Paté vegano de boniato y lenteja


Si hoy abrieras la nevera de mi casa, hay muchas posibilidades de que encontraras un tarro de este paté, incluso si estamos en una casa de vacaciones.

Y está ahí simplemente porque forma parte de nuestra vida.

Durante el curso tiene un destino bastante claro: la merienda de Lucas. Es, con diferencia, una de sus favoritas para llevar al colegio y, cada vez que el tarro se termina, sé que no tardará mucho en preguntarme cuándo vuelvo a prepararlo.

Pero cuando llega el verano, ese mismo tarro cambia de misión. Pasa de la mochila del colegio a la nevera portátil.

Nos acompaña a la playa, a la piscina, a un picnic improvisado o cuando salimos a navegar. Y siempre ocurre lo mismo, alguien abre el tarro, busca una buena barra de pan y, casi sin hablar, van pasando de mano en mano hasta que empiezan a desaparecer las rebanadas y el tarro se ve cada vez más vacío.

Creo que ese es el mejor piropo que puede recibir una receta.

Que nadie pregunte qué lleva. Solo dónde está el cuchillo para volver a untar otra rebanada.

Posiblemente, a estas alturas te estés preguntando qué esconde este tarrito para que guste tanto. Y la respuesta es fácil, está lleno de ingredientes que realmente aportan cosas interesantes.

La proteína vegetal de la lenteja roja que, combinada con un buen pan integral, mejora todavía más su perfil proteico, los anacardos, ricos en grasas mono y poliinsaturadas y minerales, y el boniato, que aporta fibra, vitamina A, vitamina C, ácido fólico, potasio y ese punto ligeramente dulce que hace que el conjunto resulte todavía más apetecible.

Al final, casi sin darte cuenta, tienes un paté vegano con proteína, verduras, frutos secos y muchísimo sabor y que, contra todo pronóstico, te va a chiflar.

Creo que esa es la verdadera razón por la que nunca falta en nuestra nevera.

Porque puedes prepararlo con antelación, aguanta perfectamente varios días y sirve igual de bien para una merienda, un aperitivo antes de comer, una cena ligera o para picar algo rico después de un baño.

Es una de esas recetas que simplemente funcionan. Y, cuando una receta consigue eso, termina convirtiéndose en un básico de casa.

Paté de boniato y lentejas

Ingredientes

  • 1 cebolla pequeña o chalota
  • ½ diente de ajo
  • 140 g de lentejas rojas
  • 1 boniato pequeño o medio grande
  • ½ taza de anacardos activados (dejados en remojo al menos 4 horas o bien 15 minutos en agua hirviendo)
  • 1 cucharadita de pimentón
  • 1 cucharadita de cúrcuma
  • 2 cucharaditas de aceite de oliva virgen extra
  • Sal y pimienta negra recién molida
  • 1 cucharadita de vinagre de vino tinto
  • Pan de calidad para untar


Elaboración

  1. Saltea la cebolla y el ajo en un cazo con un poco de aceite hasta que la cebolla esté translúcida.
  2. Añade las lentejas y el boniato troceado y cubre con agua. Hierve durante 15 minutos o hasta que el boniato esté blando.
  3. Tritura junto con el resto de los ingredientes.
  4. Rectifica de sal y pimienta y sirve untado sobre una tostada de un buen pan (recordad que sea siempre integral, con al menos un 70 % de harina integral, mejor de espelta o centeno).

If you opened my fridge today, there’s a very good chance you’d find a jar of this pâté inside, even if we happened to be staying at a holiday home.

And it’s there simply because it has become part of our everyday life.

During the school year, it has a very clear purpose: Lucas’s afternoon snack. It is, by far, one of his favourite things to take to school and, every time the jar runs out, I know it won’t be long before he asks when I’m going to make it again.

But once summer arrives, that same jar takes on a new role. It moves from the school backpack to the cool box.

It comes with us to the beach, the pool, an impromptu picnic or a day out sailing. And the same thing always happens: someone opens the jar, finds a good loaf of bread and, almost without saying a word, everything starts being passed from hand to hand until the slices begin to disappear and the jar looks emptier and emptier.

I think that’s the best compliment a recipe can receive.

Nobody asks what’s in it. They only want to know where the knife is so they can spread some more onto another slice.

By now, you’re probably wondering what’s hiding inside this little jar that makes everyone love it so much. And the answer is simple: it’s packed with ingredients that genuinely have something interesting to offer.

