Helado casero súper fácil y rápido de yogur y frutos del bosque 🍧(con o sin heladera!)




Con este calor tan intenso y repentino de las últimas semanas, tengo la sensación de haber hecho un cambio de armario pero ¡en la cocina!

De un día para otro hemos pasado de las recetas de cuchara y el horno encendido a ensaladas, bebidas frías y postres que salen directamente del congelador.

Y, cuando aprieta el calor, hay algo que nunca falta en casa: los helados caseros.

Quizá ahora ya no tanto, pero hace unos años, cuando comentaba que hacía mis propios helados, las caras de sorpresa eran habituales. Aunque lo que más me llamaba la atención no era eso, sino la cantidad de razones que encontraba la gente para no intentarlo: que si no tengo heladera, que si parecen muy difíciles de hacer, que si en casa seguirán prefiriendo los de la tienda...

Y mientras escuchaba todas esas excusas, siempre pensaba lo mismo:

¿Cómo puede alguien resistirse a un helado hecho en casa? Con ingredientes que conoces, eligiendo exactamente lo que quieres poner y lo que no, sin listas interminables de conservantes con nombres impronunciables y con el punto justo de dulzor para ti.

Y si además lleva vainilla y frutos rojos ¡suma más puntos!


Si todavía perteneces al grupo de quienes creen que hacer helado en casa es complicado, dale una oportunidad a esta receta y luego me cuentas.

Como vas a ver, la base es increíblemente sencilla, solo nata, yogur griego, vainilla y un endulzante natural. Y después, mi parte favorita que es el remolino de frutos rojos.

Porque sí, podríamos mezclarlo todo y estaría rico. Pero cuando los arándanos, las frambuesas o las moras se cocinan lentamente con un poco de limón, ocurre algo que transforma por completo el resultado. El sabor se concentra, aparecen matices más intensos y ese contraste entre la crema de vainilla y la fruta ligeramente ácida hace que cada cucharada sea diferente.

Sé que no todas tenéis una heladera en casa y como eso no debería ser motivo para quedarse sin helado casero este verano, esta receta que te comparto hoy funciona tanto con heladera o sin ella.

Helado de yogur con frutos rojos

Ingredientes

  • 🔸750ml de nata eco
  • 🔸250ml de yogur griego (para una versión sin lactosa, puedes usar yogur de coco @abbotkinneys_es en lugar de nata y yogur griego!)
  • 🔸100ml de endulzante natural (en este caso, mezclé miel cruda eco y concentrado de manzana)
  • 🔸semillas de una vaina de vainilla o extracto de vainilla
  • 🔸250g de frutos congelados tipo arándanos o frambuesas o moras
  • 🔸50g azúcar de coco (puedes no poner)
  • 🔸zumo de medio limón


Preparación

Base del helado

  1. Mezclamos la nata, el yogur, el endulzante y la vainilla.

Versión con heladera

  1. Batimos la mezcla durante unos 30 minutos, hasta que esté cremosa.
  2. Mientras tanto, preparamos el remolino de frutos rojos calentando en un cazo los frutos rojos, el azúcar de coco y el zumo de limón durante unos 10 minutos.
  3. Pasamos el helado a un molde y añadimos los frutos rojos, mezclando suavemente con una cuchara para crear un efecto marmolado.
  4. Congelamos al menos 4 horas antes de servir.

Versión sin heladera

  1. Vertemos la mezcla en un molde rectangular y congelamos durante unas 2 horas y 30 minutos.
  2. Sacamos del congelador, cortamos en trozos y trituramos durante unos 2 minutos hasta recuperar una textura cremosa.
  3. Preparamos el coulis de frutos rojos calentando los frutos rojos, el azúcar de coco y el zumo de limón durante unos 10 minutos.
  4. Vertemos la mitad del helado en el molde, añadimos la mitad del coulis, repetimos las capas y mezclamos ligeramente para crear el remolino.
  5. Congelamos al menos 4 horas antes de servir.

With this sudden, intense heat we’ve had over the last few weeks, I feel like I’ve done a wardrobe change — but in the kitchen!

From one day to the next, we’ve gone from spoon dishes and turning the oven on to salads, cold drinks and desserts that come straight out of the freezer.

And when the heat really kicks in, there’s one thing we never go without at home: homemade ice cream.

Maybe not so much now, but a few years ago, whenever I mentioned that I made my own ice cream, surprised faces were quite common. Although what caught my attention most wasn’t that, but the number of reasons people found not to try it: I don’t have an ice cream maker, it looks too difficult, everyone at home will still prefer shop-bought ones...

And while I listened to all those excuses, I always thought the same thing:

How could anyone resist homemade ice cream? Made with ingredients you know, choosing exactly what you want to add and what you don’t, without endless lists of preservatives with unpronounceable names and with just the right amount of sweetness for you.

