You know those days when your brain simply can’t take any more… but you’re absolutely starving?

That’s exactly what happened to me.

I was exhausted and craving something quick, full of flavour and made with ingredients that genuinely make you feel good. But I had such a mental fog that I couldn’t think of a single idea.

So, almost playfully, I asked ChatGPT for a vegan recipe using some of the ingredients I already had in my pantry.

It gave me quite a good base… although, of course, then came my favourite part: stepping into the kitchen and giving it my own style. Because a recipe never stays exactly the same once it passes through my kitchen. My touch of spices and anti-inflammatory ingredients is always there.

That’s where turmeric comes in, along with a few more spices, freshly ground black pepper to enhance that anti-inflammatory effect, and kale — because lately I feel like adding it to absolutely everything.

And the result was one of those simple recipes that tastes as though it’s been simmering for far longer than it actually needs.

Creamy thanks to the coconut milk, spiced without feeling heavy, with a fresh touch of lemon at the end and those chickpeas that add protein and turn an apparently simple dish into something genuinely satisfying.

It’s the kind of meal that truly makes you feel good. The kind where you finish eating and don’t immediately need to collapse onto the sofa to recover. And honestly, that matters more and more to me these days.

It also made me think about something quite curious: we often see artificial intelligence as something distant or reserved only for work… and yet it can also help solve that classic seven o’clock question: “What on earth am I cooking tonight?”.

Although the final touch is still entirely ours 😉

Tell me, have you ever asked ChatGPT for a recipe? And how did it turn out?

Creamy chickpea, kale and mustard greens curry

Ingredients (serves 2)

  • 1 tablespoon coconut oil (or olive oil)
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon curry powder (or 1 teaspoon curry paste)
  • 1 tablespoon turmeric + freshly ground black pepper to enhance the anti-inflammatory effect
  • 200 ml coconut milk
  • 1 cup cooked chickpeas (canned are perfectly fine)
  • 1 bunch mustard greens (about 8–10 large leaves), washed and chopped
  • A handful of kale leaves
  • Salt and pepper to taste
  • Lemon or lime wedges to serve
  • Rice, quinoa or millet to serve alongside

Method

  1. In a frying pan, sauté the onion with the oil over medium heat. Add the garlic and ginger.
  2. Add the curry and stir for 1 minute. Add the turmeric and black pepper as well if you’re making my version.
  3. Add the chopped mustard greens and kale, and let them soften slightly.
  4. Pour in the coconut milk and add the chickpeas. Cook everything together for about 10 minutes.
  5. Adjust seasoning with salt and pepper. Serve with a squeeze of lemon and your favourite grain.

TIP: If you don’t have mustard greens, you can use spinach or extra kale instead.

Y , a veces, pasa algo curioso.

Ingredientes

  • 3 cucharadas de AOVE
  • 1 cebolla
  • 2 dientes de ajo
  • 1 lata de tomate entero pelado
  • 2 berenjenas
  • 2 paquetes de mozzarella
  • 1 paquete de parmesano en polvo
  • 1 bote de lenteja pardina

Para la bechamel

  • 500 g de leche
  • 40 g de mantequilla
  • 40 g de harina o maicena
  • Sal, pimienta y nuez moscada

Elaboración

There are some phases when I go through little creative crises.
The kind where you open the fridge, look inside… and nothing inspires you. The same happens with photography, when it feels hard to find that spark to style a beautiful still life that, at other times, would come together almost on its own, without even thinking.

And sometimes, something curious happens. You say it out loud… and your brain, as if it had its own pride, decides to react.

For me, cooking in those moments is almost therapeutic.
It’s my way of sorting out my thoughts without even realising it.

And that’s how this recipe came about. At first, it didn’t seem especially creative, just a moussaka that ended up not being the usual one after all.

At first, I had a chicken version in mind, but I felt like trying something different. And that’s where lentils came in.

Because yes, you can make a moussaka without meat.
And not only that: you can make it just as tasty and nutritionally complete.

Lentils bring plant protein, texture, and that satisfying quality that makes you feel like nothing is missing.
The aubergine, soft and lightly golden, creates the base.
The tomato reduces slowly, concentrating all the flavour.
And the béchamel… well, the béchamel is what makes everything make sense.

The result is one of those dishes you start making almost absent-mindedly… and end up bringing to the table with a certain sense of pride.

Does cooking help you organise your thoughts too?
Tell me, I’m reading you 💛

Lentil moussaka

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 tin whole peeled tomatoes
  • 2 aubergines
  • 2 packs mozzarella
  • 1 pack grated Parmesan
  • 1 jar brown lentils

For the béchamel

  • 500 g milk
  • 40 g butter
  • 40 g flour or cornflour
  • Salt, pepper and nutmeg

Method

  1. Start by preparing a sofrito with the olive oil, chopped onion and garlic. Sauté over medium heat for 3–4 minutes and add the tomatoes. Let it reduce over medium heat for about 20–25 minutes (keep an eye on it so it doesn’t stick; you can add a little water if needed). Season with salt and pepper and set aside.
  2. Meanwhile, make the béchamel: prepare a roux by heating the butter with the flour without letting it brown. Gradually add the cold milk, stirring until it thickens. Season with salt and pepper and add a pinch of nutmeg.
  3. Slice the aubergines into 5 mm slices and cook them in a frying pan with a few drops of olive oil for about 3 minutes on each side.
  4. Assemble the moussaka by layering tomato, aubergine, béchamel and mozzarella. Repeat until finished and top with a final layer of mozzarella and Parmesan.
  5. Bake at 200 ºC for about 20 minutes, until golden.

Nada heroico, nada demasiado Instagram.

Me encantará leerte.

Weekend. Non-stop rain. Kids at home.
Before, that used to mean chaos, frayed nerves, and wanting to hide in the bathroom for at least five minutes just to breathe.
Now… it’s something else.

Some time ago we found a magic formula that, without promising eternal peace, turns those rain-soaked days into something much more manageable (and even fun): a good bowl of pasta, little hands helping in the kitchen, and an afternoon of films or board games.

Nothing heroic, nothing too Instagram.

Just enjoying the moment as it comes, being together, cooking something delicious, and letting the smell of homemade food fill the house while it rains outside.

Today I’m sharing the recipe for orecchiette with prawns and fennel.

And even if the combination sounds sophisticated, it couldn’t be simpler.

You only need a few easy-to-find ingredients, good pasta, and a couple of little kitchen helpers who feel like joining in (even if it’s just to stir or grate the cheese at the end).

It has flavour, texture, that slightly different touch fennel brings… and it’s ready in under half an hour.

That said, the food probably won’t last even ten minutes.
But that time in the kitchen, the laughter because someone added too much salt, the smell that stayed in the house, and that moment when someone says “Mum, this is my favourite!”…
that stays forever.

And while everyone’s happily licking their plates, you get to enjoy something even better: the feeling that sometimes, weekend chaos can turn into a small perfect plan.

Do you also have an emergency plan for rainy days?
Do you usually cook with your kids, or do you prefer doing it in zen mode — on your own with your music?

Tell me here or on Instagram. I’d love to read you.

And if you try this recipe… you know the drill: take a photo before it disappears from the plate (don’t say I didn’t warn you 😉)

  • 30 g organic butter (or two more tablespoons of oil)
  • 500 g prawns or shrimp, peeled and sliced lengthwise

  • Finely grated Parmesan cheese

  3. Add the peeled prawns and sauté for another 4 minutes.
  4. Add the pasta and a splash of the cooking water, stir well, and let the water evaporate and coat everything nicely.
  5. Add the chopped parsley, sprinkle with Parmesan, and serve immediately!
