Mermelada casera de frambuesa y chía



Me gustan los fines de semana que empiezan sin despertador… y con hambre.

Porque uno de mis rituales favoritos es sentarme a la mesa, con un buen desayuno por delante y tiempo para disfrutarlo en calma. Y, a ser posible, en la terraza.

Hay días en los que me levanto con ganas de cocinar y preparar algo más elaborado.
Pero otros días… amo lo sencillo.

Y en esos días en los que hay hambre pero cero ganas de complicarse, apuesto por un clásico que nunca falla: un buen pan de masa madre, mantequilla de verdad… y una mermelada casera. Sabrosa, pero también saludable y nutritiva.

Porque sí, podrías comprarla.
Pero hacerla en casa tiene algo distinto...

Llámalo sabor.
Llámalo el aroma que invade la cocina mientras la preparas o esa sensación de saber que, en unos minutos, tendrás algo mucho más rico que cualquier tarro de supermercado.

Esta mermelada de frambuesas con chía es todo eso. Rápida, sencilla, sin complicaciones… y con un pequeño toque que la hace especial: el jengibre fresco y las semillas de chía.

El jengibre aporta ese punto ligeramente picante que despierta el sabor de la fruta.
La chía, además de espesar de forma natural, le da textura y la convierte en algo más nutritivo.

Y lo que parecía una mermelada más… deja de serlo.

Un pan de masa madre tostado y crujiente, una mantequilla que se funde ligeramente con el calor y una buena mermelada casera… a veces, no hace falta mucho más para empezar bien el día ¿no te parece?

Mermelada casera de frambuesa y chía

Ingredientes

  • Un buen puñado de frambuesas (o frutos rojos)
  • 1 cucharada de agua
  • 1 cucharadita de sirope de arce
  • ½ cucharadita de extracto de vainilla
  • 1 dado de 1x1cm de jengibre de raíz
  • 3-4 cucharadas de semillas chia


Preparación

  1. Calentamos en una sartén el sirope de arce, la vainilla, el agua, las frambuesas y el jengibre rallado.
  2. Cuando empiece a hervir bajamos el fuego y dejamos cocer unos 3 minutos más.
  3. Añadimos las semillas, removemos y guardamos en unos tarros herméticos! ❤️🍒🥤

I love weekends that begin without an alarm clock… and with an appetite.

Because one of my favourite rituals is sitting down at the table, with a good breakfast ahead of me and time to enjoy it slowly. And, if possible, on the terrace.

Some days I wake up wanting to cook and prepare something more elaborate.
But other days… I love simple things.

And on those days when I’m hungry but have zero desire to overcomplicate things, I go for a classic that never fails: good sourdough bread, real butter… and homemade jam. Tasty, but also healthy and nourishing.

Because yes, you could buy it.
But making it at home has something different...

Call it flavour.
Call it the aroma that fills the kitchen while you’re making it, or that feeling of knowing that, in just a few minutes, you’ll have something far richer than any supermarket jar.

This raspberry chia jam is all of that. Quick, simple, uncomplicated… and with a little touch that makes it special: fresh ginger and chia seeds.

The ginger adds that slightly spicy note that wakes up the flavour of the fruit.
The chia, besides thickening it naturally, gives it texture and turns it into something more nourishing.

And what seemed like just another jam… stops being one.

Crisp toasted sourdough bread, butter melting slightly with the warmth, and a good homemade jam… sometimes, you really don’t need much more to start the day well, don’t you think?

Homemade raspberry chia jam

Ingredients

  • A good handful of raspberries (or mixed berries)
  • 1 tablespoon water
  • 1 tbsp maple syrup
  • ½ teaspoon vanilla extract
  • 1 piece of fresh ginger root, about 1x1 cm
  • 3-4 tablespoons chia seeds


Method

  1. Heat the maple syrup, vanilla, water, raspberries and grated ginger in a pan.
  2. When it starts to boil, lower the heat and let it cook for about 3 more minutes.
  3. Add the seeds, stir and store in airtight jars! ❤️🍒🥤

Yogur casero vegano de anacardos



Cada vez me apetece más volver a lo básico.

A esas recetas sencillas que no llaman la atención a primera vista, pero que en realidad son la base de muchas otras. Las que antes se hacían en casa de forma rutinaria, casi sin pensar… y que, sin darnos cuenta, hemos ido sustituyendo por versiones de supermercado.

Por comodidad, por rapidez… pero perdiendo calidad y también nutrientes por el camino.

