Gazpacho de remolacha y cerezas



Ahora, en verano, apetece más que nunca comer fuera. Estamos de vacaciones, el calor hace que la pereza aumente, las ganas de cocinar disminuyan y, además, aparece esa necesidad de salir de la rutina y probar cosas nuevas.

Pero si esto te pilla en tu lugar de vacaciones, lo más probable es que, si no has reservado con tiempo, conseguir mesa en alguno de los mejores restaurantes sea misión imposible. Y ya no hablemos de encontrar aparcamiento.

Así que, si te apetece preparar un plato bonito y sentir, durante un rato, que estás comiendo en uno de esos restaurantes de moda, pero sin reservar mesa con días de antelación ni pasar media tarde en la cocina, sigue leyendo porque esta receta la he creado pensando en ti.

Solo necesitas buenos tomates, unas cerezas maduras y dos remolachas.

Sé lo que estás pensando.

—¿Cerezas en un gazpacho?

Pues sí.

Y, por favor, no lo juzgues hasta que lo pruebes, porque esta es una de esas combinaciones que, sobre el papel, pueden parecer arriesgadas y, sin embargo, en el plato tienen todo el sentido.

Las cerezas aportan un dulzor sutil que equilibra la acidez del tomate. La remolacha le da profundidad y ese color intenso y maravilloso que hace que parezca un plato mucho más elaborado y sofisticado de lo que realmente es.

Porque, entre nosotras, aquí el mayor esfuerzo consiste en deshuesar las cerezas.

Después solo tienes que triturarlo todo y añadir el aceite poco a poco para conseguir una textura suave y bien emulsionada.

El resultado es fresco, ligeramente afrutado y diferente al gazpacho de siempre. Una de esas recetas que te permiten salir de la rutina sin complicarte y aprovechar ingredientes de temporada cuando están en su mejor momento.

Después, sírvelo bien frío con queso feta desmenuzado, unas semillas de calabaza y un buen chorro de aceite de oliva virgen extra.

El contraste entre el dulzor de las cerezas, el punto salado del feta y el crujiente de las semillas convierte una receta sencilla en un plato que perfectamente podrían servirte en un restaurante.

Gazpacho de remolacha y cerezas

Ingredientes

  • 800 g de tomates pera muy maduros
  • 2 remolachas cocidas
  • 400 g de cerezas maduras deshuesadas
  • 70 ml de aceite de oliva virgen extra
  • Un chorrito de vinagre de manzana
  • Sal y pimienta
  • Queso feta desmenuzado, para servir
  • Semillas de calabaza, para servir
  • Aceite de oliva virgen extra, para terminar


Elaboración

  1. Pon en el vaso de la batidora los tomates, las remolachas, las cerezas deshuesadas, el vinagre de manzana, la sal y la pimienta.
  2. Tritura hasta obtener una mezcla completamente homogénea.
  3. Sin dejar de triturar, añade el aceite de oliva virgen extra poco a poco para que el gazpacho emulsione bien y adquiera una textura suave y cremosa.
  4. Prueba y ajusta la cantidad de sal, pimienta o vinagre si fuera necesario.
  5. Guarda el gazpacho en la nevera hasta que esté bien frío.
  6. Sírvelo con queso feta desmenuzado, semillas de calabaza y un chorrito de aceite de oliva virgen extra.

So, if you fancy making a beautiful dish and pretending, just for a little while, that you’re eating at one of those fashionable restaurants—but without booking a table days ahead or spending half the afternoon in the kitchen—keep reading, because this recipe was made for you.

All you need are some good tomatoes, a handful of ripe cherries and two beetroots.

I know what you’re thinking.

—Cherries in gazpacho?

Yes, really.

And please don’t judge it until you’ve tried it, because this is one of those combinations that might sound slightly risky on paper but makes complete sense once it reaches the plate.

The cherries add a subtle sweetness that balances the acidity of the tomatoes. The beetroot gives it depth and that gorgeous, intense colour that makes the whole dish look far more elaborate and sophisticated than it actually is.

Because, between us, the hardest part of this recipe is removing the stones from the cherries.

After that, all you need to do is blend everything together and gradually add the olive oil to create a smooth, beautifully emulsified texture.

The result is fresh, gently fruity and a little different from the gazpacho we all know. It’s one of those recipes that lets you shake things up without making life complicated, while also making the most of seasonal ingredients when they’re at their best.

