ocurrir.

Así que compras una buena masa de pizza refrigerada en el súper más cercano y con ella, un brócoli, unos huevos, parmesano y queso de cabra y seguimos.

Lo que sucede después es una especie de cruce entre pizza y quiche que probablemente no gane ningún premio entre los puristas de ninguna de las dos, pero en casa nos parece brutal. Una auténtica locura.

Primero aso el brócoli para que se dore y gane muchísimo más sabor. Mientras tanto, precocino la masa y preparo una mezcla de huevos, leche, parmesano y queso de cabra.

Después solo queda juntarlo todo y dejar que el horno haga su trabajo.

Y ahí tienes la cena.

El brócoli ligeramente tostado, el queso de cabra cremoso, el parmesano y una base crujiente consiguen que comer verduras resulte bastante más emocionante que encontrarte un triste brócoli hervido en el plato.

Pero, sobre todo, tienes una cena rica y fácil que has preparado sin complicarte la vida.

Porque para mí comer bien también es esto. Es saber elegir cuándo merece la pena hacer algo desde cero y cuándo una buena opción comprada en el supermercado puede solucionarte la cena.

Sin culpa. Sin intentar alcanzar una perfección que, sinceramente, tampoco necesito durante mis vacaciones.

Así que guárdate esta receta de pizza-quiche de brócoli y queso de cabra para uno de esos días de verano en los que llegues a casa pensando que lo último que te apetece es meterte en la cocina y cocinar.

Pizza-quiche de brócoli y queso de cabra

Ingredientes

  • 1 brócoli
  • 1 masa de pizza refrigerada
  • ¼ taza de leche
  • 4 huevos eco
  • ¼ taza de parmesano
  • 120 g de queso de cabra


Elaboración

  1. Asa el brócoli al horno a 220ºC durante 20 minutos.
  2. Hornea la masa de pizza a 220ºC durante 10 minutos.
  3. Mezcla la leche, los huevos, el parmesano y el queso de cabra.
  4. Añade el brócoli asado a la mezcla y vierte sobre la base de pizza precocida.
  5. Hornea durante 30 minutos a 160ºC.

Hands up if this has ever happened to you... You’re on holiday, the day runs away with you, you get home late, tired, hungry and with exactly zero desire to cook.

It happens to me too. Not once or twice, but hundreds of times!

And in those moments, I try to remind myself of something we sometimes forget when we’re trying to live a healthy lifestyle: you don’t have to do everything perfectly to do it well.

And yes, I could tell you to make your own pizza dough. Mix the flours, knead it, leave it to rest... but it’s half past eight in the evening, you’ve just got back from the beach or the pool, and you and I both know that’s not happening tonight.

So you pick up a good refrigerated pizza dough from the nearest supermarket and we carry on from there.

And while you’re there, grab some broccoli, eggs, Parmesan and goat’s cheese.

What happens next is somewhere between a pizza and a quiche. It probably wouldn’t win any prizes with purists from either camp, but at home we think it’s absolutely brilliant. Honestly, it’s ridiculously good.

First, I roast the broccoli so it gets nicely golden and develops loads more flavour. Meanwhile, I pre-bake the pizza base and mix together the eggs, milk, Parmesan and goat’s cheese.

Then all that’s left to do is bring everything together and let the oven do the rest.

And there’s dinner.

The lightly roasted broccoli, creamy goat’s cheese, Parmesan and crisp base make eating vegetables a lot more exciting than finding a sad pile of boiled broccoli on your plate.

But above all, you’ve got a delicious, easy dinner that you’ve made without making life difficult for yourself.

Because, for me, eating well is also about this. It’s knowing when something is worth making from scratch and when a good supermarket option can quite happily rescue dinner.

No guilt. No trying to reach some idea of perfection that, quite honestly, I don’t need on holiday either.

So save this broccoli and goat’s cheese pizza-quiche recipe for one of those summer days when you get home thinking the very last thing you want to do is spend time in the kitchen.