Muchas de estas recetas básicas son, en realidad, sorprendentemente fáciles de preparar en casa. No necesitas una lista interminable de ingredientes ni técnicas complicadas. Y, a cambio de ese ratito en la cocina, ganas en calidad… y en saber exactamente qué estás comiendo.

Este yogur casero vegano es un buen ejemplo.

No tiene nada de complicado.
Pero tiene mucho de volver al origen.

Se hace con anacardos, que aportan esa textura cremosa tan característica y te sentará de maravilla, al no contener lactosa. Un poco de limón le da ese punto ácido que recuerda al yogur de siempre. El dulzor y la vainilla equilibran el conjunto… y hay un pequeño detalle que marca la diferencia: los probióticos.

Ese gesto sencillo lo convierte en un alimento vivo, pensado para cuidar la microbiota.

Y lo mejor es que, cuando lo haces en casa, puedes adaptarlo completamente a tu gusto. Más espeso, más suave, más o menos dulce… hasta que encuentras tu versión. Puedes tomarlo solo, con fruta, con granola o usarlo como base para otras recetas.

Pero lo interesante no es solo el resultado.

Es darte cuenta de lo fácil que es recuperar este tipo de básicos en casa… y lo bien que sienta hacerlo. Hasta el punto de que llega un momento en el que ya no tiene sentido comprarlo fuera.

Yogur casero vegano de anacardos

Ingredientes

  • Anacardos (remojados durante 4 horas)
  • Agua (aproximadamente la mitad del volumen de anacardos)
  • 2 cucharaditas de zumo de limón
  • 2 cucharaditas de sirope de arce o azúcar de coco
  • Vainilla fresca al gusto
  • Probióticos (de farmacia, en cápsulas o frescos)


Preparación

  1. Tritura los anacardos escurridos con el agua a máxima potencia hasta obtener una textura completamente suave y cremosa.
  2. Añade el zumo de limón, el endulzante y la vainilla, y vuelve a triturar.
  3. Incorpora los probióticos y mezcla bien. Y ya lo tienes.

Lately, I feel more and more drawn back to the basics.

To those simple recipes that don’t catch your eye at first glance, but are actually the foundation of so many others. The kind that used to be made at home routinely, almost without thinking… and that, without even realising it, we’ve replaced with supermarket versions.

For convenience, for speed… but losing quality and nutrients along the way.

Many of these basic recipes are, in fact, surprisingly easy to make at home. You don’t need an endless list of ingredients or complicated techniques. And in exchange for that little bit of time in the kitchen, you gain quality… and the peace of knowing exactly what you’re eating.

This homemade vegan yogurt is a great example.

There’s nothing complicated about it.
But it has everything to do with going back to the origin.

It’s made with cashews, which give it that wonderfully creamy texture and will suit you beautifully, since it contains no lactose. A little lemon gives it that tangy note that reminds you of traditional yogurt. The sweetness and vanilla balance everything out… and there’s one small detail that makes all the difference: probiotics.

That simple step turns it into a living food, made to care for your microbiota.

And the best part is that, when you make it at home, you can adapt it completely to your taste. Thicker, smoother, sweeter or less sweet… until you find your own version. You can have it on its own, with fruit, with granola, or use it as a base for other recipes.

But what’s interesting is not just the result.

It’s realising how easy it is to bring these kinds of basics back into your home… and how good it feels to do it. To the point where there comes a moment when buying it outside simply no longer makes sense.

Homemade vegan cashew yogurt

Ingredients

  • Cashews (soaked for 4 hours)
  • Water (approximately half the volume of the cashews)
  • 2 teaspoons lemon juice
  • 2 teaspoons maple syrup or coconut sugar
  • Fresh vanilla to taste
  • Probiotics (from the pharmacy, in capsules or fresh)


Method

  1. Blend the drained cashews with the water at high speed until completely smooth and creamy.
  2. Add the lemon juice, sweetener and vanilla, and blend again.
  3. Add the probiotics and mix well. And that’s it.

Pan nube keto: sin hidratos, sin harinas



¿Imaginas un pan nube keto, sin hidratos, sin harinas y sin complicaciones?

Sí, es posible y sí, has leído bien — pan sin harina, sin hidratos y, además, con solo 5 ingredientes 😬

A mí me encanta ponerlo en la bikinera para que quede crujiente por fuera, esponjoso por dentro y perfecto tanto en versión salada como dulce. Una vez que lo pruebas, no hay vuelta atrás 🙌

🥪 El relleno es cosa tuya — lo puedes hacer a modo bikini, pero en versión dulce con nutella saludable están de escándalo. Y si además lo pasas por la sandwichera… ya es otro nivel 🤤

Lo mejor es que no solo es diferente, también es práctico: se prepara en nada. Mientras el horno hace su trabajo, tú haces lo tuyo. En unos 30 minutos lo tienes listo.