There’s the plant-based protein from the red lentils, which has an even better protein profile when paired with good wholegrain bread; the cashews, rich in mono- and polyunsaturated fats and minerals; and the sweet potato, which adds fibre, vitamin A, vitamin C, folic acid, potassium and that slightly sweet flavour that makes the whole thing even more irresistible.

In the end, almost without realising it, you have a vegan pâté packed with protein, vegetables, nuts and loads of flavour which, against all expectations, you’re going to absolutely love.

I think that’s the real reason it’s never missing from our fridge.

You can make it ahead of time, it keeps perfectly for several days and works just as well as an afternoon snack, an appetiser before lunch, a light dinner or something tasty to nibble on after a swim.

It’s one of those recipes that simply works. And when a recipe manages to do that, it eventually becomes a household staple.

Sweet potato and lentil pâté

Ingredients

  • 1 small onion or shallot
  • ½ garlic clove
  • 140 g red lentils
  • 1 small or ½ large sweet potato
  • ½ cup activated cashews (soaked for at least 4 hours, or for 15 minutes in boiling water)
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 teaspoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon red wine vinegar
  • Good-quality bread, for spreading


Method

  1. Sauté the onion and garlic in a saucepan with a little oil until the onion becomes translucent.
  2. Add the lentils and chopped sweet potato, then cover with water. Boil for 15 minutes or until the sweet potato is soft.
  3. Blend together with the remaining ingredients.
  4. Adjust the seasoning with salt and black pepper and serve spread over a slice of good bread (always choose wholegrain bread containing at least 70% wholemeal flour, preferably spelt or rye).

Postre de chocolate


Hoy te cuento un pequeño truco al que recurro para disfrutar mucho más del verano. Y no tiene nada que ver con madrugar para coger sitio en la playa, ni con encender el aire acondicionado antes de llegar a casa.

Tiene que ver con abrir la nevera después de una mañana de piscina o de un día entero de playa y saber que ya tienes el postre esperándote. Y un postre más saludable que cualquiera que puedas encontrar en un chiringuito.

Nada de niños pidiendo algo dulce de forma insistente. Ni tener que cocinar con treinta y tantos grados en la cocina. Solo abrir la nevera, coger una cucharilla y disfrutar.

No sé a ti, pero en verano lo único que me apetecen son recetas que se preparen en un momento y luego hagan todo el trabajo ellas solas mientras están en la nevera. Y esta cumple todos los requisitos y, encima, ¡está riquísima!


Tiene una textura suave y cremosa, un intenso sabor a cacao y el punto justo de dulzor para que resulte ligera a pesar del chocolate.


Y aquí llega el segundo truco del día, que creo que todavía vas a agradecer más.

Puedes preparar varias raciones de una sola vez y olvidarte del postre durante unos días.

Si tienes invitados o simplemente te gusta cuidar la presentación para que tus platos entren también por la vista, puedes añadirle unos frutos rojos, unas virutas de chocolate o unas hojas de menta justo antes de servir. Queda precioso y no tardas más de un minuto.

Aquí en casa, la mayoría de las veces no llega a tanto. Lo habitual es desmoldar, coger una cuchara... y desaparecer. Así de rápido, un visto y no visto.

Postre cremoso de chocolate

Ingredientes

  • 80 ml de agua fría
  • 2 láminas de gelatina
  • 500 ml de nata líquida
  • 80 g de azúcar de coco
  • 2 cucharaditas de extracto de vainilla
  • 110 g de cacao en polvo
  • 180 ml de leche entera


Elaboración

  1. Empieza hidratando las láminas de gelatina en el agua fría.
  2. Mezcla en un cazo todos los ingredientes excepto la leche y la gelatina. Lleva a ebullición mientras remueves continuamente.
  3. Añade la gelatina hidratada y remueve de nuevo a fuego bajo durante un minuto, hasta que se disuelva por completo.
  4. Pasa la mezcla por un colador, añade la leche entera y remueve bien.
  5. Reparte la mezcla en moldes individuales y deja enfriar en la nevera durante un mínimo de 4 a 6 horas.

Today I’m sharing a little trick I rely on to enjoy summer that bit more. And it has nothing to do with getting up early to claim a spot on the beach or switching on the air conditioning before you get home.

It’s all about opening the fridge after a morning by the pool or a full day at the beach and knowing that dessert is already there waiting for you. And a healthier dessert than anything you’re likely to find at a beach bar.