Broccoli and goat’s cheese pizza-quiche

Ingredients

  • 1 broccoli
  • 1 refrigerated pizza dough
  • ¼ cup milk
  • 4 organic eggs
  • ¼ cup Parmesan
  • 120 g goat’s cheese


Method

  1. Roast the broccoli at 220ºC for 20 minutes.
  2. Bake the pizza dough at 220ºC for 10 minutes.
  3. Mix together the milk, eggs, Parmesan and goat’s cheese.
  4. Add the roasted broccoli to the mixture and pour all over the pre-baked pizza base.
  5. Bake for 30 minutes at 160ºC.

Mi experiencia como Health Coach del IIN: qué aprendí, para quién es

Mi experiencia como health coach formada en el IIN (Institute for Integrative Nutrition)

Hace unos años tomé una decisión que cambió mi forma de entender la salud (la mía y la de mi familia): me formé como health coach en el Institute for Integrative Nutrition (IIN) de Nueva York.

No lo hice para cambiar de profesión. Lo hice porque llevaba años cocinando, fotografiando comida y hablando de alimentación, y sentía que me faltaba una base sólida. Quería entender el por qué detrás de lo que ya intuía: que la salud no va solo de lo que pones en el plato.

Me habéis preguntado mucho por esta formación a lo largo de estos años, así que aquí va mi experiencia completa. Sin filtros.

Qué es el IIN (te lo cuento rápido)

El IIN es la escuela de coaching de salud más grande del mundo: más de 180.000 graduados en más de 175 países. Su programa insignia, The Health Coach Training Program, es 100% online, está disponible en español y puedes hacerlo en 6 o 12 meses, a tu ritmo (yo preferí hacerlo en un año, implica unas 5-7 horas semanales).

Lo que de verdad me llevé del programa

1. La bioindividualidad. No existe una dieta perfecta universal. Lo que a mí me sienta de maravilla puede no funcionarte a ti. Parece obvio, pero cuando entiendes el porqué a fondo, dejas de buscar fórmulas mágicas (y de venderlas).

2. La Alimentación Primaria. Este concepto me voló la cabeza: todo lo que te nutre y no está en el plato. Tus relaciones, tu trabajo, tu movimiento, tu vida espiritual. Puedes comer perfecto y estar profundamente desnutrida en otras áreas. Yo lo vi clarísimo en mis épocas de más trabajo: el plato impecable no compensa el descanso que no tienes ni las conversaciones que no estás teniendo.

3. Más de 95 profesores de enfoques muy distintos. Y esto es lo que más valoro: no te adoctrinan en una sola corriente. Escuchas a defensores de enfoques opuestos y aprendes a pensar con criterio propio.

4. La parte de negocio. No solo aprendes salud: aprendes a construir un proyecto con ello. A mí me sirvió para dar estructura y credibilidad a lo que ya hacía.

Qué ha cambiado desde que yo lo cursé

He estado mirando el plan de estudios de 2026 y honestamente me habría encantado tener estos módulos en su momento:

  • Terapia con GLP-1 (Ozempic y compañía): cómo acompañar a clientes que los usan, sin juicios
  • Perimenopausia y menopausia: por fin, formación seria sobre esta etapa
  • Salud bucodental y su conexión con la salud general
  • Inteligencia artificial aplicada al coaching

Son exactamente los temas que están sobre la mesa ahora mismo.

Para quién es (y para quién no)

Es para ti si:

  • Trabajas en algo relacionado con bienestar, cocina, deporte, yoga… y quieres una base sólida que te dé credibilidad
  • Quieres reorientar tu carrera hacia la salud sin pasar por una carrera universitaria de 4 años
  • Simplemente quieres transformar tu propia salud y la de tu familia con criterio (hay mucha gente que lo hace solo por esto, y me parece razón de sobra)

No es para ti si:

  • Buscas una titulación sanitaria oficial (un health coach acompaña, no diagnostica ni prescribe)

Receta express 🍓🥤 Batido de proteínas con fresas y melocotón 🍑


Hay una cosa que nunca debería ocurrir después de entrenar, que es llegar a casa con un hambre terrible y descubrir que no tienes absolutamente nada preparado.

Bueno, sí puede ocurrir y, de hecho, ocurre bastante a menudo.