Pan keto

Ingredientes para 6 panes

  • 3 huevos (claras y yemas separadas)
  • Una pizca de sal
  • ½ cda de psyllium husk en polvo (es opcional, y lo encuentras en herbolarios y tiendas bio)
  • ½ cdta de levadura química tipo royal
  • 130g de queso tipo crema (bio, solo con leche, sal y fermentos — marca la diferencia!)


Preparación

  1. Precalienta el horno a 150ºC
  2. Monta las claras a punto de nieve con una pizca de sal (sabrás que están listas cuando le des la vuelta al bol y no se caigan 😅)
  3. En otro bol mezcla las yemas con el psyllium husk (opcional), la levadura y el queso crema hasta que no queden grumos
  4. Incorpora las yemas a las claras con movimientos envolventes de abajo a arriba, con mucho cariño para que no bajen
  5. Forma 6 panes grandes sobre papel de hornear y hornea 25 min en el centro del horno a 150ºC
  6. Deja enfriar y despega con cuidado del papel

Keto bread

Ingredients for 6 buns

  • 3 eggs (whites and yolks separated)
  • A pinch of salt
  • ½ tbsp psyllium husk powder (optional, and you can find it in herbal shops and organic stores)
  • ½ tsp baking powder
  • 130 g cream cheese (organic, made only with milk, salt and cultures — it makes all the difference!)


Method

  1. Preheat the oven to 150ºC
  2. Whip the egg whites with a pinch of salt until stiff peaks form (you’ll know they’re ready when you turn the bowl upside down and they don’t fall 😅)
  3. In another bowl, mix the yolks with the psyllium husk (if using), the baking powder and the cream cheese until smooth and lump-free
  4. Fold the yolk mixture into the whites with gentle upward movements, very carefully so they don’t lose volume
  5. Shape 6 large buns on baking paper and bake for 25 minutes in the centre of the oven at 150ºC
  6. Let cool and carefully peel them off the paper

Smoothie de sandía, plátano y remolacha



Hay recetas que nacen en un momento muy concreto de la vida y este batido es una de ellas.

Lo preparaba varios días a la semana durante el embarazo. Era un gesto pequeño, casi automático para ae asegurarme de que mi cuerpo tenía hierro suficiente en esa etapa en la que todo cambia.

Y, sin darme cuenta, se convirtió en uno de esos hábitos que se quedan.

Porque más allá de lo nutritivo —que lo es—, tiene algo que me encanta, aparte de lo fresco y nutritivo que es: un color rosa intenso, imposible de explicar.

La remolacha es la protagonista aquí.
Y si tuerces un poco el gesto al leerlo, espera… no sabe a remolacha.

Se mezcla con la frescura de la sandía, el dulzor del plátano y las fresas, el punto crujiente del apio y ese toque final de menta que lo cambia todo. El resultado es un batido suave, refrescante, con un equilibrio que sorprende.

Y además, tiene algo más.

La remolacha es especialmente interesante para nosotras: ayuda a mejorar la circulación y la oxigenación de los tejidos, aporta hierro y ácido fólico… y también tiene un efecto muy interesante a nivel hormonal. Todo eso tiene un impacto directo en cómo nos sentimos porque mejora la calidad del sueño y con ello nuestra energía y es una gran aliada en etapas como la menopausia, en las que el cuerpo necesita un extra de cuidado y equilibrio.

Y sí, además es una pequeña bomba de nutrientes.
Pero más allá de eso, es de esas recetas que te hacen sentir bien.

Siendo sincera, la mayoría de las veces la preparo “a ojo”, como casi todas las recetas habituales en mi cocina, pero te comparto mi combinación favorita y que más repito.

  • Un puñado pequeño de hojas de menta


Preparación

  1. Trituramos y servimos al momento!

Some recipes are born at a very specific moment in life, and this smoothie is one of them.

I used to make it several days a week during pregnancy. It was a small gesture, almost automatic, to make sure my body had enough iron during that stage when everything changes.

And without realising it, it became one of those habits that stays with you.

Because beyond how nourishing it is — which it is — it has something else I love, besides being fresh and nutritious: an intense pink colour that’s impossible to explain.

Beetroot is the star here.
And if you pulled a face a little when you read that, wait… it doesn’t taste like beetroot.