No children repeatedly asking for something sweet. No cooking in a kitchen that’s well over thirty degrees. Just open the fridge, grab a spoon and enjoy.

I don’t know about you, but in summer I only want recipes that come together in minutes and then quietly do all the work themselves while they sit in the fridge.

And this one ticks every box. Plus, it’s absolutely delicious.

It has a smooth, creamy texture, a rich cocoa flavour and just enough sweetness to keep it feeling light, despite all that chocolate.

And here comes the second trick of the day, which I think you’re going to appreciate even more.

You can prepare several portions at once and forget about dessert for the next few days.

If you have guests, or you simply like your food to look as good as it tastes, add a few berries, some chocolate shavings or a couple of mint leaves just before serving. It looks beautiful and takes less than a minute.

At home, most of the time, it doesn’t even get that far. Usually, it’s unmould, grab a spoon... and gone. Blink and you’ll miss it.

Creamy chocolate dessert

Ingredients

  • 80 ml cold water
  • 2 gelatine leaves
  • 500 ml whipping cream
  • 80 g coconut sugar
  • 2 teaspoons vanilla extract
  • 110 g cocoa powder
  • 180 ml whole milk


Method

  1. Start by soaking the gelatine leaves in the cold water.
  2. Place all the ingredients except the milk and gelatine in a saucepan. Bring to the boil, stirring continuously.
  3. Add the soaked gelatine and continue stirring over a low heat for one minute, until completely dissolved.
  4. Pass the mixture through a sieve, add the whole milk and stir well.
  5. Pour the mixture into individual moulds and leave to set in the fridge for at least 4 to 6 hours.

Rollitos de calabacín rellenos de ricotta y kale


Si el calabacín te aburre, es porque nunca lo has comido así.

Puede sonar a una afirmación un poco arriesgada, pero espera a probar estos “canelones” sin pasta y luego hablamos.

Porque tengo una teoría. No existen los ingredientes aburridos, somos nosotros los que nos empeñamos en prepararlos siempre de la misma forma. Hervidos, a la plancha, en crema… y vuelta a empezar. Hasta que un día decides darles una oportunidad diferente y ocurre esto.

Láminas finas de calabacín convertidas en pequeños rollitos y rellenas de una mezcla increíblemente cremosa de ricotta, kale, espinacas, menta y limón. Todo sobre una buena base de tomate, un poco de mozzarella por encima y directo al horno hasta que empieza a burbujear y dorarse.

¿El resultado? Los “canelones” sin pasta que vas a querer hacer en bucle. Aunque ¡ojo!, hay un detalle que puede marcar la diferencia entre el éxito absoluto y encontrarte una piscina de agua en el fondo de la fuente.

El kale.

Después de escaldarlo, tienes que escurrirlo como si te fuera la vida en ello. Y cuando creas que ya no puede salir más agua, aprieta otra vez.

Este paso es clave para conseguir un relleno cremoso y con la textura perfecta.

A partir de ahí, la receta es fácil, fácil.

Mezclas el relleno, enrollas las láminas de calabacín, las colocas bien juntitas sobre el tomate, rellenas los rollitos de calabacín con la mezcla de ricotta y verduras, añades la mozzarella y dejas que el horno se ocupe del resto.

No es pasta, pero lo parece y están espectaculares de buenos.

Además, es una de esas recetas que consiguen algo maravilloso: que un plato lleno de verduras deje de sentirse como “un plato de verduras”. Porque para cuando los sirves, nadie piensa en el kale, las espinacas o los tres calabacines que acabas de poner sobre la mesa. Están demasiado ocupados intentando coger el siguiente rollito.

Rollitos de calabacín rellenos de ricotta y kale

Ingredientes

Para un molde de 22 x 30 cm:

  • 200 g de hojas de kale frescas sin tallo (escaldadas y MUY bien escurridas, apriétalas con las manos hasta sacar toda el agua, esto es clave)
  • 2 huevos
  • 360 g de ricotta fresca
  • 50 g de espinacas baby troceadas
  • ¼ taza de menta fresca picada
  • 2 cucharaditas de ralladura de limón
  • 3-4 calabacines en láminas finas a lo largo, cortados con mandolina a ser posible (unas 24 láminas)
  • 500 ml de tomate triturado o tomate frito
  • 50 g de mozzarella rallada


Elaboración

  1. Precalienta el horno a 180ºC.
  2. Escalda el kale (hierve 2 minutos y pasa a agua helada), escúrrelo y apriétalo bien hasta que no suelte ni una gota. Pícalo fino y ponlo en un bol grande.
  3. Añade los huevos, la ricotta, las espinacas, la menta, la ralladura, sal y pimienta. Mezcla bien.
  4. Pon una cucharada colmada de relleno en el extremo de cada lámina de calabacín y enrolla.
  5. Vierte el tomate en la fuente y coloca los rollitos bien juntitos.
  6. Espolvorea la mozzarella y hornea 30 minutos o hasta que esté dorado.
  7. Deja templar un poco antes de servir (si puedes esperar 😅).

