English version

Last week we were talking about the things that are always worth having ready in the fridge, and we came to the conclusion that a good hummus can rescue more than one improvised dinner.

Well, today we’re moving away from the fridge and turning our attention to another area that needs a little extra care in September: breakfast.

I don’t know what your mornings are like, but mine work so much better when there’s something delicious waiting in the kitchen and I don’t have to make too many decisions before my first coffee.

And that’s where this banana and chocolate granola with peanut butter comes in.

A big jar of homemade granola is one of those things that’s incredibly satisfying to find in the cupboard. Add some yoghurt, fruit and a generous spoonful of granola and you’ve got a great breakfast in a matter of minutes. It also works as a quick snack, something to grab by the handful on your way out of the house, or something to keep “tasting” every time you walk through the kitchen until, mysteriously, the jar starts getting emptier.

For this one, I’ve used oats, nuts, banana, peanut butter and maple syrup, and you can choose between puffed quinoa or desiccated coconut. There’s no need to follow the choice of nuts in the recipe religiously either: almonds, cashews, walnuts… use whatever you already have open at home. Because one of the great things about making granola yourself is precisely how easily you can adapt it to whatever you have in the cupboard.

In fact, if you’re a granola fan and like changing things up, you’ll also find my chocolate granola recipe and carrot cake granola on the blog, the latter made with carrot, orange, nuts and spices. Two very different options that prove that, once you get into the habit of making granola at home, there’s a whole world beyond making the same one over and over again.

In today’s version, the banana adds sweetness and helps create those little crunchy clusters which, let’s be honest, are the best part of any granola. The peanut butter gives it an amazing flavour, and the chocolate turns it into one of those recipes that’s almost hard to believe you made mainly for breakfast.

And although turning on the oven might not sound particularly appealing right now, the effort involved here is pretty manageable: mix everything together, spread it over a baking tray and bake for a few minutes. Then all you have to do is let it cool — essential if you want it to become properly crunchy — and store it in an airtight container.

So we’re carrying on with our little September goal of not filling our diaries with impossible good intentions, but simply making life a little easier for ourselves.

Last week it was a jar of hummus waiting in the fridge. This week, it’s a jar of granola in the cupboard… I have a feeling we’re going to be very glad to have both.

Are you enjoying these pantry staple ideas?

I’m reading you 🥜🍌🍫

Banana and chocolate granola with peanut butter

Ingredients

  • 1 cup puffed quinoa or desiccated coconut
  • 1½ cups rolled oats (with or without gluten)
  • ¼ cup almond flour, whole almonds, cashews or any other nuts you like
  • ⅛ tsp salt
  • ¼ tsp cinnamon
  • ¼ cup peanut butter
  • 60 ml (¼ cup) maple syrup
  • ½ cup chopped walnuts
  • 1 large banana, chopped
  • ⅓ cup chopped chocolate

Method

  1. Preheat the oven to 180ºC and line a baking tray with baking paper.
  2. Finely blend ½ cup of the oats together with the almonds or cashews and the puffed quinoa or desiccated coconut. Set aside.
  3. Mix with all the remaining ingredients except the chocolate. I recommend using your hands so that everything is thoroughly coated with the maple syrup and banana.
  4. Transfer the mixture to the baking tray and spread it out well to create as thin a layer as possible. Bake for around 10 minutes, stirring halfway through. Leave to cool and add the chopped chocolate to the granola, mixing well.
  5. Store in airtight containers (it will keep for around 15 days or longer at room temperature).

  2. Servimos y decoramos con lo que queramos ♥️

English version

There are mornings when I need very little to feel happy.

A warm bowl between my hands. Steam slowly rising. The smell of cinnamon. And that first spoonful of something that comforts you from the inside.

Saturday mornings are, for me, exactly that.
A moment to return to simplicity. To cook without rushing. And to prepare a breakfast that not only nourishes the body, but does so in a healthy way. Something filling, energising, without feeling heavy.
And in this house, that means: porridge.

A recipe I’ve been making for years and that never fails. Everyone loves it, it’s healthy and nourishing. And above all, easy. One of those recipes you make almost without thinking because you know it by heart, yet it never stops surprising you with how good it feels.

The trick is to cook it slowly, letting it thicken little by little, and serve it while it’s still warm, with your favourite toppings. The kind of toppings that make you smile and that you add an extra spoonful of when no one’s watching ;)

I’m sharing the quantities I use for one person so you can easily adjust them depending on how many you are or how hungry you feel.

If you feel like making it, tell me here or on Instagram. And if you also share which breakfast has the power to brighten an ordinary morning… I’d absolutely love to read you.

CHOCOLATE PANCAKES

ENGLISH VERSION

The first recipe of 2026 had to be like this: easy, delicious, and smelling like a proper breakfast.
And yes… with chocolate!

These oat, banana, and cocoa pancakes are soft and fluffy, with that naturally sweet touch that means they don’t need anything else (although with maple syrup, berries, and sliced bananas they’re absolutely amazing).

Banana adds sweetness and tenderness. And cocoa… well, you already know what happens when cocoa enters the kitchen: everything gets better.

I make them many weekends, but this time I wanted them to be the first recipe of the year too. So you have it on hand and can surprise your family on Three Kings’ Day.

That breakfast has something special. The kids still in their pyjamas, opening presents, playing. You with a warm coffee between pancake flips. And when the kitchen starts to smell like chocolate, I promise it won’t be hard to gather everyone around the table. With that excited little face that’s such a joy to see.

You can make them right away in just a few minutes, or leave the batter ready in the fridge the night before, so all you have to do is heat the pan and start enjoying.

And if you make them, tell me here or on Instagram. I’d love to see how they turned out and what toppings you chose.

I don’t want to say goodbye without wishing you a Happy 2026 and thanking you for being here. I hope we keep sharing many more recipes this year.