It blends with the freshness of watermelon, the sweetness of banana and strawberries, the crisp touch of celery, and that final hint of mint that changes everything. The result is a smooth, refreshing smoothie with a surprisingly balanced flavour.

And on top of that, it has something more.

Beetroot is especially interesting for us: it helps improve circulation and tissue oxygenation, provides iron and folic acid… and it also has a very interesting hormonal effect. All of that has a direct impact on how we feel because it improves sleep quality and therefore our energy, and it’s a great ally during stages such as menopause, when the body needs extra care and balance.

And yes, it’s also a little nutrient bomb.
But beyond that, it’s one of those recipes that simply makes you feel good.

To be honest, most of the time I make it “by eye”, like almost all the regular recipes in my kitchen, but I’m sharing my favourite combination — the one I repeat the most.

Ingredients

  • 1 slice of watermelon
  • 1/2 frozen banana
  • 1/2 peeled raw beetroot
  • 5–6 strawberries
  • 250 ml unsweetened almond milk
  • 1/2 apple
  • 1 celery stalk, without leaves
  • a small handful of mint leaves


Method

  1. Blend everything and serve straight away!

Receta de nutella saludable, con ingredientes naturales 🍫🍞

Hace un tiempo me invitaron al colegio de mis hijos a hacer algo que, sobre el papel, parecía sencillo: demostrar que ese dulce que todos conocen —ese que encontramos en cualquier supermercado cargado de aceites y azúcares refinados— también se puede preparar con alimentos de la tierra.

Sin aceites refinados.
Sin azúcares blancos.

Recuerdo perfectamente las caras de los niños cuando les pregunté qué llevaba su crema favorita.

—¡Chocolate! —gritaron casi al unísono.

Y claro que lleva chocolate. Pero también lleva azúcar (mucho), aceite “vegetal” (que no siempre es tan vegetal como suena), aromas y conservantes.

Después vino el silencio curioso cuando empecé a sacar avellanas, dátiles y cacao puro.

No voy a decirte lo contrario: sigue siendo un dulce.
Tiene azúcar, aunque sea natural.
No es para desayunar cada día ni para comer a cucharadas sin medida.

Pero sí es una alternativa consciente.
Una versión más honesta.
Una forma de elegir mejor sin renunciar al placer.

Lo mejor de aquel día fue cuando la probaron. Porque muchas veces asociamos “saludable” con “aburrido” y ese mito se desmontó en cuestión de segundos. Les chifló. A todos. Sin excepción.

Esta crema de cacao y avellanas forma parte de nuestros básicos de despensa. La preparo en diez minutos y la guardo en un tarro de cristal en la nevera. Para una tostada de fin de semana, para rellenar unas crêpes, para acompañar fruta…

La receta la adapté de @datesandavocados y la he ido ajustando hasta que quedó así, sencilla y deliciosa.

Receta de Nutella casera.

Ingredientes

  • 1 taza de mantequilla de avellanas (puedes hacerla en casa o comprarla ya preparada)
  • 1/2 taza de dátiles medjool deshuesados y triturados (si están duros, dejar 10 min en remojo en agua hirviendo)
  • 250 ml de bebida vegetal (idealmente de avellanas)
  • 50 g de cacao en polvo (sin azúcares)
  • 60 ml de aceite de oliva virgen extra
  • 3 cucharadas de manteca de cacao derretida (puede ser aceite de coco)
  • 2 cucharadas de miel o sirope de arce
  • Las semillas de 1/2 vaina de vainilla
  • 1/4 cucharadita de sal


Preparación

  1. Tritura todos los ingredientes en la batidora hasta obtener una textura cremosa y homogénea.

Some time ago, I was invited to my children’s school to do something that, on paper, sounded simple: show that the spread everyone knows —the one you can find in any supermarket loaded with refined oils and sugars— can also be made with real, wholesome ingredients.

No refined oils.
No white sugar.

I still remember the children’s faces when I asked what their favourite spread contained.

“Chocolate!” they shouted almost in unison.

And yes, it does contain chocolate. But it also comes with sugar (a lot), “vegetable” oil (not always as innocent as it sounds), flavourings and preservatives.

Then came the curious silence when I started taking out hazelnuts, dates and pure cocoa.

I won’t pretend otherwise: it’s still a sweet treat.
It contains sugar, even if it’s natural.
It’s not meant for breakfast every single day or for eating straight from the jar without limits.

But it is a more conscious alternative.
A more honest version.
A better choice without giving up the pleasure.

The best part of that day was when they tasted it. We often associate “healthy” with “boring”, and that myth disappeared in seconds. They loved it. All of them. No exceptions.