And if it also has vanilla and berries, even better!


If you still belong to the group of people who think making ice cream at home is complicated, give this recipe a chance and then tell me what you think.

As you’ll see, the base is incredibly simple: just cream, Greek yogurt, vanilla and a natural sweetener. And then comes my favourite part: the berry swirl.

Because yes, we could mix everything together and it would taste good. But when blueberries, raspberries or blackberries are slowly cooked with a little lemon, something happens that completely transforms the result. The flavour becomes more concentrated, deeper notes appear, and that contrast between the vanilla cream and the slightly tart fruit makes every spoonful different.

I know not all of you have an ice cream maker at home, and since that shouldn’t be a reason to go without homemade ice cream this summer, the recipe I’m sharing today works both with or without one.

Honestly, the only truly difficult thing about this recipe is being patient while it freezes.

Yogurt ice cream with berries

Ingredients

  • 🔸750ml organic cream
  • 🔸250ml Greek yogurt (for a lactose-free version, you can use coconut yogurt @abbotkinneys_es instead of cream and Greek yogurt!)
  • 🔸100ml natural sweetener (in this case, I mixed organic raw honey and apple concentrate)
  • 🔸seeds from one vanilla pod or vanilla extract
  • 🔸250g frozen berries such as blueberries, raspberries or blackberries
  • 🔸50g coconut sugar (you can leave it out)
  • 🔸juice of half a lemon


Method

Ice cream base

  1. Mix the cream, yogurt, sweetener and vanilla.

With an ice cream maker

  1. Churn the mixture for about 30 minutes until creamy.
  2. Meanwhile, prepare the berry swirl by heating the berries, coconut sugar and lemon juice in a saucepan for about 10 minutes.
  3. Transfer the ice cream to a container and gently swirl through the berry mixture.
  4. Freeze for at least 4 hours before serving.

Without an ice cream maker

  1. Pour the mixture into a rectangular container and freeze for about 2½ hours.
  2. Remove from the freezer, cut into chunks and blend for about 2 minutes until creamy again.
  3. Prepare the berry coulis by heating the berries, coconut sugar and lemon juice for about 10 minutes.
  4. Pour half of the ice cream into a container, add half of the coulis, repeat the layers and gently swirl.
  5. Freeze for at least 4 hours before serving.

Yogur casero vegano de anacardos



Cada vez me apetece más volver a lo básico.

A esas recetas sencillas que no llaman la atención a primera vista, pero que en realidad son la base de muchas otras. Las que antes se hacían en casa de forma rutinaria, casi sin pensar… y que, sin darnos cuenta, hemos ido sustituyendo por versiones de supermercado.

Por comodidad, por rapidez… pero perdiendo calidad y también nutrientes por el camino.

Muchas de estas recetas básicas son, en realidad, sorprendentemente fáciles de preparar en casa. No necesitas una lista interminable de ingredientes ni técnicas complicadas. Y, a cambio de ese ratito en la cocina, ganas en calidad… y en saber exactamente qué estás comiendo.

Este yogur casero vegano es un buen ejemplo.

No tiene nada de complicado.
Pero tiene mucho de volver al origen.

Se hace con anacardos, que aportan esa textura cremosa tan característica y te sentará de maravilla, al no contener lactosa. Un poco de limón le da ese punto ácido que recuerda al yogur de siempre. El dulzor y la vainilla equilibran el conjunto… y hay un pequeño detalle que marca la diferencia: los probióticos.

Ese gesto sencillo lo convierte en un alimento vivo, pensado para cuidar la microbiota.

Y lo mejor es que, cuando lo haces en casa, puedes adaptarlo completamente a tu gusto. Más espeso, más suave, más o menos dulce… hasta que encuentras tu versión. Puedes tomarlo solo, con fruta, con granola o usarlo como base para otras recetas.

Pero lo interesante no es solo el resultado.

Es darte cuenta de lo fácil que es recuperar este tipo de básicos en casa… y lo bien que sienta hacerlo. Hasta el punto de que llega un momento en el que ya no tiene sentido comprarlo fuera.

Yogur casero vegano de anacardos

Ingredientes

  • Anacardos (remojados durante 4 horas)
  • Agua (aproximadamente la mitad del volumen de anacardos)
  • 2 cucharaditas de zumo de limón
  • 2 cucharaditas de sirope de arce o azúcar de coco
  • Vainilla fresca al gusto
  • Probióticos (de farmacia, en cápsulas o frescos)


Preparación

  1. Tritura los anacardos escurridos con el agua a máxima potencia hasta obtener una textura completamente suave y cremosa.
  2. Añade el zumo de limón, el endulzante y la vainilla, y vuelve a triturar.
  3. Incorpora los probióticos y mezcla bien. Y ya lo tienes.

