Receta de helado sin azúcar con solo 3 ingredientes y un truco 🍧🍧🍧


Septiembre ha llegado y vuelven los horarios, las agendas empiezan a llenarse, los días se van haciendo un poquito más cortos día tras día y esas tardes eternas de piscina o playa empiezan a quedarse atrás.

No sé tú, pero yo todavía no estoy preparada para soltar el verano del todo y, mientras siga haciendo calor, pienso seguir preparando helado.

Quizá la vuelta a la rutina hace que todo te dé pereza y lo último en lo que estás pensando es entrar en la cocina más de lo estrictamente necesario. Pues espera y ¡toma nota porque esta receta es para ti! Una receta fácil donde las haya y con solo 3 ingredientes: plátanos maduros, frambuesas congeladas y un poco de leche o nata. Nada más.

Las cantidades tampoco tienen que ser exactas. Como tantas recetas que preparo en casa, esta la hice completamente a ojo.

Yo usé una heladera de las baratas, una de esas que cumplen perfectamente su función sin necesidad de hacer una gran inversión. Pero si no tienes una en casa, sigue leyendo porque ¡te comparto un trucazo!

Pasa la mezcla a una bolsa de congelación con cierre zip y métela en el congelador. A las dos horas, sácala y machácala bien con un mortero. Vuelve a congelar y repite el proceso un par de veces más. De esta forma estarás rompiendo los cristales de hielo que se van formando y conseguirás una textura mucho más cremosa, bastante parecida a la que obtendrías utilizando una heladera.

Y ya está. Así de fácil tienes un helado casero de plátano y frambuesa preparado con tres ingredientes y sin necesidad de complicarte absolutamente nada.

Porque sí, septiembre está aquí. Volveremos a madrugar, recuperaremos horarios y, poco a poco, iremos guardando bañadores, sombrillas y capazos. Pero nadie ha dicho que tengamos que hacerlo todo el mismo día, ¿no?

Helado de plátano y frambuesa con solo 3 ingredientes

Ingredientes

  • Plátanos muy maduros, pelados, troceados y congelados durante al menos 4 horas
  • Frambuesas congeladas
  • Leche vegetal, leche de vaca o nata, la que más te guste (si es nata, mejor)

Las cantidades las hice a ojo, pero calculad que usé unos 4 plátanos muy pequeños, un puñado de frambuesas y unos 120 ml de leche.


Elaboración

  1. Tritura todos los ingredientes en la batidora hasta conseguir una mezcla cremosa.
  2. Si la mezcla sigue bien fría y congelada, puedes tomar el helado al momento.
  3. Si quieres conservarlo, pásalo a una bolsa de congelación con cierre zip y mételo en el congelador.
  4. Al cabo de 2 horas, sácalo y machácalo bien con un mortero para romper los cristales de hielo que se hayan formado.
  5. Vuelve a congelar y repite el proceso unas 2 veces más para conseguir una textura mucho más cremosa.

September is here, schedules are back, diaries are starting to fill up, the days are getting just a little shorter and those endless afternoons by the pool or at the beach are slowly being left behind.

I don’t know about you, but I’m definitely not ready to let go of summer just yet and, as long as the weather stays warm, I fully intend to keep making ice cream.

Maybe getting back into a routine makes everything feel like a bit more of an effort, and the last thing on your mind is spending any longer in the kitchen than absolutely necessary. Well, keep reading and take note, because this recipe is for you! It couldn’t be easier and you only need 3 ingredients: ripe bananas, frozen raspberries and a little milk or cream. That’s it.

The quantities don’t need to be exact either. Like so many of the recipes I make at home, I made this one completely by eye.

I used a very inexpensive ice cream maker, one of those simple machines that does the job perfectly well without requiring a big investment. But if you don’t have one at home, keep reading because I’ve got a brilliant little trick for you.

Transfer the mixture to a zip-lock freezer bag and put it in the freezer. After two hours, take it out and give it a really good bash with a pestle. Freeze it again and repeat the process a couple more times. By doing this, you break up the ice crystals as they form and end up with a much creamier texture, surprisingly similar to what you’d get from using an ice cream maker.