This hazelnut and cocoa cream has become one of our pantry staples. I make it in ten minutes and keep it in a glass jar in the fridge. For a weekend toast, to fill crêpes, to pair with fruit…

And now I’ll ask you: are you the kind who goes straight in with a spoon… or do you save it for a special toast?


Homemade Nutella

Ingredients

  • 1 cup hazelnut butter (homemade or store-bought)
  • 1/2 cup pitted Medjool dates, blended (if firm, soak 10 minutes in boiling water)
  • 250 ml plant-based milk (hazelnut milk works best)
  • 50 g unsweetened cocoa powder
  • 60 ml extra virgin olive oil
  • 3 tbsp melted cocoa butter (or coconut oil)
  • 2 tbsp honey or maple syrup
  • Seeds from 1/2 vanilla pod
  • 1/4 tsp salt


Method

  1. Blend all the ingredients until smooth and creamy.

PORRIDGE DE AVENA


Hay mañanas en las que necesito muy poco para ser feliz.
Una taza caliente entre las manos. El vapor que sube despacio. El olor a canela. Y ese primer bocado de algo que reconforta desde dentro.

Las mañanas de sábado son, para mí, eso.
Un momento para volver a lo simple. Para cocinar sin prisa. Y para preparar un desayuno que no solo alimente el cuerpo, sino que lo haga de forma saludable. Que sacie, que me de energía, sin resultar pesado.
Y en esta casa, eso significa: porridge.

Una receta que preparo desde hace años y que nunca falla. Gusta a todos, es sana y nutritiva. Y sobre todo, fácil. De esas que haces sin mirar, porque te la sabes de memoria, pero que nunca deja de sorprenderte lo bien que sienta.

El truco está en cocinarlo a fuego lento, dejar que espese poco a poco y servirlo aún caliente, con tus toppings favoritos. Esos toppings que te hacen sonreír y de los que echas una cucharadita de más cuando nadie mira ;)

Te dejo las cantidades que uso para una persona y así podrás ajustar fácilmente según cuántos seáis o de cuánta hambre tengáis.

Porridge de avena

Ingredientes

  • ¼ de taza de copos de avena finos (una medida)
  • Una medida de bebida vegetal (de avena, soja, almendra… la que más te guste)
  • Una medida de agua
  • Una pizca de sal marina
  • Para servir: mantequilla, canela, más leche, fruta, frutos secos… lo que quieras!

Elaboración

  1. Cocemos la avena en el líquido (leche y agua), hasta que espese y tenga textura más gelatinosa (unos 7 minutos a fue medio-bajo).
  2. Servimos y decoramos con lo que queramos ♥️

There are mornings when I need very little to feel happy.

A warm bowl between my hands. Steam slowly rising. The smell of cinnamon. And that first spoonful of something that comforts you from the inside.

Saturday mornings are, for me, exactly that.
A moment to return to simplicity. To cook without rushing. And to prepare a breakfast that not only nourishes the body, but does so in a healthy way. Something filling, energising, without feeling heavy.
And in this house, that means: porridge.

A recipe I’ve been making for years and that never fails. Everyone loves it, it’s healthy and nourishing. And above all, easy. One of those recipes you make almost without thinking because you know it by heart, yet it never stops surprising you with how good it feels.

The trick is to cook it slowly, letting it thicken little by little, and serve it while it’s still warm, with your favourite toppings. The kind of toppings that make you smile and that you add an extra spoonful of when no one’s watching ;)

I’m sharing the quantities I use for one person so you can easily adjust them depending on how many you are or how hungry you feel.

Porridge

Ingredients

  • ¼ cup fine oat flakes (one measure)
  • One measure of plant-based milk (oat, soy, almond… whichever you like most)
  • One measure of water
  • A pinch of sea salt
  • To serve: butter, cinnamon, extra milk, fruit, nuts… whatever you like!

Method

  1. Cook the oats in the liquid (milk and water) until thick and slightly gelatinous in texture (about 7 minutes over medium-low heat).
  2. Serve and top with whatever you like ♥️

La receta de esta granola es bestial. Yo la hago todo el año muy parecida, pero para darle el toque navideño le añado especias como canela, clavo, anís, cardamomo, semillas de cilantro, nuez moscada y jengibre. Las mezclo un poco a ojo y las voy incorporando a mis recetas.

Porque si algo brilla por su ausencia en estas fechas es el tiempo. Entre comidas, regalos, compromisos varios y los niños en casa, cocinar con calma es casi un lujo. Por eso me gusta anticiparme y tener algunas preparaciones listas para resolver desayunos o meriendas en dos minutos y sin apenas esfuerzo.