Precisamente para evitar que esto pase, tengo algunas recetas express que se preparan prácticamente antes de que te dé tiempo a pensar qué vas a comer.

Este batido de fresas y melocotón es una de ellas.

Necesitas cuatro ingredientes, sí solo cuatro, una batidora y un par de minutos.

Si te soy sincera, es una receta que preparo completamente a ojo. Un puñado de esto, un chorrito de aquello, triturar… y listo.

Aunque tranquila, que esta vez lo he medido todo para compartirte las cantidades exactas.

La combinación es sencillísima: fresas (si están congeladas, mucho mejor porque conseguirás un batido más fresco y cremoso), yogur, zumo de melocotón y una cucharada de proteína en polvo.

Y aquí está precisamente el pequeño detalle que hace que este batido sea algo más que fruta triturada.

La proteína.

Cada vez intento prestar más atención a incluir una buena cantidad de proteína en mis comidas y, especialmente después de entrenar. Entre el yogur y la proteína en polvo consigues un batido mucho más completo y saciante sin complicar la receta.

Las fresas y melocotón son una combinación que funciona de maravilla, es una mezcla fresca, ligeramente dulce y con ese punto ácido de las fresas que hace que no resulte nada pesado.

Y ahora, en verano, todavía tiene más sentido.

Yo suelo tener fresas congeladas porque, aparte de que me encantan, me salvan de más de un apuro. Llegas de entrenar acalorada, abres el congelador, lo echas todo en la batidora y, dos minutos después, tienes algo frío y delicioso esperando.

Sin pesar, sin cocinar y prácticamente sin recoger.

Si quieres prepararlo exactamente como yo, te dejo las cantidades más abajo, aunque tienes permiso absoluto para hacerlo a ojo. De hecho, posiblemente la segunda vez ya ni las mires.

Ingredientes

  • Un puñado de fresas (si son congeladas, mejor)
  • ¼ de taza de yogur
  • 150 ml de zumo de melocotón (a ser posible ecológico y sin azúcares añadidos)
  • 1 cucharada de proteína en polvo


Elaboración

There’s one thing that should never happen after a workout: getting home absolutely starving and realising you have nothing ready to eat.

Well… it can happen. And, actually, it happens quite often.

That’s exactly why I keep a few express recipes up my sleeve, the kind you can make almost before you’ve even had time to decide what you’re going to eat.

This strawberry and peach smoothie is one of them.

You need four ingredients — yes, just four — a blender and a couple of minutes.

If I’m being completely honest, this is one of those recipes I usually make entirely by eye. A handful of this, a splash of that, blend… and done.

But don’t worry, this time I actually measured everything so I could give you the exact quantities.

The combination couldn’t be simpler: strawberries (frozen are even better because they make the smoothie colder and creamier), yogurt, peach juice and a spoonful of protein powder.

And that’s precisely the little detail that turns this smoothie into something more than just blended fruit.

The protein.

I’m paying more and more attention to including a good amount of protein in my meals, especially after training. Between the yogurt and the protein powder, you end up with a much more complete and satisfying smoothie without making the recipe any more complicated.

Strawberries and peach are such a good combination: fresh, lightly sweet and with that little tang from the strawberries that keeps the whole thing from feeling heavy.

And now that it’s summer, it makes even more sense.

I usually keep frozen strawberries at home because, apart from loving them, they get me out of trouble more often than I can count. You come home hot after training, open the freezer, throw everything into the blender and two minutes later you’ve got something cold and delicious waiting for you.

No weighing, no cooking and almost nothing to clean up.

If you want to make it exactly as I do, I’ve left the quantities below, although you have my full permission to make it by eye. In fact, chances are you won’t even look at them the second time.

Ingredients

  • A handful of strawberries (frozen are even better)
  • ¼ cup yogurt
  • 150 ml peach juice (preferably organic and with no added sugar)
  • 1 tablespoon protein powder


Method

  1. Blend all the ingredients thoroughly and enjoy a delicious smoothie packed with vitamins and an extra boost of protein from the yogurt and protein powder.

