Receta básica de pizza de coliflor y semillas de calabaza


Partimos de la base de que la pizza… es otra cosa pero oye, ésta da el pego muchísimo y además, es apta para low carb y keto.

Y creo que precisamente ahí está el secreto para disfrutar de esta receta.

Porque cada vez que una receta saludable intenta convencerte de que es igual que la original, es más que probable que termine decepcionando.

No te voy a mentir. La primera vez que la preparé tuve mis dudas. Pensaba que acabaría deshaciéndose o que el sabor de la coliflor sería el protagonista absoluto.

Pero no, me equivoqué.

La mezcla de las semillas de calabaza, el parmesano y los huevos consigue una base firme, sabrosa y con una textura que sorprende muchísimo. Lo suficiente como para que sea una de esas recetas que te vienen a la cabeza cuando te apetece una cena ligera, pero con la sensación de estar comiendo algo un poco más especial.

Esta base de coliflor es una forma diferente y deliciosa de comer más verduras.

Y luego, con los ingredientes de encima, todavía suma más puntos.

En esta ocasión la preparé con carpaccio de remolacha, unas acelgas, queso de cabra y un chorrito de reducción de aceto balsámico de Módena. Y solo unos minutos más de horno para fundir el queso y… ¡lista!

También está riquísima con verduras asadas, champiñones, tomates, pesto, burrata o lo que tengas ese día en la nevera.

Y sí… la pizza sigue siendo la pizza.

Pero esta receta es un buen as en la manga cuando te apetece pizza, pero una versión más saludable y menos pesada que la tradicional.

Base de pizza de coliflor básica

Ingredientes

  • 1 taza (160 g) de semillas de calabaza
  • 600 g flores de coliflor, picadas en trozos grandes
  • 2 cucharadas de levadura nutricional (opcional)
  • 3 huevos, ligeramente batidos
  • ½ taza (40 g) de parmesano rallado
  • Sal marina y pimienta negra molida


Elaboración

  1. Precalienta el horno a 200ºC.
  2. Empieza moliendo las semillas de calabaza en una batidora.
  3. Añade el resto de ingredientes y vuelve a triturar.
  4. Forma dos bases de pizza redondas en una bandeja de horno con papel de hornear (yo hice dos tandas pues no me cabían en una bandeja). Hornea durante 20 minutos a 200ºC calor arriba y abajo.
  5. Esta vez la he hecho con carpaccio de remolacha (laminada en la mandolina), acelgas, queso de cabra y reducción de aceto balsámico de Módena. Un golpe de horno para fundir el queso y listos!

Let’s start from the fact that pizza… is something else, but honestly, this one really does the trick and, on top of that, it’s suitable for low carb and keto.

And I think that’s exactly the secret to enjoying this recipe.

Because every time a healthy recipe tries to convince you that it’s exactly like the original, chances are it will end up disappointing you.

I won’t lie to you. The first time I made it, I had my doubts. I thought it would fall apart or that the cauliflower flavour would completely take over.

But no, I was wrong.

The combination of pumpkin seeds, Parmesan and eggs creates a firm, tasty base with a texture that is genuinely surprising. Enough for it to become one of those recipes that comes to mind when you fancy a light dinner, but something a little different and special from the usual.

This cauliflower base is a different and delicious way to eat more vegetables.

And then, with the toppings, it scores even more points.

This time I made it with beetroot carpaccio, some chard, goat’s cheese and a drizzle of Modena balsamic reduction. Then just a few more minutes in the oven to melt the cheese and… done!

It’s also delicious with roasted vegetables, mushrooms, tomatoes, pesto, burrata or whatever you happen to have in the fridge that day.

And yes… pizza is still pizza.

But this recipe is a great ace up your sleeve when you’re craving pizza, but want a healthier and lighter version than the traditional one.

Basic cauliflower pizza base

Ingredients

  • 1 cup (160 g) pumpkin seeds
  • 600 g cauliflower florets, roughly chopped
  • 2 tablespoons nutritional yeast (optional)
  • 3 eggs, lightly beaten
  • ½ cup (40 g) grated Parmesan
  • Sea salt and ground black pepper


Method

  1. Preheat the oven to 200ºC.
  2. Start by grinding the pumpkin seeds in a blender.
  3. Add the rest of the ingredients and blend again.
  4. Shape two round pizza bases on a baking tray lined with baking paper (I did it in two batches because they didn’t fit on one tray). Bake for 20 minutes at 200ºC, with heat from above and below.
  5. This time I made it with beetroot carpaccio (thinly sliced with a mandoline), chard, goat’s cheese and Modena balsamic reduction. A quick blast in the oven to melt the cheese and done!

Crema de Coliflor con crujiente de semillas


Así sin avisar, hemos cruzado el ecuador del mes de enero y yo sigo con ganas de recetas simples, que reconfortan sin pesar. Recetas que sientan bien y que ayudan al cuerpo a recuperar el equilibrio.