Esta granola es una forma fácil y rápida de empezar el día desayunando de forma saludable.
Y lo mejor: los peques pueden prepararse el desayuno solos, cosa que —reconozcámoslo— en vacaciones se agradece muchísimo.

La miel cruda y el aceite de coco ayudan a que quede bien doradita, crujiente y con ese dulzor natural que no empalaga.

Pruébala con yogur, con bebida vegetal, como topping de postres... aunque te aviso: está tan, tan rica que acabaréis comiéndola a puñados, directamente del tarro.

Si en casa no sois muy fans de las especias, no pasa nada. Te dejo también mi receta de granola de chocolate que gusta a todo el mundo.

Se conserva en recipientes herméticos fuera de la nevera durante toda la Navidad (si es que llega… jeje).

Granola de Navidad

Ingredientes

  • 400 g de copos de avena
  • Un puñado de almendras picadas gruesas
  • Un puñado de avellanas picadas gruesas
  • 1/2 taza de semillas variadas (girasol, calabaza, lino…)
  • Especias navideñas al gusto (canela, clavo, anís, cardamomo, semillas de cilantro, nuez moscada, jengibre…)
  • Un buen puñado de copos de coco deshidratado
  • 80 ml de miel cruda
  • 60 ml (1/4 de taza) de aceite de coco fundido

Elaboración

  1. Precalienta el horno a 170 ºC y prepara una bandeja de horno forrada con papel vegetal.
  2. En un bol grande, mezcla los copos de avena, las almendras y avellanas picadas, las semillas y las especias navideñas.
  3. En otro bol pequeño, mezcla la miel cruda con el aceite de coco fundido hasta que queden bien integrados.
  4. Vierte la mezcla líquida sobre los ingredientes secos y remueve muy bien hasta que todo quede ligeramente humedecido y cubierto.
  5. Extiende la granola en una capa uniforme sobre la bandeja de horno, sin compactarla demasiado.
  6. Hornea a 170 ºC durante unos 15 minutos, removiendo a mitad de tiempo para que se dore de manera uniforme.
  7. Cuando esté doradita y huela a especias y a Navidad, saca la bandeja del horno y deja que la granola se enfríe por completo (se volverá más crujiente al enfriar).
  8. Guarda en tarros herméticos a temperatura ambiente.

ENGLISH VERSION

This Christmas granola is insanely good. I make a similar version all year round, but to give it a festive twist I add spices like cinnamon, cloves, anise, cardamom, coriander seeds, nutmeg and ginger. I mix them more or less by eye and sprinkle them into all sorts of recipes.

At this time of year, the one thing we seem to have less of is time. Between festive meals, gifts, get-togethers and the kids at home, cooking slowly and calmly can feel like a luxury. That’s why I love having a few things ready that make breakfasts and snacks come together in two minutes with almost no effort.

This granola is such an easy and quick way to start the day with a wholesome breakfast.
And the best part: kids can prepare their own breakfast, which —let’s be honest— is very much appreciated during school holidays.

The raw honey and coconut oil help it turn beautifully golden and crunchy, with a natural sweetness that doesn’t overwhelm.

Stored in airtight jars at room temperature, it will keep for the whole festive season (that is, if it lasts that long!).

Enjoy it with yogurt, your favourite plant-based milk, as a topping for desserts… though I should warn you: it’s so good you’ll probably end up eating it by the handful straight from the jar.

If your family isn’t too keen on spices, don’t worry. You can always try my chocolate granola, which is a guaranteed crowd-pleaser.

Christmas Granola

Ingredients

  • 400 g rolled oats
  • A handful of roughly chopped almonds
  • A handful of roughly chopped hazelnuts
  • 1/2 cup mixed seeds (sunflower, pumpkin, flax…)
  • Festive spices to taste (cinnamon, cloves, anise, cardamom, coriander seeds, nutmeg, ginger…)
  • A generous handful of unsweetened coconut flakes
  • 80 ml raw honey
  • 60 ml (1/4 cup) melted coconut oil

Instructions

  1. Preheat the oven to 170 ºC and line a baking tray with parchment paper.
  2. In a large bowl, combine the oats, chopped almonds, chopped hazelnuts, mixed seeds and festive spices.
  3. In a small bowl, whisk together the raw honey and melted coconut oil until smooth.
  4. Pour the honey and coconut mixture over the dry ingredients and mix very well until everything is lightly coated.
  5. Spread the granola out in an even layer on the prepared baking tray, without pressing it down too much.
  6. Bake at 170 ºC for about 15 minutes, stirring halfway through so it toasts evenly.
  7. Once it’s golden and your kitchen smells like Christmas, remove from the oven and let the granola cool completely (it will crisp up as it cools).
  8. Store in airtight jars at room temperature.