Paté vegano de boniato y lenteja


Si hoy abrieras la nevera de mi casa, hay muchas posibilidades de que encontraras un tarro de este paté, incluso si estamos en una casa de vacaciones.

Y está ahí simplemente porque forma parte de nuestra vida.

Durante el curso tiene un destino bastante claro: la merienda de Lucas. Es, con diferencia, una de sus favoritas para llevar al colegio y, cada vez que el tarro se termina, sé que no tardará mucho en preguntarme cuándo vuelvo a prepararlo.

Pero cuando llega el verano, ese mismo tarro cambia de misión. Pasa de la mochila del colegio a la nevera portátil.

Nos acompaña a la playa, a la piscina, a un picnic improvisado o cuando salimos a navegar. Y siempre ocurre lo mismo, alguien abre el tarro, busca una buena barra de pan y, casi sin hablar, van pasando de mano en mano hasta que empiezan a desaparecer las rebanadas y el tarro se ve cada vez más vacío.

Creo que ese es el mejor piropo que puede recibir una receta.

Que nadie pregunte qué lleva. Solo dónde está el cuchillo para volver a untar otra rebanada.

Posiblemente, a estas alturas te estés preguntando qué esconde este tarrito para que guste tanto. Y la respuesta es fácil, está lleno de ingredientes que realmente aportan cosas interesantes.

La proteína vegetal de la lenteja roja que, combinada con un buen pan integral, mejora todavía más su perfil proteico, los anacardos, ricos en grasas mono y poliinsaturadas y minerales, y el boniato, que aporta fibra, vitamina A, vitamina C, ácido fólico, potasio y ese punto ligeramente dulce que hace que el conjunto resulte todavía más apetecible.

Al final, casi sin darte cuenta, tienes un paté vegano con proteína, verduras, frutos secos y muchísimo sabor y que, contra todo pronóstico, te va a chiflar.

Creo que esa es la verdadera razón por la que nunca falta en nuestra nevera.

Porque puedes prepararlo con antelación, aguanta perfectamente varios días y sirve igual de bien para una merienda, un aperitivo antes de comer, una cena ligera o para picar algo rico después de un baño.

Es una de esas recetas que simplemente funcionan. Y, cuando una receta consigue eso, termina convirtiéndose en un básico de casa.

Paté de boniato y lentejas

Ingredientes

  • 1 cebolla pequeña o chalota
  • ½ diente de ajo
  • 140 g de lentejas rojas
  • 1 boniato pequeño o medio grande
  • ½ taza de anacardos activados (dejados en remojo al menos 4 horas o bien 15 minutos en agua hirviendo)
  • 1 cucharadita de pimentón
  • 1 cucharadita de cúrcuma
  • 2 cucharaditas de aceite de oliva virgen extra
  • Sal y pimienta negra recién molida
  • 1 cucharadita de vinagre de vino tinto
  • Pan de calidad para untar


Elaboración

  1. Saltea la cebolla y el ajo en un cazo con un poco de aceite hasta que la cebolla esté translúcida.
  2. Añade las lentejas y el boniato troceado y cubre con agua. Hierve durante 15 minutos o hasta que el boniato esté blando.
  3. Tritura junto con el resto de los ingredientes.
  4. Rectifica de sal y pimienta y sirve untado sobre una tostada de un buen pan (recordad que sea siempre integral, con al menos un 70 % de harina integral, mejor de espelta o centeno).

If you opened my fridge today, there’s a very good chance you’d find a jar of this pâté inside, even if we happened to be staying at a holiday home.

And it’s there simply because it has become part of our everyday life.

During the school year, it has a very clear purpose: Lucas’s afternoon snack. It is, by far, one of his favourite things to take to school and, every time the jar runs out, I know it won’t be long before he asks when I’m going to make it again.

But once summer arrives, that same jar takes on a new role. It moves from the school backpack to the cool box.

It comes with us to the beach, the pool, an impromptu picnic or a day out sailing. And the same thing always happens: someone opens the jar, finds a good loaf of bread and, almost without saying a word, everything starts being passed from hand to hand until the slices begin to disappear and the jar looks emptier and emptier.