Lately, I feel more and more drawn back to the basics.

To those simple recipes that don’t catch your eye at first glance, but are actually the foundation of so many others. The kind that used to be made at home routinely, almost without thinking… and that, without even realising it, we’ve replaced with supermarket versions.

For convenience, for speed… but losing quality and nutrients along the way.

Many of these basic recipes are, in fact, surprisingly easy to make at home. You don’t need an endless list of ingredients or complicated techniques. And in exchange for that little bit of time in the kitchen, you gain quality… and the peace of knowing exactly what you’re eating.

This homemade vegan yogurt is a great example.

There’s nothing complicated about it.
But it has everything to do with going back to the origin.

It’s made with cashews, which give it that wonderfully creamy texture and will suit you beautifully, since it contains no lactose. A little lemon gives it that tangy note that reminds you of traditional yogurt. The sweetness and vanilla balance everything out… and there’s one small detail that makes all the difference: probiotics.

That simple step turns it into a living food, made to care for your microbiota.

And the best part is that, when you make it at home, you can adapt it completely to your taste. Thicker, smoother, sweeter or less sweet… until you find your own version. You can have it on its own, with fruit, with granola, or use it as a base for other recipes.

But what’s interesting is not just the result.

It’s realising how easy it is to bring these kinds of basics back into your home… and how good it feels to do it. To the point where there comes a moment when buying it outside simply no longer makes sense.

Homemade vegan cashew yogurt

Ingredients

  • Cashews (soaked for 4 hours)
  • Water (approximately half the volume of the cashews)
  • 2 teaspoons lemon juice
  • 2 teaspoons maple syrup or coconut sugar
  • Fresh vanilla to taste
  • Probiotics (from the pharmacy, in capsules or fresh)


Method

  1. Blend the drained cashews with the water at high speed until completely smooth and creamy.
  2. Add the lemon juice, sweetener and vanilla, and blend again.
  3. Add the probiotics and mix well. And that’s it.

Crepes de harina de garbanzo

Después de tantos días de recetas dulces, especiadas y con sabor a Navidad… hoy cambiamos un poco el chip. Porque también hay mañanas en diciembre en las que el cuerpo pide algo salado, saciante y con buena dosis de proteína.

En estos días y, como muchas de vosotras, tengo por delante gestiones infinitas, recados navideños, carreras con los niños, colas para ver a los pajes reales, listas de cosas por hacer… En resumen: días en los que sé que no voy a parar y necesito un desayuno que me ayude a mantener ese ritmo, sin dejarme sin energía a media mañana.

Hoy me he acordado de una de las recetas de mi querida @oh.mamiblue y no he podido resistirme a prepararla. En esta ocasión he acompañado mis crepes de harina de garbanzo con unos espárragos verdes y huevos pasados por agua para incluir una buena dosis de fibra y compensar así los excesos que se avecinan.

También es una receta perfecta para cocinar con los más pequeños: les encanta preparar crepes, se entretienen mientras pasáis tiempo juntos y, además, se acostumbran a probar opciones más saludables y llenas de sabor.

Y como siempre, puedes adaptarla a tu gusto:
– Añade aguacate, tofu marinado o unas setas salteadas.
– Sustituye la sojanesa por hummus o crema de anacardos si prefieres variar.

Como ves, es una receta ideal si hay personas intolerantes al gluten y/o lactosa en casa y queréis compartir un desayuno en familia.

Crepes de harina de garbanzo

Ingredientes

Crepes

  • 1 taza (250 ml) de agua
  • 2 tazas de harina de garbanzos
  • Sal, ajo en polvo, cúrcuma (opcional) y pimienta al gusto
  • Unas gotas de aceite de oliva virgen extra para la sartén

Sojanesa

  • 100 ml de bebida de soja sin azúcar
  • 200 ml de aceite de girasol o de oliva suave
  • 1 cucharada de zumo de limón o vinagre de manzana
  • ½ cucharadita de sal
  • 1 cucharadita de mostaza (opcional)

Elaboración

Crepes

  1. En un bol, mezcla el agua con la harina de garbanzos hasta obtener una masa lisa y sin grumos.
  2. Añade sal, ajo en polvo, cúrcuma si la usas y pimienta al gusto, y mezcla de nuevo hasta integrar.
  3. Calienta una sartén antiadherente a fuego medio con unas gotas de aceite de oliva.
  4. Vierte aproximadamente 1/4 de taza de la masa y mueve la sartén para formar una capa fina.
  5. Deja que se dore por un lado, despega con cuidado los bordes y dale la vuelta para cocinar el otro lado.
  6. Repite el proceso con el resto de la masa. Sirve las crepes con sojanesa y las verduras que más te gusten, o con espárragos verdes y huevos pasados por agua.