Beetroot and cherry gazpacho

Ingredients

  • 800 g very ripe plum tomatoes
  • 2 cooked beetroots
  • 400 g ripe cherries, pitted
  • 70 ml extra virgin olive oil
  • A splash of apple cider vinegar
  • Salt and black pepper
  • Crumbled feta, to serve
  • Pumpkin seeds, to serve
  • Extra virgin olive oil, to finish


Method

  1. Place the tomatoes, beetroots, pitted cherries, apple cider vinegar, salt and black pepper in a blender.
  2. Blend until completely smooth.
  3. With the blender still running, gradually pour in the extra virgin olive oil so that the gazpacho emulsifies properly and develops a smooth, creamy texture.
  4. Taste and adjust the salt, pepper or vinegar if needed.
  5. Chill the gazpacho in the fridge until very cold.
  6. Serve with crumbled feta, pumpkin seeds and a drizzle of extra virgin olive oil.

Receta de gofres para los domingos: crujientes por fuera, esponjosos por dentro y con ingredientes buenos




En casa tenemos algunos desayunos especiales que reservamos solo para los fines de semana o los festivos. Sencillamente porque no saben igual cuando los comes con prisas, mientras miras el reloj o pensando en todo lo que tienes que hacer después. Hay desayunos que merecen que estemos sentados a la mesa para saborearlos despacio y disfrutarlos en compañía.

Y estos gofres son una de ellas.

Pero no unos gofres cualquiera, que ya me conoces.

Esta receta nace de una de esas cosas que casi se ha convertido en un ritual en mi cocina y que es darle vueltas una y otra vez a una receta hasta encontrar una versión que no solo esté hecha con ingredientes reales y sencillos, sino que ¡sea también un diez en sabor!

Con avena, trigo sarraceno, almendra, plátano maduro y el dulzor justo para que sigan sabiendo a desayuno especial sin convertirse en un festival de azúcar.

Lo mejor es la textura.

Crujientes por fuera, esponjosos por dentro y con ese aroma a vainilla y canela que hace que la cocina huela a domingo incluso antes de que te hayas servido el café.

Puedes servirlos con nutella vegana casera (tienes la receta AQUÍ), yogur, mantequilla de frutos secos, fruta fresca o los toppings que más te gusten. O con la combinación de todo lo anterior.

Algunos domingos nuestra mesa termina pareciéndose más a un pequeño buffet de toppings que a un desayuno normal, y cada uno acaba montando sus gofres favoritos. Y, siendo sincera, creo que esa es una de las mejores partes.

Gofres saludables de avena y trigo sarraceno

Ingredientes

  • 100g de copos de avena
  • 120g de harina de trigo sarraceno
  • 50g de harina de almendras o trigo integral
  • 325ml de bebida de avena
  • 1½ cucharaditas de levadura química
  • ½ cucharadita de canela
  • ½ cucharadita de extracto de vainilla
  • 30g de aceite de coco derretido
  • 1 plátano maduro
  • Una pizca de sal marina


Elaboración

  1. Tritura en la batidora todos los ingredientes excepto las harinas y los copos de avena.
  2. Añade las harinas y mezcla lo justo hasta integrar.
  3. Incorpora los copos de avena enteros (sin triturar) y deja reposar 10 minutos para que se hidraten.
  4. Calienta bien la gofrera por ambos lados.
  5. Vierte la masa rellenando bien los espacios y cocina a fuego medio durante 2-3 minutos.

At home, we have a few special breakfasts that we save only for weekends or holidays. Simply because they don’t taste the same when you eat them in a rush, while watching the clock or thinking about everything you have to do afterwards. Some breakfasts deserve for us to sit down at the table, savour them slowly and enjoy them together.

And these waffles are one of them.

But not just any waffles, you know me by now.

This recipe was born from one of those things that has almost become a ritual in my kitchen: going over a recipe again and again until I find a version that is not only made with real, simple ingredients, but also a ten out of ten in flavour!

With oats, buckwheat, almond, ripe banana and just the right amount of sweetness so they still taste like a special breakfast without becoming a sugar festival.

The best part is the texture.

Crispy on the outside, fluffy on the inside, with that vanilla and cinnamon aroma that makes the kitchen smell like Sunday even before you’ve poured your coffee.

You can serve them with homemade vegan Nutella (you can find the recipe HERE), yogurt, nut butter, fresh fruit or whichever toppings you like best. Or with a combination of all of the above.

Some Sundays, our table ends up looking more like a little toppings buffet than a normal breakfast, and everyone ends up building their favourite waffles. And honestly, I think that’s one of the best parts.

Healthy oat and buckwheat waffles

Ingredients

  • 100g rolled oats
  • 120g buckwheat flour
  • 50g almond flour or whole wheat flour
  • 325ml oat milk
  • 1½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 30g melted coconut oil
  • 1 ripe banana
  • A pinch of sea salt


Method

  1. Blend all the ingredients except the flours and rolled oats until smooth.
  2. Add the flours and mix just until incorporated.
  3. Fold in the whole rolled oats (do not blend them) and let the batter rest for 10 minutes so the oats can hydrate.
  4. Preheat the waffle iron thoroughly on both sides.
  5. Pour in the batter, making sure it fills the mould properly, and cook over medium heat for 2–3 minutes.