I think that’s the best compliment a recipe can receive.

Nobody asks what’s in it. They only want to know where the knife is so they can spread some more onto another slice.

By now, you’re probably wondering what’s hiding inside this little jar that makes everyone love it so much. And the answer is simple: it’s packed with ingredients that genuinely have something interesting to offer.

There’s the plant-based protein from the red lentils, which has an even better protein profile when paired with good wholegrain bread; the cashews, rich in mono- and polyunsaturated fats and minerals; and the sweet potato, which adds fibre, vitamin A, vitamin C, folic acid, potassium and that slightly sweet flavour that makes the whole thing even more irresistible.

In the end, almost without realising it, you have a vegan pâté packed with protein, vegetables, nuts and loads of flavour which, against all expectations, you’re going to absolutely love.

I think that’s the real reason it’s never missing from our fridge.

You can make it ahead of time, it keeps perfectly for several days and works just as well as an afternoon snack, an appetiser before lunch, a light dinner or something tasty to nibble on after a swim.

It’s one of those recipes that simply works. And when a recipe manages to do that, it eventually becomes a household staple.

Sweet potato and lentil pâté

Ingredients

  • 1 small onion or shallot
  • ½ garlic clove
  • 140 g red lentils
  • 1 small or ½ large sweet potato
  • ½ cup activated cashews (soaked for at least 4 hours, or for 15 minutes in boiling water)
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 teaspoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon red wine vinegar
  • Good-quality bread, for spreading


Method

  1. Sauté the onion and garlic in a saucepan with a little oil until the onion becomes translucent.
  2. Add the lentils and chopped sweet potato, then cover with water. Boil for 15 minutes or until the sweet potato is soft.
  3. Blend together with the remaining ingredients.
  4. Adjust the seasoning with salt and black pepper and serve spread over a slice of good bread (always choose wholegrain bread containing at least 70% wholemeal flour, preferably spelt or rye).

Gazpacho de remolacha y cerezas



Ahora, en verano, apetece más que nunca comer fuera. Estamos de vacaciones, el calor hace que la pereza aumente, las ganas de cocinar disminuyan y, además, aparece esa necesidad de salir de la rutina y probar cosas nuevas.

Pero si esto te pilla en tu lugar de vacaciones, lo más probable es que, si no has reservado con tiempo, conseguir mesa en alguno de los mejores restaurantes sea misión imposible. Y ya no hablemos de encontrar aparcamiento.

Así que, si te apetece preparar un plato bonito y sentir, durante un rato, que estás comiendo en uno de esos restaurantes de moda, pero sin reservar mesa con días de antelación ni pasar media tarde en la cocina, sigue leyendo porque esta receta la he creado pensando en ti.

Solo necesitas buenos tomates, unas cerezas maduras y dos remolachas.

Sé lo que estás pensando.

—¿Cerezas en un gazpacho?

Pues sí.

Y, por favor, no lo juzgues hasta que lo pruebes, porque esta es una de esas combinaciones que, sobre el papel, pueden parecer arriesgadas y, sin embargo, en el plato tienen todo el sentido.

Las cerezas aportan un dulzor sutil que equilibra la acidez del tomate. La remolacha le da profundidad y ese color intenso y maravilloso que hace que parezca un plato mucho más elaborado y sofisticado de lo que realmente es.

Porque, entre nosotras, aquí el mayor esfuerzo consiste en deshuesar las cerezas.

Después solo tienes que triturarlo todo y añadir el aceite poco a poco para conseguir una textura suave y bien emulsionada.

El resultado es fresco, ligeramente afrutado y diferente al gazpacho de siempre. Una de esas recetas que te permiten salir de la rutina sin complicarte y aprovechar ingredientes de temporada cuando están en su mejor momento.

Después, sírvelo bien frío con queso feta desmenuzado, unas semillas de calabaza y un buen chorro de aceite de oliva virgen extra.

El contraste entre el dulzor de las cerezas, el punto salado del feta y el crujiente de las semillas convierte una receta sencilla en un plato que perfectamente podrían servirte en un restaurante.