If you think courgettes are boring, it’s because you’ve never eaten them like this.

That might sound like a slightly bold statement, but wait until you’ve tried these pasta-free “cannelloni” and then we’ll talk.

Because I have a theory. There’s no such thing as a boring ingredient. The problem is that we insist on cooking the same ingredients in exactly the same way. Boiled, grilled, blended into soup… and then we start all over again. Until one day, you decide to give them a completely different chance and this happens.

Thin slices of courgette turned into little rolls and filled with an incredibly creamy mixture of ricotta, kale, spinach, mint and lemon. Everything sits on a generous layer of tomato sauce, with a little mozzarella scattered over the top, then goes straight into the oven until it starts bubbling and turning golden.

The result?

The pasta-free “cannelloni” you’re going to want to make on repeat.

But be warned! There’s one small detail that can make the difference between absolute success and finding a swimming pool of water at the bottom of your baking dish.

The kale.

Once you’ve blanched it, you need to squeeze out the water as if your life depended on it. And when you think there couldn’t possibly be any water left, squeeze it again.

This step is key if you want a creamy filling with the perfect texture.

From there, the recipe couldn’t be easier.

Mix the filling, roll up the courgette slices, arrange them snugly over the tomato sauce, fill the courgette rolls with the ricotta and vegetable mixture, add the mozzarella and let the oven take care of the rest.

It’s not pasta, but it certainly looks the part, and they’re seriously delicious.

And this is also one of those recipes that manages to do something wonderful: it makes a plate full of vegetables stop feeling like “a plate full of vegetables”. Because by the time you serve it, nobody is thinking about the kale, the spinach or the three courgettes you’ve just put on the table. They’re far too busy trying to grab the next roll.

Courgette rolls with ricotta and kale

Ingredients

For a 22 x 30 cm baking dish:

  • 200 g fresh kale leaves, stems removed (blanched and VERY well drained — squeeze them with your hands until you’ve removed all the water, this is key)
  • 2 eggs
  • 360 g fresh ricotta
  • 50 g baby spinach, chopped
  • ¼ cup fresh mint, chopped
  • 2 teaspoons lemon zest
  • 3-4 courgettes, thinly sliced lengthways, preferably using a mandoline (about 24 slices)
  • 500 ml crushed tomatoes or tomato sauce
  • 50 g grated mozzarella


Method

  1. Preheat the oven to 180ºC.
  2. Blanch the kale (boil for 2 minutes, then transfer to ice-cold water), drain it and squeeze it really well until there isn’t a drop of water left. Finely chop it and place it in a large bowl.
  3. Add the eggs, ricotta, spinach, mint and lemon zest, then season with salt and pepper. Mix well.
  4. Place a heaped tablespoon of filling at one end of each courgette slice and roll it up.
  5. Pour the tomato sauce into the baking dish and arrange the rolls snugly together on top.
  6. Sprinkle with the mozzarella and bake for 30 minutes or until golden.
  7. Leave to cool slightly before serving (if you can wait 😅).

Receta básica de pizza de coliflor y semillas de calabaza


Partimos de la base de que la pizza… es otra cosa pero oye, ésta da el pego muchísimo y además, es apta para low carb y keto.

Y creo que precisamente ahí está el secreto para disfrutar de esta receta.

Porque cada vez que una receta saludable intenta convencerte de que es igual que la original, es más que probable que termine decepcionando.

No te voy a mentir. La primera vez que la preparé tuve mis dudas. Pensaba que acabaría deshaciéndose o que el sabor de la coliflor sería el protagonista absoluto.

Pero no, me equivoqué.

La mezcla de las semillas de calabaza, el parmesano y los huevos consigue una base firme, sabrosa y con una textura que sorprende muchísimo. Lo suficiente como para que sea una de esas recetas que te vienen a la cabeza cuando te apetece una cena ligera, pero con la sensación de estar comiendo algo un poco más especial.

Esta base de coliflor es una forma diferente y deliciosa de comer más verduras.

