Ingredientes

Para el tapenade de setas

  • 2 puñados de setas
  • 5 dientes de ajo picados
  • 1 cucharada de aceite de oliva para saltear
  • 10-15 aceitunas negras, preferiblemente Kalamata, deshuesadas y picadas
  • 7 tomates secos picados

  • Unos tomates secos, opcional

Y a disfrutar!!

English version

I can say with absolute certainty that hardly a week goes by without the same subject coming up, whether I'm chatting to other parents at school, catching up with friends, at the gym or talking to some of you on Instagram: dinner.

And those conversations almost always end in the same way… you're running out of ideas, you're far too tired to start cooking by that time of day, you end up making the same two dishes over and over again, or you reach for something ready-made because, quite simply, there just aren't enough hours in the day.

And I completely understand. I've been there plenty of times myself and, in the end, what works best for me is having a few delicious, family-friendly recipes up my sleeve that I can put together quickly, without having to start from scratch every single evening.

So today I'm sharing two things I make again and again at home, which you can turn into a seriously delicious dinner in just 20 minutes, or much less if you've prepared them ahead of time: a simple homemade hummus and a mushroom tapenade with olives and sun-dried tomatoes.

The mushroom tapenade is absolutely packed with flavour. It's made with garlic, olives (ideally black Kalamata olives), sun-dried tomatoes, a splash of balsamic vinegar and a little maple syrup or honey to balance everything out. You can make it in advance, keep it in an airtight jar with olive oil and use it not only for these toasts, but also with pasta, vegetables, eggs or even a salad.

And I don't think hummus needs much of an introduction around here.

It's one of those things I'm always happy to find waiting in the fridge because it goes with practically everything: toast like this, crudités, sandwiches, a bowl of vegetables or a last-minute dinner you can put together in five minutes.

And there's something else I particularly love about this kind of dinner: we don't all have to be hungry at the same time. That alone makes it worth adding to our regular rotation.

You prepare a couple of things ahead of time, the hummus and the tapenade, and when evening comes, everyone can assemble their own toast. Nothing to reheat, no waiting around and no need to coordinate everyone's schedules. Everything just feels so much easier, which is exactly what we want from an evening after a busy day.

Do you also find yourself reaching the end of the day with absolutely no idea what to make for dinner? Because if these kinds of ideas are helpful, I have a feeling we could keep adding quite a few more easy dinners to our repertoire.

Hummus toast with mushroom tapenade and poached egg

Ingredients

For the mushroom tapenade

  • 2 handfuls of mushrooms
  • 5 garlic cloves, chopped
  • 1 tablespoon olive oil, for sautéing
  • 10–15 black olives, preferably Kalamata, pitted and chopped
  • 7 sun-dried tomatoes, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup or honey
  • ¼ teaspoon salt
  • 4 tablespoons extra virgin olive oil, for storing

For the basic hummus

  • 400 g cooked chickpeas
  • 3 tablespoons tahini
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • ¼ cup water
  • A pinch of cumin
  • A pinch of salt
  • Freshly ground black pepper
  • A few sun-dried tomatoes, optional

To serve

  • Slices of good-quality bread, preferably sourdough
  • 1 egg per slice of toast
  • A few sprigs of fresh thyme

Method

To make the mushroom tapenade

  1. Heat one tablespoon of olive oil in a frying pan and sauté the chopped garlic until it starts to turn golden, taking care not to let it burn.
  2. Meanwhile, chop the mushrooms. Add them to the pan with ¼ teaspoon of salt and sauté over a high heat for a couple of minutes to help them release their excess moisture.
  3. Add the chopped olives, sun-dried tomatoes, balsamic vinegar and maple syrup or honey.
  4. Cook everything together for another 5 minutes or so, stirring occasionally to allow the flavours to come together.
  5. Remove from the heat and leave to cool completely.
  6. Transfer the tapenade to an airtight jar, add the 4 tablespoons of extra virgin olive oil and mix well.

To make the hummus

  1. Place the cooked chickpeas, tahini, lemon juice, olive oil, water, cumin, salt and pepper in a food processor or blender.
  2. Blend until smooth and creamy. If needed, add a little more water until you reach your preferred consistency.
  3. If you'd like to give it a slightly different flavour, you can also add a few sun-dried tomatoes and blend again.

To assemble the toasts

  1. Lightly toast the slices of bread.
  2. Meanwhile, prepare the poached eggs. Heat some water in a saucepan until it's very hot but not boiling vigorously. Crack an egg into a small bowl, create a gentle whirlpool in the water and carefully slide the egg into the centre. Cook for around 3 minutes, until the white is set but the yolk is still runny. Remove with a slotted spoon.
  3. Spread a generous layer of hummus over each slice of toast.
  4. Spoon some of the mushroom tapenade over the hummus.
  5. Finish with the poached egg and a few sprigs of fresh thyme.

And enjoy!!