Solo que, esta vez, no tienes que vestirte de forma elegante, buscar aparcamiento ni esperar a que llegue la cuenta.

Gazpacho de remolacha y cerezas

Ingredientes

  • 800 g de tomates pera muy maduros
  • 2 remolachas cocidas
  • 400 g de cerezas maduras deshuesadas
  • 70 ml de aceite de oliva virgen extra
  • Un chorrito de vinagre de manzana
  • Sal y pimienta
  • Queso feta desmenuzado, para servir
  • Semillas de calabaza, para servir
  • Aceite de oliva virgen extra, para terminar


Elaboración

  1. Pon en el vaso de la batidora los tomates, las remolachas, las cerezas deshuesadas, el vinagre de manzana, la sal y la pimienta.
  2. Tritura hasta obtener una mezcla completamente homogénea.
  3. Sin dejar de triturar, añade el aceite de oliva virgen extra poco a poco para que el gazpacho emulsione bien y adquiera una textura suave y cremosa.
  4. Prueba y ajusta la cantidad de sal, pimienta o vinagre si fuera necesario.
  5. Guarda el gazpacho en la nevera hasta que esté bien frío.
  6. Sírvelo con queso feta desmenuzado, semillas de calabaza y un chorrito de aceite de oliva virgen extra.

Now that summer is here, eating out feels more tempting than ever. We’re on holiday, the heat makes us lazier, our enthusiasm for cooking starts to disappear and, on top of that, we suddenly feel the need to break away from our usual routine and try something new.

But when this happens while you’re away on holiday, chances are that, unless you booked well in advance, getting a table at one of the best restaurants will be virtually impossible. And let’s not even talk about finding somewhere to park.

So, if you fancy making a beautiful dish and pretending, just for a little while, that you’re eating at one of those fashionable restaurants—but without booking a table days ahead or spending half the afternoon in the kitchen—keep reading, because this recipe was made for you.

All you need are some good tomatoes, a handful of ripe cherries and two beetroots.

I know what you’re thinking.

—Cherries in gazpacho?

Yes, really.

And please don’t judge it until you’ve tried it, because this is one of those combinations that might sound slightly risky on paper but makes complete sense once it reaches the plate.

The cherries add a subtle sweetness that balances the acidity of the tomatoes. The beetroot gives it depth and that gorgeous, intense colour that makes the whole dish look far more elaborate and sophisticated than it actually is.

Because, between us, the hardest part of this recipe is removing the stones from the cherries.

After that, all you need to do is blend everything together and gradually add the olive oil to create a smooth, beautifully emulsified texture.

The result is fresh, gently fruity and a little different from the gazpacho we all know. It’s one of those recipes that lets you shake things up without making life complicated, while also making the most of seasonal ingredients when they’re at their best.

Serve it really cold with crumbled feta, a sprinkling of pumpkin seeds and a generous drizzle of extra virgin olive oil.

Beetroot and cherry gazpacho

Ingredients

  • 800 g very ripe plum tomatoes
  • 2 cooked beetroots
  • 400 g ripe cherries, pitted
  • 70 ml extra virgin olive oil
  • A splash of apple cider vinegar
  • Salt and black pepper
  • Crumbled feta, to serve
  • Pumpkin seeds, to serve
  • Extra virgin olive oil, to finish


Method

  1. Place the tomatoes, beetroots, pitted cherries, apple cider vinegar, salt and black pepper in a blender.
  2. Blend until completely smooth.
  3. With the blender still running, gradually pour in the extra virgin olive oil so that the gazpacho emulsifies properly and develops a smooth, creamy texture.
  4. Taste and adjust the salt, pepper or vinegar if needed.
  5. Chill the gazpacho in the fridge until very cold.
  6. Serve with crumbled feta, pumpkin seeds and a drizzle of extra virgin olive oil.

Postre de chocolate


Hoy te cuento un pequeño truco al que recurro para disfrutar mucho más del verano. Y no tiene nada que ver con madrugar para coger sitio en la playa, ni con encender el aire acondicionado antes de llegar a casa.

Tiene que ver con abrir la nevera después de una mañana de piscina o de un día entero de playa y saber que ya tienes el postre esperándote. Y un postre más saludable que cualquiera que puedas encontrar en un chiringuito.

