Para prepararlas he utilizado queso Grana Padano y romero fresco.
English version
Some recipes are so easy that you can’t help thinking there must be a catch.
And that’s exactly what happens every time I share this recipe for cheese and rosemary crisps: everyone ends up asking me the same thing — is that really all there is to it?
That’s it. With just two ingredients and a few minutes in the oven, you get thin, crispy, flavour-packed cheese crisps with so many different possibilities.
Once you start making them, you’ll discover that they’re one of those little tricks that can elevate almost any dish: serve them with an aperitif, add a crunchy element to a soup or salad, pair them with a meat dish or even use them to finish a bowl of pasta and make it look far more special with very little effort.
To make them, I’ve used Grana Padano cheese and fresh rosemary.
Grana Padano is a mature Italian cheese with an intense yet beautifully balanced flavour. In the oven, it melts and turns golden before becoming perfectly crisp as it cools. It’s also naturally gluten-free.
The rosemary adds an aromatic note that works particularly well with the cheese, but there are plenty of ways to vary the idea. You can replace it with thyme, add a little black pepper or even make a few using nothing but cheese.
The only part of the recipe that needs a little attention comes when you take them out of the oven.
While they’re still hot, the crisps remain flexible. If you leave them to cool completely on the baking tray, you’ll have flat, crunchy crisps, but you can also use those first few minutes to shape them by placing them over a wooden spoon or any other slightly curved surface.
Once cool, they’ll hold their shape and look particularly pretty served as an appetiser or used as a garnish to finish a dish.
And all of this with just two ingredients and around six minutes in the oven. There aren’t many recipes that give you quite so much for so little effort.
And if you follow a low-carb or keto diet, these cheese crisps are also a really simple option to have up your sleeve whenever you fancy something crunchy without reaching for the usual alternatives.
One piece of advice, though: make a few extra.
Between the ones you taste to make sure they’re properly crisp and the ones that somehow disappear while you’re finishing the rest of the meal, you may find that fewer make it to the table than you originally planned. 🧀
Would you eat them as an appetiser, or are you already thinking about which dish you’d use them with? 🧀🌿
Cheese and rosemary crisps
Ingredients
- A few rosemary leaves (about 1/4 cup)
- 250 g Grana Padano cheese (if you’re not familiar with it, it’s a traditionally made mature cheese with more than 1,000 years of history and a high nutritional value; it is also gluten- and lactose-free.
Method
- Start by preheating the oven to 180ºC, using conventional top and bottom heat without the fan.
- Coarsely grate the cheese and mix it in a bowl with the rosemary leaves.
- Line a baking tray with baking paper and place spoonfuls of the cheese mixture onto the tray. Bake for around 6 minutes, or until the crisps are lightly golden.
- Leave them to cool for one minute and, taking care not to burn yourself, transfer them to a curved surface such as a wooden spoon so they finish cooling while taking on their shape. After about 5 minutes, transfer them to a wire rack.