And that’s it. That’s how easy it is to make homemade banana and raspberry ice cream with just three ingredients and absolutely no unnecessary fuss.

Because yes, September is here. We’ll start getting up early again, our usual schedules will return and, little by little, the swimsuits, beach umbrellas and baskets will be packed away. But nobody said we had to do everything on the same day, right?

3-ingredient banana and raspberry ice cream

Ingredients

  • Very ripe bananas, peeled, chopped and frozen for at least 4 hours
  • Frozen raspberries
  • Plant-based milk, dairy milk or cream, whichever you prefer (cream will give you an even creamier result)

I made the quantities by eye, but as a rough guide I used around 4 very small bananas, a handful of raspberries and approximately 120 ml milk.


Method

  1. Blend all the ingredients together until smooth and creamy.
  2. If the mixture is still very cold and frozen, you can enjoy the ice cream straight away.
  3. If you want to keep it for later, transfer it to a zip-lock freezer bag and place it in the freezer.
  4. After 2 hours, take it out and give it a good bash with a pestle to break up any ice crystals that have formed.
  5. Return it to the freezer and repeat the process about 2 more times to achieve a much creamier texture.

TARTA MOUSSE DE CHOCOLATE Y BONIATO SIN AZÚCAR AÑADIDO


Hubo un tiempo en el que el boniato asado era el postre de muchas casas en otoño e invierno.
Se envolvía en papel, se metía al horno y, cuando salía, bastaba abrirlo y dejar que el vapor dulce lo llenara todo. Sin azúcar añadido, sin artificios. Solo buen producto y el tiempo justo de horneado.

Me gusta pensar que esta receta nace de ahí.
De ese boniato humilde y de temporada que siempre ha estado presente… pero que hoy se pone su mejor traje y aparece con chocolate.

Porque sí, el boniato también puede convertirse en un postre espectacular.

Y no, no sabe “a verdura”.
Sabe a cacao profundo, a dulzor natural, a textura húmeda y densa. A esos bocados que te hacen cerrar los ojos un segundo antes de seguir hablando.

Lo mejor es que nadie adivina qué lleva hasta que lo cuentas.
Y cuando lo cuentas… hay caras de sorpresa.
Y cuando lo prueban… hay silencios.
Y después viene, inevitablemente, la gran pregunta: “¿me pasas la receta?”

El boniato aporta una jugosidad increíble y ese fondo ligeramente caramelizado que combina a la perfección con el cacao crudo y el chocolate 70%. Los dátiles hacen su magia endulzando sin empalagar. La almendra y el trigo sarraceno le dan estructura y ese punto rústico que me encanta.

Es uno de esos postres que puedes preparar cuando tienes antojo de chocolate, cuando quieres algo dulce pero no quieres caer en lo de siempre, o cuando simplemente te apetece encender el horno y dejar que el aroma haga su trabajo.

Y ahora sí, vamos con la receta aunque te adelanto algo: es de esos postres que mejoran con el reposo… aunque rara vez llegan a durar hasta el día siguiente.

Tarta mousse de chocolate y boniato (sin azúcar añadido)

Ingredientes

  • 1 boniato grande (unos 300 g), pelado y cortado en dados de unos 4 cm
  • 20 dátiles Medjool (unos 300 g), deshuesados y picados
  • 2 cucharaditas de extracto de vainilla
  • 120 g de harina de almendra
  • 75 g de harina de trigo sarraceno
  • 75 g de cacao crudo en polvo
  • 1 cucharadita de levadura en polvo
  • 3 huevos
  • 50 g de chocolate 70% rallado finamente

Preparación

  1. Precalienta el horno a 160 ºC.
  2. Coloca el boniato en una olla con agua hirviendo y cuece durante unos 20 minutos, hasta que esté tierno. Escurre, reserva parte del agua de cocción y deja que el boniato se enfríe ligeramente.
  3. Cubre los dátiles con un poco del agua caliente de la cocción y déjalos en remojo unos 10 minutos para que se ablanden. Escurre.
  4. En una batidora o procesador coloca el boniato cocido, los dátiles, la vainilla, la harina de almendra, la harina de trigo sarraceno, el cacao, la levadura y los huevos. Tritura durante 1–2 minutos hasta obtener una mezcla suave y homogénea.
  5. Vierte la masa en un molde redondo de unos 20 cm, previamente engrasado y forrado con papel de hornear. Alisa la superficie.
  6. Hornea durante unos 40 minutos. Retira del horno y deja enfriar en el molde. Después, refrigera al menos una hora para que termine de asentarse.