Nada de niños pidiendo algo dulce de forma insistente. Ni tener que cocinar con treinta y tantos grados en la cocina. Solo abrir la nevera, coger una cucharilla y disfrutar.

No sé a ti, pero en verano lo único que me apetecen son recetas que se preparen en un momento y luego hagan todo el trabajo ellas solas mientras están en la nevera. Y esta cumple todos los requisitos y, encima, ¡está riquísima!


Tiene una textura suave y cremosa, un intenso sabor a cacao y el punto justo de dulzor para que resulte ligera a pesar del chocolate.


Y aquí llega el segundo truco del día, que creo que todavía vas a agradecer más.

Puedes preparar varias raciones de una sola vez y olvidarte del postre durante unos días.

Si tienes invitados o simplemente te gusta cuidar la presentación para que tus platos entren también por la vista, puedes añadirle unos frutos rojos, unas virutas de chocolate o unas hojas de menta justo antes de servir. Queda precioso y no tardas más de un minuto.

Aquí en casa, la mayoría de las veces no llega a tanto. Lo habitual es desmoldar, coger una cuchara... y desaparecer. Así de rápido, un visto y no visto.

Postre cremoso de chocolate

Ingredientes

  • 80 ml de agua fría
  • 2 láminas de gelatina
  • 500 ml de nata líquida
  • 80 g de azúcar de coco
  • 2 cucharaditas de extracto de vainilla
  • 110 g de cacao en polvo
  • 180 ml de leche entera


Elaboración

  1. Empieza hidratando las láminas de gelatina en el agua fría.
  2. Mezcla en un cazo todos los ingredientes excepto la leche y la gelatina. Lleva a ebullición mientras remueves continuamente.
  3. Añade la gelatina hidratada y remueve de nuevo a fuego bajo durante un minuto, hasta que se disuelva por completo.
  4. Pasa la mezcla por un colador, añade la leche entera y remueve bien.
  5. Reparte la mezcla en moldes individuales y deja enfriar en la nevera durante un mínimo de 4 a 6 horas.

Today I’m sharing a little trick I rely on to enjoy summer that bit more. And it has nothing to do with getting up early to claim a spot on the beach or switching on the air conditioning before you get home.

It’s all about opening the fridge after a morning by the pool or a full day at the beach and knowing that dessert is already there waiting for you. And a healthier dessert than anything you’re likely to find at a beach bar.

No children repeatedly asking for something sweet. No cooking in a kitchen that’s well over thirty degrees. Just open the fridge, grab a spoon and enjoy.

I don’t know about you, but in summer I only want recipes that come together in minutes and then quietly do all the work themselves while they sit in the fridge.

And this one ticks every box. Plus, it’s absolutely delicious.

It has a smooth, creamy texture, a rich cocoa flavour and just enough sweetness to keep it feeling light, despite all that chocolate.

And here comes the second trick of the day, which I think you’re going to appreciate even more.

You can prepare several portions at once and forget about dessert for the next few days.

If you have guests, or you simply like your food to look as good as it tastes, add a few berries, some chocolate shavings or a couple of mint leaves just before serving. It looks beautiful and takes less than a minute.

At home, most of the time, it doesn’t even get that far. Usually, it’s unmould, grab a spoon... and gone. Blink and you’ll miss it.

Creamy chocolate dessert

Ingredients

  • 80 ml cold water
  • 2 gelatine leaves
  • 500 ml whipping cream
  • 80 g coconut sugar
  • 2 teaspoons vanilla extract
  • 110 g cocoa powder
  • 180 ml whole milk


Method

  1. Start by soaking the gelatine leaves in the cold water.
  2. Place all the ingredients except the milk and gelatine in a saucepan. Bring to the boil, stirring continuously.
  3. Add the soaked gelatine and continue stirring over a low heat for one minute, until completely dissolved.
  4. Pass the mixture through a sieve, add the whole milk and stir well.
  5. Pour the mixture into individual moulds and leave to set in the fridge for at least 4 to 6 hours.