Y luego, con los ingredientes de encima, todavía suma más puntos.

En esta ocasión la preparé con carpaccio de remolacha, unas acelgas, queso de cabra y un chorrito de reducción de aceto balsámico de Módena. Y solo unos minutos más de horno para fundir el queso y… ¡lista!

También está riquísima con verduras asadas, champiñones, tomates, pesto, burrata o lo que tengas ese día en la nevera.

Y sí… la pizza sigue siendo la pizza.

Pero esta receta es un buen as en la manga cuando te apetece pizza, pero una versión más saludable y menos pesada que la tradicional.

Base de pizza de coliflor básica

Ingredientes

  • 1 taza (160 g) de semillas de calabaza
  • 600 g flores de coliflor, picadas en trozos grandes
  • 2 cucharadas de levadura nutricional (opcional)
  • 3 huevos, ligeramente batidos
  • ½ taza (40 g) de parmesano rallado
  • Sal marina y pimienta negra molida


Elaboración

  1. Precalienta el horno a 200ºC.
  2. Empieza moliendo las semillas de calabaza en una batidora.
  3. Añade el resto de ingredientes y vuelve a triturar.
  4. Forma dos bases de pizza redondas en una bandeja de horno con papel de hornear (yo hice dos tandas pues no me cabían en una bandeja). Hornea durante 20 minutos a 200ºC calor arriba y abajo.
  5. Esta vez la he hecho con carpaccio de remolacha (laminada en la mandolina), acelgas, queso de cabra y reducción de aceto balsámico de Módena. Un golpe de horno para fundir el queso y listos!

Let’s start from the fact that pizza… is something else, but honestly, this one really does the trick and, on top of that, it’s suitable for low carb and keto.

And I think that’s exactly the secret to enjoying this recipe.

Because every time a healthy recipe tries to convince you that it’s exactly like the original, chances are it will end up disappointing you.

I won’t lie to you. The first time I made it, I had my doubts. I thought it would fall apart or that the cauliflower flavour would completely take over.

But no, I was wrong.

The combination of pumpkin seeds, Parmesan and eggs creates a firm, tasty base with a texture that is genuinely surprising. Enough for it to become one of those recipes that comes to mind when you fancy a light dinner, but something a little different and special from the usual.

This cauliflower base is a different and delicious way to eat more vegetables.

And then, with the toppings, it scores even more points.

This time I made it with beetroot carpaccio, some chard, goat’s cheese and a drizzle of Modena balsamic reduction. Then just a few more minutes in the oven to melt the cheese and… done!

It’s also delicious with roasted vegetables, mushrooms, tomatoes, pesto, burrata or whatever you happen to have in the fridge that day.

And yes… pizza is still pizza.

But this recipe is a great ace up your sleeve when you’re craving pizza, but want a healthier and lighter version than the traditional one.

Basic cauliflower pizza base

Ingredients

  • 1 cup (160 g) pumpkin seeds
  • 600 g cauliflower florets, roughly chopped
  • 2 tablespoons nutritional yeast (optional)
  • 3 eggs, lightly beaten
  • ½ cup (40 g) grated Parmesan
  • Sea salt and ground black pepper


Method

  1. Preheat the oven to 200ºC.
  2. Start by grinding the pumpkin seeds in a blender.
  3. Add the rest of the ingredients and blend again.
  4. Shape two round pizza bases on a baking tray lined with baking paper (I did it in two batches because they didn’t fit on one tray). Bake for 20 minutes at 200ºC, with heat from above and below.
  5. This time I made it with beetroot carpaccio (thinly sliced with a mandoline), chard, goat’s cheese and Modena balsamic reduction. A quick blast in the oven to melt the cheese and done!

Bizcocho de limón

Después de un enero de vuelta a las rutinas, comidas ligeras, batidos llenos de fruta, caldos, cremas suaves y verduras al vapor…
lo confieso: echaba de menos encender el horno.

Volver a la repostería es, de algún modo, volver a mi esencia. A ese lugar donde empezó todo.
No para empacharnos de azúcar ni hacer tartas imposibles.
Sino para hornear ese tipo de dulces que perfuman la cocina, acompañan una tarde tranquila y te recuerdan que estás en casa.

Y este bizcocho de limón es exactamente eso.

La receta original partió del famoso lemon cake de Starbucks que versionó @lasrecetasdemj, y que con los años he ido adaptando a mi manera: menos azúcar, harinas más suaves, sin gluten, y ese equilibrio ácido-dulce que consigue que quieras otro trozo. Y luego otro.

