- Dejamos reposar unos 10 minutos.
English version
By this point in the week, I think more than a few of us are already dreaming of the weekend and the chance to slow down a little. Because if there's one thing I absolutely love about weekends, it's breakfast.
Everyone gathered around the table, something a little more special than we'd make on an ordinary weekday morning and, most importantly, time to enjoy it together without watching the clock, rushing out of the door for school or thinking about everything that needs to happen afterwards…
Anyone else already dreaming of the weekend?
Even though it's still a few days away, I wanted to share one of our family's latest favourite recipes today, so you'll have plenty of time to get the ingredients and treat yourselves to one of those lovely, long, leisurely breakfasts: healthy oat and banana pancakes.
And yes, I say healthy, but more importantly, they're absolutely delicious. Which, for me, matters quite a lot when you want the whole family to sit down and enjoy the same thing.
They're made with oats, ground almonds, banana, chia seeds and plant-based milk. There are no eggs, and all the sweetness comes from the bananas themselves, so the riper they are, the better. You know those bananas that are starting to turn black on the outside and nobody wants to eat? They're absolutely perfect for this recipe.
The combination of oats and almonds makes these pancakes wonderfully satisfying, with a really lovely texture.
And another thing I love, which I know many of you will appreciate too, is that there's no whisking anything into peaks, no separating ingredients and no special technique to master. You simply mix everything together, leave the batter to rest for a few minutes so the chia seeds and oats can absorb some of the liquid, and then cook the pancakes in a frying pan.
That short resting time is important, as it helps the batter thicken and makes the pancakes much easier to cook.
And so everyone can make them just the way they like, you can put some fruit, yoghurt, nut butter, a little chocolate, maple syrup or simply whatever you have at home on the table, and let everyone add whichever toppings they fancy, in whatever quantities they like.
So here's the recipe for your next slow, leisurely breakfast. And if you'd like to cook along with me and watch the step-by-step video, click HERE.

Oat and banana pancakes
Ingredients
- 90 g wholemeal rolled oats or oat flour (make sure they're certified gluten-free if you want to make a gluten-free breakfast)
- 80 g almond flour or ground almonds
- A pinch of salt
- 2 teaspoons ground cinnamon
- 200 ml oat or almond milk, plus a little extra if needed
- 2 very ripe bananas
- 2 tablespoons chia seeds
- 1 tablespoon coconut oil, for cooking the pancakes
Method (no blender needed)
- Start by grinding the oats and almonds if you don't already have them in flour form.
- Mix the oat flour and ground almonds with the cinnamon, salt and chia seeds.
- Add the plant-based milk, then mash the bananas with a fork and add them to the mixture. Stir everything together.
- Leave the batter to rest for around 10 minutes.
- Lightly grease a frying pan with a little coconut oil. Once it's nice and hot, add a couple of tablespoons of batter and cook for around 2–3 minutes on one side. Flip the pancake and cook for another 2 minutes or so. The exact timing will depend on your pan and the thickness of your pancakes.
- Repeat with the remaining batter, adding a little more coconut oil to the pan whenever necessary.
- Serve the pancakes straight away with your favourite toppings and enjoy a lovely, leisurely breakfast.