Sojanesa

  1. Añade todos los ingredientes al vaso de la batidora en el orden indicado.
  2. Bate con el brazo apoyado en el fondo del vaso, sin moverlo, hasta que emulsione.
  3. Luego sube y baja suavemente el brazo para integrar todo.
  4. Ajusta el sabor si hace falta.
  5. Guárdala en la nevera y úsala durante 4–5 días.

After so many days of sweet, spiced, Christmas-flavoured recipes, today we’re switching things up a bit. Because there are also December mornings when your body craves something savoury, filling and with a good dose of protein.

These days, like many of you, I have endless errands ahead of me: Christmas shopping, running around with the kids, queues to see the Three Kings’ pages, to-do lists that never end… In short, days when I know I won’t stop and I need a breakfast that helps me keep up the pace without running out of energy mid-morning.

Today I remembered one of my dear friend @oh.mamiblue’s recipes and couldn’t resist making it. This time, I served my chickpea flour crepes with green asparagus and soft-boiled eggs to add fibre and gently balance out all the festive indulgence.

It’s also a perfect recipe to make with kids: they love preparing crepes, it keeps them entertained while you spend quality time together, and they slowly get used to healthier, flavour-packed options.

And as always, you can adapt it to your taste:
– Add avocado, marinated tofu or sautéed mushrooms.
– Swap the soya mayo for hummus or cashew cream if you prefer.

It’s an ideal recipe if someone at home is intolerant to gluten and/or dairy and you still want to enjoy a cosy family breakfast together.

Chickpea Flour Crepes

Ingredients

Crepes

  • 1 cup (250 ml) water
  • 2 cups chickpea flour
  • Salt, garlic powder, turmeric (optional) and pepper, to taste
  • A few drops of extra virgin olive oil for the pan

Soya Mayo

  • 100 ml unsweetened soy milk
  • 200 ml sunflower oil or mild olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • ½ teaspoon salt
  • 1 teaspoon mustard (optional)

Instructions

Crepes

  1. In a bowl, whisk the water and chickpea flour until smooth and lump-free.
  2. Add salt, garlic powder, turmeric if using, and pepper to taste. Mix again until combined.
  3. Heat a non-stick pan over medium heat with a few drops of olive oil.
  4. Pour about 1/4 cup of batter into the pan and swirl to create a thin layer.
  5. Let it brown on one side, gently loosen the edges and flip to cook the other side.
  6. Repeat with the remaining batter. Serve with soya mayo and your favourite vegetables, or with green asparagus and soft-boiled eggs.

Soya Mayo

  1. Add all the ingredients to the blender jug in the order listed.
  2. Place the immersion blender at the bottom and blend without moving it until emulsified.
  3. Then gently move the blender up and down to fully combine.
  4. Adjust seasoning if needed.
  5. Store in the fridge and use within 4–5 days.

Crêpes bretonas o Galettes (sin gluten y sin lactosa)

A pesar de haber viajado casi una decena de veces a Francia, creo que mi país predilecto para viajar, nunca me había percatado que existían dos tipos de crêpes, las normales (que se usan para las recetas dulces, con harina de trigo, huevo, leche, etc) y las crepes bretonas, hechas con trigo sarraceno, sin gluten y sin lactosa. Quizá fue porque nunca había viajado a Bretaña y en el resto del país no son tan populares...

Tarta de chocolate sin lactosa



Desde hace un tiempo, muchos de vosotros me venís preguntado cómo podéis hacer mis postres aptos para intolerantes a la lactosa. Por lo visto cada vez hay más gente intolerante a la lactosa, de hecho hay gente que tiene esta intolerancia y todavía no se le ha diagnosticado, es por esto que a muchos de nosotros, entre los que me incluyo, nos siente mal beber leche, algo que se nota hasta cuando tomas un pastel que lleva este ingrediente.

Cookies de chocolate veganas


Empecemos por el principio de estas cookies de chocolate veganas... seguramente muchos de vosotros no sepáis lo que significa "vegano", quizás hayáis oído hablar de ello y sepáis que tiene algo que ver con el vegetarianismo... En realidad es una especie de vegetariano pero que no come ningún producto animal. Los veganos evitan la carne (incluyendo el pollo y el pescado al igual que los vegetarianos); pero además evitan el huevo, la leche y productos lácteos, la mantequilla, la gelatina e inclusive la miel de abeja. Cualquier alimento que sea de origen animal se rechaza en la dieta vegana.

Hace años conocí a Toni Rodríguez, el chef pastelero de Lujuria Vegana, he tenido la suerte de asistir a un par de cursos suyos (os aseguro que no serán los últimos) y os tengo que decir que es un auténtico genio de la repostería, no sólo hace pasteles, cupcakes, galletas y demás postres sin huevo ni lácteos, sino que son de los mejores que he probado jamás, creedme, no miento.