Hoy te propongo una crema de coliflor con crujiente de semillas.

Una receta suave y cremosa, con ese puntito especiado que la hace especial, y el toque crujiente de las semillas tostadas que le da la chispa perfecta. De esas que transforman un plato sencillo de diario en un platazo.

Y —por si aún arrastras algún trauma infantil— déjame decirte algo:
la coliflor no huele mal ni sabe raro… si se cocina bien. Lo prometo.
La clave está en los tiempos de cocción, en elegir un buen caldo, en mimarla con las especias adecuadas… y, sobre todo, en olvidarse de hervirla hasta que se deshaga. Aquí queda suave, delicada, con un fondo de sabor que sorprende. Nada que ver con aquellas versiones grises y aguadas que algunas aún recordamos.

En casa la hacemos muchas veces entre semana, sobre todo en los días en los que te apetece no pensar demasiado, sino comer algo rico y calentito. Solo ingredientes sencillos, pasos fáciles y resultado de diez.

La coliflor se convierte en una crema sedosa. El pollo desmenuzado le aporta proteína y saciedad. Y esas semillas especiadas —ojo, porque son adictivas— le dan el contraste crujiente que marca la diferencia.

Crema de coliflor con crujiente de semillas

Ingredientes para la crema

  • 1 cucharada de aceite de oliva virgen extra
  • 1 cucharadita de cilantro molido
  • 1 cucharadita de comino molido
  • 1 cebolla blanca finamente picada
  • 3 dientes de ajo machacados
  • 1 coliflor entera cortada a trozos
  • Sal marina y pimienta negra recién molida
  • 1,5 litros de caldo de pollo o caldo de verduras
  • Sal y pimienta negra
  • 2 pechugas de pollo

Ingredientes para las semillas especiadas

  • ¼ de taza de aceite de oliva virgen extra
  • 2 dientes de ajo picados
  • 2 cucharadas de semillas de calabaza
  • 1 cucharada de pipas de girasol o mix de semillas
  • 1 cucharadita de sésamo
  • ½ cucharadita de cilantro molido
  • ½ cucharadita de comino molido

Elaboración

  1. Calienta el aceite y añade las especias, calienta 30 segundos y remueve.
  2. Añade la cebolla y ajos, sofríe 5 minutos a fuego medio.
  3. Añade la coliflor, el caldo y tapa. Cocina 20 minutos a fuego bajo. Añade el pollo en pechugas enteras, tapa y cocina 10 minutos más.
  4. Retira el pollo y desmenúzalo con las manos.
  5. Reserva el caldo de la cocción y tritura la crema.
  6. Tuesta las semillas en el aceite durante 2 minutos y por último añade las especias. Apaga el fuego.
  7. Sirve la sopa con las tiras de pollo y las semillas.

Today I’m sharing a cauliflower soup with spiced crunchy seeds.

A smooth, creamy recipe with a subtle hint of spices that makes it special, and the crunchy touch of toasted seeds that gives it the perfect spark. One of those dishes that turns a simple everyday meal into something truly special.

And —in case you’re still carrying some childhood trauma— let me tell you something:
cauliflower doesn’t smell bad or taste strange… if it’s cooked properly. I promise.
The key lies in cooking times, choosing a good stock, treating it gently with the right spices… and above all, forgetting about boiling it until it falls apart. Here it turns out smooth, delicate, with a depth of flavour that surprises. Nothing like those grey, watery versions some of us still remember.

At home we make it often during the week, especially on days when you don’t feel like overthinking things, just eating something warm and comforting. Simple ingredients, easy steps and a ten-out-of-ten result.

The cauliflower becomes a silky cream. The shredded chicken adds protein and satiety. And those spiced seeds —careful, they’re addictive— provide the crunchy contrast that makes all the difference.

Cauliflower soup with spiced crunchy seeds

Ingredients for the soup

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 white onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 whole cauliflower, cut into florets
  • Sea salt and freshly ground black pepper
  • 1.5 litres chicken stock or vegetable stock
  • Salt and black pepper
  • 2 chicken breasts

Ingredients for the spiced seeds

  • ¼ cup extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon sunflower seeds or mixed seeds
  • 1 teaspoon sesame seeds
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin

Method

  1. Heat the oil and add the spices. Warm for 30 seconds, stirring.
  2. Add the onion and garlic and sauté over medium heat for 5 minutes.
  3. Add the cauliflower and stock, cover and cook over low heat for 20 minutes. Add the whole chicken breasts, cover again and cook for another 10 minutes.
  4. Remove the chicken and shred it by hand.
  5. Reserve the cooking liquid and blend the soup until smooth.
  6. Toast the seeds in the oil for 2 minutes, then add the spices and turn off the heat.
  7. Serve the soup with the shredded chicken and the spiced seeds on top.