Estos días en los que estamos encadenando tanta lluvia y cielos grises, he empezado a soñar con el verano.
Y no sé por qué, pero los limones siempre me lo recuerdan.
Su olor, su color, su forma de iluminar y refrescar cualquier receta.
Así que me pareció el momento perfecto para recuperar este bizcocho y traer un pedacito de esa estación que parece lejana, pero cada vez está más cerca.

Es un bizcocho jugoso, con el dulzor justo, que puedes dejar tal cual o coronar con un glaseado cítrico que le da ese efecto wow al primer bocado.

Una de esas recetas que conviene guardar bien, en un lugar fácil de encontrar, porque vas a querer repetirla una y otra vez.

Bizcocho de limón

Ingredientes

  • 130g de harina de arroz
  • 100g de harina de avena
  • 2 cucharaditas de levadura química
  • 1 cucharadita de bicarbonato
  • Una pizca de sal
  • 90g de azúcar de coco
  • 3 huevos L
  • 90 g de mantequilla sin sal a temperatura ambiente
  • 80 g de nata fresca o yogur griego
  • Zumo de 1 limón
  • Ralladura de 2 limones eco

Ingredientes para el glaseado (opcional):

  • 150 g de azúcar glas
  • Zumo de 1/2 limón
  • Ralladura de limón

Preparación

  1. Precalienta el horno a 200ºC.
  2. Mezcla los ingredientes secos. Las harinas, la sal, la levadura y el bicarbonato sódico. Reserva.
  3. Bate con unas varillas la mantequilla a temperatura ambiente junto con el azúcar. Echa uno a uno los huevos mientras vas batiendo.
  4. Añade la nata o yogur, zumo de limón y ralladura. Sigue batiendo.
  5. Añade la mezcla de harinas a la mezcla anterior con unas varillas manuales y sin incorporar mucho aire.
  6. Engrasa un molde de plum cake y fórralo con papel de hornear.
  7. Hornea bajando la temperatura a 175 ºC durante 45–55 minutos.
  8. Deja enfriar 5 minutos, desmolda y deja sobre una rejilla.
  9. Prepara el glaseado mezclando el azúcar con el zumo de limón y enfría 20 minutos.

After a January of getting back into routines — lighter meals, fruit-packed smoothies, broths, silky soups and steamed vegetables… I’ll admit it: I missed turning on the oven.

Going back to baking is, in a way, going back to my essence. To where everything began. Not to overload ourselves with sugar or make impossible cakes, but to bake the kind of treats that perfume the kitchen, accompany a quiet afternoon and remind you that you’re home.

And this lemon loaf is exactly that.

The original recipe was inspired by the famous Starbucks lemon cake recreated by @lasrecetasdemj, which over the years I’ve adapted in my own way: less sugar, gentler flours, gluten-free, and that sweet-tangy balance that makes you want another slice. And then another.

These rainy, grey days have made me start dreaming of summer. And for some reason, lemons always remind me of it. Their scent, their colour, the way they brighten any recipe.

The result is a moist loaf with just the right sweetness, delicious on its own or topped with a citrus glaze that gives that first-bite wow effect.

One of those recipes worth keeping close — because you’ll want to make it again and again.

Receta low carb de falsos espaguetis de calabacín con Pesto de romanescu



Si has leído o visto mis primeros posts de este 2026, habrás notado que me he empeñado en compartir recetas saludables para ayudarte a empezar el año cuidándote.
Y si pensabas que comer sano era aburrido o poco apetecible… vengo a demostrarte justo lo contrario.

Porque no hace falta renunciar al sabor, ni pasar horas en la cocina, ni repetir las mismas recetas de siempre.
Este plato es ligero, rápido, lleno de color y con una combinación de sabores que reconforta y alegra a partes iguales.

El calabacín en forma de espagueti queda crujiente y fresco, el bacon o jamón le da ese toque salado que engancha, y el pesto… bueno, el pesto es otra historia. ¿Hay alguien que se resista a un buen pesto? Desde luego yo no.

Lo preparo con romanescu (aunque puedes usar brócoli), piñones, limón, parmesano y un buen aceite de oliva virgen extra.
Una mezcla untuosa, con ese punto cítrico y de albahaca o menta que lo hace, créeme, absolutamente irresistible.

Si estás buscando opciones más ligeras para la vuelta a la rutina, pero sin sacrificar el placer de comer bien, dale una oportunidad.
Es una receta low carb, sin gluten… ¿qué más se puede pedir?