Antes de servir, espolvorea el chocolate rallado por encima y, si te apetece, un poco más de cacao.

¡No sabéis lo rica que está! Y además, sanisima ;)

There was a time when roasted sweet potato was the dessert in many homes during autumn and winter.
Wrapped in paper, tucked into the oven, and once it came out, all you had to do was open it and let that sweet steam fill the kitchen. No added sugar, no fuss. Just good produce and the right amount of baking time.

I like to think this recipe is born from that.
From that humble, seasonal sweet potato that has always been there… but that today puts on its best suit and shows up with chocolate.

Because yes — sweet potato can also become a spectacular dessert.

And no, it doesn’t taste “like vegetables”.
It tastes like deep cocoa, natural sweetness, a moist and dense texture. The kind of bites that make you close your eyes for a second before you keep talking.

The best part is that nobody guesses what’s in it until you tell them.
And when you tell them… there are surprised faces.
And when they taste it… there are silences.
And then comes, inevitably, the big question: “Can you share the recipe?”

The sweet potato brings incredible moisture and that slightly caramelised depth that pairs perfectly with raw cocoa and 70% dark chocolate. The dates do their magic, sweetening without being cloying. Almond flour and buckwheat flour give it structure and that rustic touch I love.

It’s one of those desserts you can make when you’re craving chocolate, when you want something sweet but you don’t want to fall back on the usual, or when you simply feel like turning on the oven and letting the aroma do its job.

And now, let’s get to the recipe — although I’ll tell you this: it’s one of those desserts that gets better after resting… even though it rarely makes it to the next day.

Chocolate & sweet potato mousse cake (no added sugar)

Ingredients

  • 1 large sweet potato (about 300 g), peeled and cut into 4 cm cubes
  • 20 Medjool dates (about 300 g), pitted and chopped
  • 2 tsp vanilla extract
  • 120 g almond flour
  • 75 g buckwheat flour
  • 75 g raw cocoa powder
  • 1 tsp baking powder
  • 3 eggs
  • 50 g 70% dark chocolate, finely grated

Method

  1. Preheat the oven to 160 ºC.
  2. Place the sweet potato in a pot of boiling water and cook for about 20 minutes, until tender. Drain, reserve some of the cooking water, and let the sweet potato cool slightly.
  3. Cover the dates with a little of the hot cooking water and soak for about 10 minutes to soften. Drain.
  4. In a blender or food processor, add the cooked sweet potato, dates, vanilla, almond flour, buckwheat flour, cocoa, baking powder and eggs. Blend for 1–2 minutes until smooth and fully combined.
  5. Pour the batter into a round 20 cm pan, greased and lined with baking paper. Smooth the top.
  6. Bake for about 40 minutes. Remove from the oven and let it cool in the pan. Then refrigerate for at least 1 hour to finish setting.

Before serving, sprinkle the grated chocolate on top and, if you feel like it, a little more cocoa.

You have no idea how delicious it is! And it’s also super healthy ;)

Fresas con fresas y albahaca, un postre muy fácil de preparar


Hace unos años, una famosa cadena de supermercados vendía un libro con recetas y trucos de Ferrán Adrià. Creo que es el libro de cocina que más he amortizado de la historia. Una de las recetas es ésta que os he preparado hoy y es un postre sencillísimo de preparar que te hará quedar como un auténtico chef de restaurante de estrella Michelin.

Cuando digo fácil, es que está chupado! en serio, os recomiendo que probéis esta receta, sepáis o no cocinar.

Éste es el postre perfecto para cuando hay invitados en casa. Lo puedes preparar con antelación o al momento. La albahaca le da un toque al sabor buenísimo!
