Bizcocho de cardamomo y semillas de amapola



Preparar recetas dulces siempre me lleva de vuelta a mis inicios. Y también me recuerda lo mucho que he evolucionado y todo lo que ha cambiado en estos años.

Estar en la cocina sigue siendo mi refugio. Ese lugar donde bajo el ruido, desconecto y vuelvo a mí.
Eso no ha cambiado.

Lo que sí ha cambiado es mi forma de cocinar. Ahora es más consciente, más nutritiva, más enfocada en que lo que preparo no solo esté rico, sino que también siente bien.

Y, sin embargo, hay algo que permanece intacto: mis ganas de experimentar. De probar combinaciones nuevas, de introducir ingredientes que no forman parte de lo habitual y ver qué pasa.

Este bizcocho, aunque sencillo, recoge todo eso.

Mi amor por la repostería.
Mi forma actual de entender la cocina.
Y esa inquietud constante por salir un poco de lo de siempre.

Porque aquí no manda ni la vainilla, ni el chocolate, ni el limón.
Aquí aparece el cardamomo.

Con ese perfume tan especial, ligeramente cítrico, cálido, envolvente… y, de pronto, la cocina huele distinto.

La primera vez que lo preparé no sabía muy bien qué esperar. El cardamomo no es una especia que usemos a diario y quizá por eso tiene algo especial: transforma una receta sencilla en algo inesperado.

Y luego están las semillas de amapola.
Pequeñas, casi invisibles… pero con ese toque crujiente que hace que cada bocado tenga algo más.

El resultado es un bizcocho jugoso, aromático, diferente.
De esos que encajan igual de bien con un café caliente, una tarde tranquila sin prisa o un desayuno en familia un día cualquiera.

Bizcocho de cardamomo y semillas de amapola

Ingredientes

  • 200g de mantequilla ecológica
  • 1 y 2/3 tazas de azúcar panela
  • 3 huevos eco
  • 300 ml leche entera ecológica
  • 1 cucharada de cardamomo y otra de semillas de amapola
  • 2 tazas y 1/2 de harina integral de trigo
  • 1 cucharadita de sal y un sobre y medio de levadura química (3 y 1/2 cucharaditas)


Preparación

  1. Fundimos la mantequilla y batimos junto con el azúcar, los huevos y la leche, añadimos los ingredientes secos previamente mezclados (sin las semillas de amapola) y mezclamos con unas varillas manuales o batidora (poco rato).
  2. Añadimos las semillas de amapola y horneamos en el horno precalentado a 180º en dos moldes rectangulares engrasados durante 30-40 minutos.

Making sweet recipes always takes me back to my beginnings. It also reminds me how much I’ve evolved and how much has changed over the years.

Being in the kitchen is still my refuge. That place where I turn down the noise, disconnect, and come back to myself.
That hasn’t changed.

What has changed is the way I cook. Now it’s more conscious, more nourishing, more focused on making sure what I prepare doesn’t just taste good, but also feels good.

And yet, there’s something that remains untouched: my desire to experiment. To try new combinations, to introduce ingredients that aren’t part of the usual routine and see what happens.

This cake, although simple, holds all of that.

My love for baking.
My current way of understanding cooking.
And that constant urge to step a little outside the usual.

Because here, it’s not vanilla, chocolate, or lemon taking the lead.
Here, cardamom steps in.

With that very special fragrance, slightly citrusy, warm, enveloping… and suddenly, the kitchen smells different.

The first time I made it, I didn’t really know what to expect. Cardamom isn’t a spice we use every day, and maybe that’s why it has something special: it transforms a simple recipe into something unexpected.

And then there are the poppy seeds.
Tiny, almost invisible… but with that crunchy touch that gives each bite something extra.

The result is a moist, fragrant, different kind of cake.
The kind that works just as well with a hot coffee, a slow peaceful afternoon, or a family breakfast on an ordinary day.

Cardamom and poppy seed cake

Ingredients

  • 200g organic butter
  • 1 and 2/3 cups panela sugar
  • 3 organic eggs
  • 300 ml organic whole milk
  • 1 tablespoon cardamom and another tablespoon of poppy seeds
  • 2 and 1/2 cups whole wheat flour
  • 1 teaspoon salt and one and a half sachets baking powder (3 and 1/2 teaspoons)


Method

  1. Melt the butter and whisk it together with the sugar, eggs and milk. Add the previously mixed dry ingredients (without the poppy seeds) and mix with a hand whisk or mixer (briefly).
  2. Add the poppy seeds and bake in a preheated oven at 180ºC in two greased rectangular tins for 30–40 minutes.

Receta bundt cake de manzana y cardamomo



Aunque me encanta crear y cocinar recetas saludables, cuando elaboro algún plato dulce ¡siento que vuelvo a mis raíces!. Hoy quiero compartir contigo una de mis recetas dulces favoritas, a la vez que sano, para que puedas hornear un rico bundt de manzana y cardamomo, de esos que reconfortan y despiertan tus sentidos, gracias a las especias. Y es una receta para disfrutar en cualquier época del año.