Receta auténtica Hoppers de Sri Lanka

Hay recetas que te atrapan por el sabor… y otras que se quedan contigo por lo que representan. Esta es ambas cosas. Los hoppers los descubrí en un viaje a Sri Lanka, en uno de esos desayunos sin prisa, en el Rosyth Estate House. Sus dueños, una pareja encantadora (ella nacida en el país y él londinense), se hicieron con esta propiedad, un bungalow de 1926 que hoy han convertido en un refugio en medio de la jungla, con pocas habitaciones, piscina y una cocina local espectacular… ¡sin duda os lo recomiendo si viajáis al país! Allí fue donde probé los hoppers por primera vez y donde aprendí la receta. Fue amor al primer bocado.

Me fascinó la textura crujiente en los bordes, el centro tierno y ese sabor tan especial a fermentación suave, leche de coco y arroz. Desde entonces, forman parte de mis mañanas cuando necesito empezar el día con fuerza y energía. Y si estás transitando la perimenopausia o la menopausia, incluir proteína en el desayuno es clave para la saciedad, la energía y el mantenimiento de la masa muscular.

¿Sabías que en España se desperdician más de 20 millones de toneladas de alimentos al año? Y aunque las toneladas suenan a mucho pero parecen lejanas, en realidad cada persona tira de media más de 12 kilos de vegetales y más de 10 kilos de fruta al año.

La receta de hoy me encanta porque convierte algo que en muchas casas acabaría en la basura en un bocado increíble. Es una pequeña manera de ayudar a reducir esa locura de kilos de comida desperdiciada.

Cake de pistacho, AOVE & limón



Hay ingredientes que tienen algo especial, aunque no siempre lo sepamos ver a la primera. El pistacho es uno de ellos. Durante mucho tiempo pasó desapercibido, como si fuera simplemente un fruto seco más. Pero basta detenerse un poco para darse cuenta de que tiene algo distinto. Desde ese color verde único a su sabor suave, entre dulce y salado y su textura terrosa si lo consumes al natural o casi cremosa cuando se mezcla o se tritura.

Aunque ahora parece que el pistacho se acaba de inventar. Está por todas partes. En forma de crema, en tiramisús, en helados, en tartas, en ese famosísimo Chocolate Dubái del que todo el mundo habla... Está de moda. Pero lo cierto es que lleva en las cocinas desde hace mucho, mucho tiempo. En Oriente Medio, en Italia, en la India… ha sido un ingrediente esencial durante siglos. Y tal vez ahora solo estemos redescubriendo lo que otros sabían desde siempre: que el pistacho tiene algo especial.

En casa siempre ha habido bolsitas de pistachos a mano, aunque durante años solo los comíamos tal cual. Poco a poco empecé a probarlos en ensaladas, luego en pestos, y más adelante en dulces. Y ahí descubrí que el pistacho no necesita mucho para destacar y elevar un plato. Marida bien con mantequilla, vainilla, miel, chocolate... Combina con frutas de verano y con masas de invierno. Y cuando se hornea, desprende un aroma cálido, envolvente... ¡una maravilla!

Esta receta me la dio @greenrepublic_ y fue la que utilicé para la clase de estilismo culinario en nuestro retiro fotográfico del pasado mes de mayo 💚. Es una elaboración sin gluten y vegana. Te sorprenderá descubrir cómo un puñado de pistachos pueden transformar una tarta sencilla en algo que apetece compartir. El interior queda jugoso, tierno, con un punto ácido que me encanta… y el pistacho tostado por encima… puro espectáculo.

ENGLISH VERSION

Some ingredients have something special, even if we don't always see it at first sight. Pistachios are one of them. For a long time, they went unnoticed—just another nut in the pantry. But if you pause for a moment, you realise there's something different about them. From that unmistakable green hue to their mild flavour—somewhere between sweet and savoury—and their earthy texture when eaten raw, or almost creamy when blended or ground.

These days, it might seem like pistachios were just invented. They’re everywhere. In creamy spreads, in tiramisùs, ice creams, cakes, and of course, the very well-known Dubai Chocolate that everyone’s talking about. Pistachios are having their moment. But the truth is, they’ve been part of kitchens for a very, very long time. In the Middle East, in Italy, in India… they’ve been essential ingredients for centuries. Maybe now we’re simply rediscovering what others have always known: pistachios are something truly special.