Curry suave con hojas de mostaza


¿Sabes esos días en los que la cabeza ya no da para más… pero tú te mueres de hambre?

Precisamente eso fue lo que me ocurrió.

Estaba agotada y tenía ganas de preparar algo rápido, lleno de sabor y con ingredientes de los que hacen sentir bien. Pero tenía tal niebla mental que no se me ocurría absolutamente nada.

Y, casi jugando, le pedí a ChatGPT una receta vegana con algunos de los ingredientes que tenía en la despensa.

Me dio una base bastante buena… aunque, claro, luego llegó mi parte favorita: meterme en la cocina y darle mi estilo. Porque una receta nunca se queda exactamente igual cuando pasa por mi cocina. Mi toque de especias y antiinflamatorios nunca falta.

Aquí es donde aparece la cúrcuma, un poco más de especias, pimienta recién molida para potenciar ese efecto antiinflamatorio y kale, porque últimamente me apetece añadírselo a todo.

Y el resultado fue una de esas recetas sencillas que parecen haber estado al fuego mucho más tiempo del que realmente necesitan.

Cremosa gracias a la leche de coco, especiada sin resultar pesada, con el punto fresco del limón al final y esos garbanzos que aportan proteína y convierten un plato aparentemente simple en algo realmente saciante.

Es de esas comidas que sientan bien de verdad. De las que terminas de comer y no necesitas tumbarte en el sofá a recuperarte. Y eso, para mí, cada vez tiene más importancia.

También me hizo pensar en algo curioso: muchas veces vemos la inteligencia artificial como algo lejano o reservado únicamente para el trabajo… y resulta que también puede ayudarte a resolver la clásica pregunta de las siete de la tarde “¿Y ahora qué cocino yo?”.

Aunque el toque final sigue siendo cosa nuestra 😉

Curry cremoso de garbanzos, kale y hojas de mostaza

Ingredientes (para 2 personas)

  • 1 cucharada de aceite de coco (o de oliva)
  • 1/2 cebolla picada
  • 1 diente de ajo picado
  • 1 cucharadita de jengibre fresco rallado
  • 1 cucharada de curry en polvo (o 1 cucharadita de pasta de curry)
  • 1 cucharada de cúrcuma + pimienta recién molida para potenciar el efecto antiinflamatorio
  • 200 ml de leche de coco
  • 1 taza de garbanzos cocidos (pueden ser de bote)
  • 1 manojo de hojas de mostaza (unas 8-10 hojas grandes), lavadas y troceadas
  • Un puñado de hojas kale
  • Sal y pimienta al gusto
  • Limón o lima para servir
  • Arroz, quinoa o mijo para acompañar


Preparación

  1. En una sartén, sofríe la cebolla con el aceite a fuego medio. Añade el ajo y el jengibre.
  2. Incorpora el curry y remueve durante 1 minuto. Añade también la cúrcuma y la pimienta si haces mi versión.
  3. Agrega las hojas de mostaza troceadas y el kale, y deja que se ablanden ligeramente.

TIP: Si no tienes hojas de mostaza, puedes usar espinacas o más kale.

You know those days when your brain simply can’t take any more… but you’re absolutely starving?

That’s exactly what happened to me.

I was exhausted and craving something quick, full of flavour and made with ingredients that genuinely make you feel good. But I had such a mental fog that I couldn’t think of a single idea.

So, almost playfully, I asked ChatGPT for a vegan recipe using some of the ingredients I already had in my pantry.

It gave me quite a good base… although, of course, then came my favourite part: stepping into the kitchen and giving it my own style. Because a recipe never stays exactly the same once it passes through my kitchen. My touch of spices and anti-inflammatory ingredients is always there.

That’s where turmeric comes in, along with a few more spices, freshly ground black pepper to enhance that anti-inflammatory effect, and kale — because lately I feel like adding it to absolutely everything.

And the result was one of those simple recipes that tastes as though it’s been simmering for far longer than it actually needs.

Creamy thanks to the coconut milk, spiced without feeling heavy, with a fresh touch of lemon at the end and those chickpeas that add protein and turn an apparently simple dish into something genuinely satisfying.

It’s the kind of meal that truly makes you feel good. The kind where you finish eating and don’t immediately need to collapse onto the sofa to recover. And honestly, that matters more and more to me these days.

It also made me think about something quite curious: we often see artificial intelligence as something distant or reserved only for work… and yet it can also help solve that classic seven o’clock question: “What on earth am I cooking tonight?”.