Receta low carb de espaguetis de calabacín con pesto de romanescu

Ingredientes

  • 50 g de bacon o jamón en tiras
  • 1 ajo
  • 2 calabacines cortados con el “spiralizer” en forma de espagueti

Para el pesto

  • 1/2 romanescu (o 1/2 brócoli), unos 400 g
  • 60 g de piñones tostados
  • 1 diente de ajo machacado
  • 1 cucharadita de ralladura de limón
  • 2 cucharadas de zumo de limón (1 limón)
  • 50 ml de aceite de oliva virgen extra
  • 90 g de parmesano rallado
  • Un puñado de hojas de albahaca o menta
  • Sal y pimienta negra

Preparación

  1. Salteamos el ajo y el bacon y reservamos. Lo volvemos a calentar con los espagueti cuando ya tengamos el pesto listo.
  2. Hervimos el romanescu unos 6 minutos y frenamos la cocción en agua helada.
  3. Trituramos junto con el aceite, parmesano, zumo de limón, ralladura, ajo, piñones, albahaca, sal y pimienta. No triturar demasiado para que no quede como un puré.
  4. Calentamos 1 minuto los espagueti con el bacon y el ajo y añadimos pesto al gusto. Espolvoreamos con parmesano y servimos.

If you’ve read or seen my first posts of 2026, you may have noticed that I’ve been very focused on sharing healthy recipes to help you start the year taking care of yourself.
And if you thought eating well was boring or unappealing… I’m here to prove you wrong.

You don’t need to give up flavour, spend hours in the kitchen, or repeat the same recipes over and over again.
This dish is light, quick, colourful and full of comforting, uplifting flavours.

The zucchini cut into spaghetti stays crunchy and fresh, the bacon or ham adds that salty touch that keeps you coming back for more, and the pesto… well, the pesto is another story. Is there anyone who can resist a good pesto? I certainly can’t.

I make it with romanesco (though you can use broccoli), pine nuts, lemon, Parmesan and good extra virgin olive oil.
A creamy mixture with a citrusy note and a hint of basil or mint that makes it, trust me, absolutely irresistible.

If you’re looking for lighter options as you get back into routine, without giving up the pleasure of eating well, give it a try.
It’s a low carb, gluten-free recipe… what more could you ask for?


Low carb zucchini spaghetti with romanesco pesto

Ingredients

  • 50 g bacon or ham, cut into strips
  • 1 garlic clove
  • 2 zucchini, spiralized into spaghetti

For the pesto

  • 1/2 romanesco (or 1/2 broccoli), about 400 g
  • 60 g toasted pine nuts
  • 1 garlic clove, crushed
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice (1 lemon)
  • 50 ml extra virgin olive oil
  • 90 g grated Parmesan
  • A handful of basil or mint leaves
  • Salt and black pepper

Method

  1. Sauté the garlic and bacon, then set aside. Reheat them with the zucchini spaghetti once the pesto is ready.
  2. Boil the romanesco for about 6 minutes, then stop the cooking in ice-cold water.
  3. Blend with the olive oil, Parmesan, lemon juice and zest, garlic, pine nuts, basil, salt and pepper. Do not over-blend or it will turn into a purée.
  4. Heat the zucchini spaghetti with the bacon and garlic for 1 minute, add pesto to taste, sprinkle with Parmesan and serve.

Receta de tabulé con trigo sarraceno


Enero llega con su energía de empezar de cero.

Propósitos, listas, organización.
Ganas de cuidarse, de sentirnos bien, de volver al cuerpo… y a la rutina.

Y aunque no soy nada fan de las promesas radicales ni de los menús llenos de restricciones, sí me gusta llenar estos días de comidas que me hacen sentir bien.
Comidas ligeras, sabrosas, que nutren.

Como la sopa miso que te compartí hace unos días… o este tabulé de trigo sarraceno con vinagreta de menta.
Una receta inspirada en el libro de @teresacarles, que con el tiempo he ido adaptando hasta convertirla en un básico en casa.

Te va a encantar porque es perfecta para esos días de vuelta a la rutina, en los que quieres cuidarte sin caer en el aburrimiento del “pollo a la plancha con ensalada”.

No contiene gluten, es muy fácil de preparar y se conserva genial en la nevera. Ideal para tener lista una comida rica, fresca y saludable en cualquier momento.