Además, esta receta de repostería es ideal para involucrar a los más pequeños de la casa y disfrutar de un rato divertido juntos. Al menos para mí, cocinar con niños es una experiencia mágica y se lo pasan bomba metiendo las manos en la masa, tocando los ingredientes con sus manos y viendo como, poco a poco, todo el proceso se va transformando en un Bundt Cake delicioso. Aparte de ser divertido, es una excelente y sencilla manera de fomentar su creatividad e incentivarles a crear con sus manos. Y ya te adelanto que, cuando son ellos los que cocinan ¡luego no dejan ni las migas!

Aunque esta receta de bundt cake, con su mezcla de aromas y sabores especiados te puede transportar a los meses más fríos del año ¿sabes qué? ¡Es perfecta para cualquier temporada! Porque no hay nada como disfrutar de un buen trozo de esta delicia junto a la familia o amigos, como hicimos nosotros con ésta, sin importar si afuera hace frío o calor. También puedes servirla acompañada de una bola de helado o prepararla para una merienda tipo picnic, ahora que los días son más largos y las temperaturas más cálidas invitan a pasar tiempo en la naturaleza.

Apple and cardamom bundt cake

After a handful savoury recipes in a row, it's time to go back to my roots and share with you one of my sweet and healthy recipes so that you can bake a delicious apple and cardamom bundt cake, to enjoy at any time of the year.

What's more, this baking recipe is ideal for involving the little ones in the house and enjoying a fun time together. At least for me, baking with children is a magical experience and they have a blast getting their hands in the batter, touching the ingredients, and seeing how, little by little, the whole process transforms into a delicious bundt cake. Apart from being fun, it is an excellent and simple way to encourage their creativity, and to create with their hands. And here a spoiler: when they're the ones baking, no crumbs will be left behind!

Although this bundt cake recipe, with its mix of aromas and spicy flavours, can take you back to the coldest months of the year, you know what? It's perfect for any season! There's nothing like enjoying a good slice of this treat with family or friends, as we did with this one, no matter if it's hot or cold outside. You can also serve it with a scoop of ice cream or bake it for a picnic, now that the days are longer and the spring temperatures invite you to spend time in nature.

Receta de bundt cake de manzana y cardamomo

Ingredientes

  • 1 yogur de coco o griego (120ml)
  • 120g de azúcar moscobado o azúcar de coco
  • 1/2 taza de aceite de oliva
  • 3 huevos
  • 120g de harina de avena
  • 30g de harina de trigo sarraceno
  • 30g de harina de almendra
  • 1y 1/2 chda de levadura química
  • 1/4 de chdta de cardamomo
  • 1/2 chdta de sal
  • 1/4 chdta de bicarbonato
  • 1 manzana laminada
  • Un puñado de pepitas de chocolate 85%

Preparación

1. Precalienta el horno a 180ºC.
2. Mezcla los huevos con el yogur, azúcar y aceite de oliva, bate bien durante unos minutos.
3. En otro bol mezcla los ingredientes secos (harinas, levadura, bicarbonato, sal y cardamomo). Agrega esta mezcla a los húmedos. Mezcla con una espátula sin batir.
4. Unta con mantequilla fría un molde de hundir cake o molde normal y espolvorea con un poco de harina.
5. Vierte la mezcla en el molde y hornea unos 40-50 minutos hasta que el al clavar un cuchillo éste salga casi limpio.
6. Deja reposar en el molde durante 10 minutos, ni más ni menos, para poder desmoldar el bundt a la perfección!
 
ENGLISH RECEIPE

Apple and cardamom bundt cake recipe

Ingredients

  • 1 coconut or Greek yogurt (120ml)
  • 120g muscobado sugar or coconut sugar
  • 1/2 cup olive oil
  • 3 eggs
  • 120g oat flour
  • 30g buckwheat flour
  • 30g almond flour
  • 1 and 1/2 tbsp baking powder
  • 1/4 tsp cardamom
  • 1/2 teaspoon salt
  • 1/4 tsp baking soda
  • 1 sliced apple
  • A handful of 85% chocolate chips

Method

1. Preheat the oven to 180ºC.
2. Mix the eggs with yogurt, sugar, and olive oil. Wisk them all well for a few minutes.
3. In another bowl mix the dry ingredients ( flour, baking powder, baking soda, salt, and cardamom). Add this mixture to the wet ingredients. Mix with a spatula without whisking.
4. Grease a cake mould or regular cake tin with cold butter and sprinkle with a little flour.
5. Pour the mixture into the cake tin and bake for about 40-50 minutes until a knife comes out almost clean.
6. Leave to stand in the mould for 10 minutes, no more and no less, so that the bundt can be unmoulded to perfection!