Although the final touch is still entirely ours 😉

Creamy chickpea, kale and mustard greens curry

Ingredients (serves 2)

  • 1 tablespoon coconut oil (or olive oil)
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon curry powder (or 1 teaspoon curry paste)
  • 1 tablespoon turmeric + freshly ground black pepper to enhance the anti-inflammatory effect
  • 200 ml coconut milk
  • 1 cup cooked chickpeas (canned are perfectly fine)
  • 1 bunch mustard greens (about 8–10 large leaves), washed and chopped
  • A handful of kale leaves
  • Salt and pepper to taste
  • Lemon or lime wedges to serve
  • Rice, quinoa or millet to serve alongside


Method

  1. In a frying pan, sauté the onion with the oil over medium heat. Add the garlic and ginger.
  2. Add the curry and stir for 1 minute. Add the turmeric and black pepper as well if you’re making my version.
  3. Add the chopped mustard greens and kale, and let them soften slightly.
  4. Pour in the coconut milk and add the chickpeas. Cook everything together for about 10 minutes.
  5. Adjust seasoning with salt and pepper. Serve with a squeeze of lemon and your favourite grain.

TIP: If you don’t have mustard greens, you can use spinach or extra kale instead.

Mermelada casera de frambuesa y chía



Me gustan los fines de semana que empiezan sin despertador… y con hambre.

Porque uno de mis rituales favoritos es sentarme a la mesa, con un buen desayuno por delante y tiempo para disfrutarlo en calma. Y, a ser posible, en la terraza.

Hay días en los que me levanto con ganas de cocinar y preparar algo más elaborado.
Pero otros días… amo lo sencillo.

Y en esos días en los que hay hambre pero cero ganas de complicarse, apuesto por un clásico que nunca falla: un buen pan de masa madre, mantequilla de verdad… y una mermelada casera. Sabrosa, pero también saludable y nutritiva.

Porque sí, podrías comprarla.
Pero hacerla en casa tiene algo distinto...

Llámalo sabor.
Llámalo el aroma que invade la cocina mientras la preparas o esa sensación de saber que, en unos minutos, tendrás algo mucho más rico que cualquier tarro de supermercado.

Esta mermelada de frambuesas con chía es todo eso. Rápida, sencilla, sin complicaciones… y con un pequeño toque que la hace especial: el jengibre fresco y las semillas de chía.

El jengibre aporta ese punto ligeramente picante que despierta el sabor de la fruta.
La chía, además de espesar de forma natural, le da textura y la convierte en algo más nutritivo.

Y lo que parecía una mermelada más… deja de serlo.

Un pan de masa madre tostado y crujiente, una mantequilla que se funde ligeramente con el calor y una buena mermelada casera… a veces, no hace falta mucho más para empezar bien el día ¿no te parece?

Mermelada casera de frambuesa y chía

Ingredientes

  • Un buen puñado de frambuesas (o frutos rojos)
  • 1 cucharada de agua
  • 1 cucharadita de sirope de arce
  • ½ cucharadita de extracto de vainilla
  • 1 dado de 1x1cm de jengibre de raíz
  • 3-4 cucharadas de semillas chia


Preparación

  1. Calentamos en una sartén el sirope de arce, la vainilla, el agua, las frambuesas y el jengibre rallado.
  2. Cuando empiece a hervir bajamos el fuego y dejamos cocer unos 3 minutos más.
  3. Añadimos las semillas, removemos y guardamos en unos tarros herméticos! ❤️🍒🥤

Call it the aroma that fills the kitchen while you’re making it, or that feeling of knowing that, in just a few minutes, you’ll have something far richer than any supermarket jar.

This raspberry chia jam is all of that. Quick, simple, uncomplicated… and with a little touch that makes it special: fresh ginger and chia seeds.

The ginger adds that slightly spicy note that wakes up the flavour of the fruit.
The chia, besides thickening it naturally, gives it texture and turns it into something more nourishing.

And what seemed like just another jam… stops being one.

Crisp toasted sourdough bread, butter melting slightly with the warmth, and a good homemade jam… sometimes, you really don’t need much more to start the day well, don’t you think?

Homemade raspberry chia jam

Ingredients

  • A good handful of raspberries (or mixed berries)
  • 1 tablespoon water
  • 1 tbsp maple syrup
  • ½ teaspoon vanilla extract
  • 1 piece of fresh ginger root, about 1x1 cm
  • 3-4 tablespoons chia seeds


Method

  1. Heat the maple syrup, vanilla, water, raspberries and grated ginger in a pan.
  2. When it starts to boil, lower the heat and let it cook for about 3 more minutes.
  3. Add the seeds, stir and store in airtight jars! ❤️🍒🥤