At home, there have always been little bags of pistachios within easy reach, though for years we just ate them as they were. Bit by bit, I started using them in salads, then in pestos, and later on in sweet recipes. That’s when I realised: pistachios don’t need much to shine. They pair beautifully with butter, vanilla, honey, chocolate… They go just as well with summer fruits as they do with wintery baked goods. And when baked, they release a warm, comforting aroma that fills the kitchen. Truly magical.

This recipe was shared with me by @greenrepublic_ and it’s the one I used during our food styling class at the photography retreat this past May 💚. It’s both gluten-free and vegan. And you’ll be amazed at how a handful of pistachios can transform a simple cake into something that feels worth sharing. Moist, tender, with a hint of tartness that I love… and that pistachio flavour that lifts everything to another level—rich without being heavy, distinctive without being overpowering.

Here’s the full recipe:



Cake de pistacho, AOVE & limón

Ingredientes

  • 200 g de harina de almendra
  • 190 g de harina la sin gluten (utilizamos 100 g de sarraceno + 50 g de arroz integral + 40 g de fécula de patata), tamizadas.
  • 150 g de azúcar de coco
  • 80 g de pistacho crudo troceado
  • 85 g de AOVE
  • 300 g de leche entera o bebida vegetal
  • 4 cucharadas de zumo de limón
  • 10 g de levadura de repostería
  • 1/2 vaina de vainilla (las semillas)
  • Una pizca de sal

    Preparación

    1. Mezcla la leche con el zumo de limón y deja reposar 10 minutos para crear un buttermilk.
    2. En un bol grande, mezcla las harinas, el azúcar, la levadura y la sal.
    3. Mezcla las semillas de la vainilla con el buttermilk. Añade también el AOVE y la ralladura de limón.
    4. Mezcla los ingredientes secos con los líquidos, con movimientos envolventes, hasta tener una masa cremosa sin grumos.
    5. Vierte en un molde cuadrado (25x25 cm) forrado con papel engrasado.>
    6. Añade por encima el pistacho troceado y hornea a 180°C (calor arriba y abajo, sin ventilador) unos 40 minutos

    Pistachio, Olive Oil & Lemon Cake

    Ingredients

    • 200 g almond flour
    • 190 g gluten-free flour (we used 100 g buckwheat + 50 g brown rice + 40 g potato starch), sifted
    • 150 g coconut sugar
    • 80 g raw pistachios, roughly chopped
    • 85 g extra virgin olive oil (EVOO)
    • 300 g whole milk or plant-based drink
    • 4 tablespoons lemon juice
    • 10 g baking powder
    • 1/2 vanilla pod (seeds only)
    • A pinch of salt

      Preparation

      1. Mix the milk with the lemon juice and let it sit for 10 minutes to create a kind of buttermilk.
      2. In a large bowl, combine the flours, coconut sugar, baking powder and salt.
      3. Add the vanilla seeds to the buttermilk. Then add the EVOO and a little lemon zest.
      4. Gently fold the dry ingredients into the wet ones until you have a smooth, lump-free batter.
      5. Pour the mixture into a greased and lined square pan (25x25 cm).
      6. Sprinkle the chopped pistachios on top and bake at 180°C (top and bottom heat, no fan) for about 40 minutes.

      ¡La receta de los donuts saludables que os prometí hace unos días por fin está aquí! Parecen antónimos, donuts y saludables ¿verdad? pues señores, créanme, pueden ir de la mano. Como casi todas las recetas que hago suelen estar inspiradas en recetas que veo por ahí, empiezo siguiéndolas al pie de la letra pero acabo por liarme sola y cambiando los ingredientes por lo que se me va ocurriendo.

      Crumble de quinoa con manzana, frutos rojos y coco

      El crumble es un plato originario de Inglaterra y puede prepararse en versión salada o dulce, aunque es más popular su versión dulce, principalmente el crumble de manzana. Suele estar compuesto por fruta con una capa superior crujiente hecho a base de una mezcla de mantequilla, harina y azúcar. Por supuesto existen muchísimas versiones y la que os traigo yo es una versión healthy del crumble, además vegano. Lo he preparado con quinoa, copos de avena, frutos rojos, manzanas, coco y miel.

      ¿Sabéis que los crumbles se empezaron a servir durante la II Guerra Mundial? Fue una alternativa a los clásicos pies como versión económica pues utilizan menor cantidad de masa, vendría a ser como el desmigado de la masa de los pies (aquí os dejo con algunas recetas de pies).