Y si nunca has probado el trigo sarraceno, esta es una buena forma de empezar:
es una semilla (aunque lo llamemos trigo) rica en fibra, proteína vegetal y minerales como el magnesio, que ayuda a regular la energía y mejorar la digestión.
Su textura es suave y ligeramente terrosa, y combina de maravilla con verduras crujientes, aliños frescos y toppings como tempeh o tofu salteado.

Te adelanto que, si la pruebas, repites.
Porque te hace sentir ligera pero saciada.
Porque está llena de sabor.
Y porque te recuerda que cuidarse no es renunciar, sino elegir bien.

Tabulé versionado con trigo sarraceno

Ingredientes

  • 500g trigo sarraceno
  • Un par de puñados grandes de tomates cherry
  • 1 calabacín
  • 1 pimiento verde pequeño
  • 1/2 pimiento rojo
  • Hojas de menta
  • Aceite oliva virgencita extra
  • Zumo y ralladura de limón o vinagre de manzana
  • 1/2 ajo
  • Sal y pimienta
  • Tempeh o tofu o pollo marinado en tamari + comino

Preparación

  1. Lavamos el sarraceno, escurrimos y cocemos en Agua hirviendo con sal unos 18 minutos. Escurrimos y enfriamos.
  2. Cortamos todas las verduras (calabacines por separado) en dados pequeños.
  3. El calabacín lo coceremos 1 minuto en agua hirviendo y frenaremos la cocción enseguida en agua con hielo.
  4. Mezclamos las verduras y el sarraceno y preparamos la vinagreta de menta.
  5. Trituramos la menta, aceite, vinagre o limón, ajo y salpimentamos. Aliñamos la ensalada y servimos!

And even though I’m really not a fan of radical promises or menus full of restrictions, I do love filling these days with meals that make me feel good.
Light, tasty meals that nourish.

Like the miso soup I shared a few days ago… or this buckwheat tabbouleh with mint vinaigrette.
A recipe inspired by a book by @teresacarles, which I’ve adapted over time until it became a staple at home.

You’re going to love it because it’s perfect for those back-to-routine days when you want to take care of yourself without falling into the boredom of “grilled chicken with salad”.

It’s gluten-free, very easy to make, and keeps beautifully in the fridge. Ideal to have a delicious, fresh, healthy meal ready at any time.

And if you’ve never tried buckwheat, this is a great way to start:
it’s a seed (even though we call it “wheat”) that’s rich in fibre, plant protein and minerals like magnesium, which helps regulate energy and improve digestion.
Its texture is soft and slightly earthy, and it pairs wonderfully with crunchy vegetables, fresh dressings and toppings like tempeh or sautéed tofu.

I’ll warn you: if you try it, you’ll make it again.
Because it makes you feel light but satisfied.
Because it’s packed with flavour.
And because it reminds you that taking care of yourself isn’t about giving things up, but about choosing well.

Buckwheat tabbouleh (my twist)

Ingredients

  • 500 g buckwheat
  • A couple of generous handfuls of cherry tomatoes
  • 1 courgette (zucchini)
  • 1 small green pepper
  • 1/2 red pepper
  • Mint leaves
  • Extra virgin olive oil
  • Lemon juice and zest, or apple cider vinegar
  • 1/2 garlic clove
  • Salt and pepper
  • Tempeh or tofu, or chicken marinated in tamari + cumin

Method

  1. Rinse the buckwheat, drain, and cook in boiling salted water for about 18 minutes. Drain and cool.
  2. Dice all the vegetables into small cubes (keep the courgette separate).
  3. Boil the courgette for 1 minute, then stop the cooking immediately in ice water.
  4. Mix the vegetables with the buckwheat and prepare the mint vinaigrette.
  5. Blend the mint with the oil, vinegar or lemon, the garlic, then season with salt and pepper. Dress the salad and serve!

Crepes de harina de garbanzo

Después de tantos días de recetas dulces, especiadas y con sabor a Navidad… hoy cambiamos un poco el chip. Porque también hay mañanas en diciembre en las que el cuerpo pide algo salado, saciante y con buena dosis de proteína.

En estos días y, como muchas de vosotras, tengo por delante gestiones infinitas, recados navideños, carreras con los niños, colas para ver a los pajes reales, listas de cosas por hacer… En resumen: días en los que sé que no voy a parar y necesito un desayuno que me ayude a mantener ese ritmo, sin dejarme sin energía a media mañana.

Hoy me he acordado de una de las recetas de mi querida @oh.mamiblue y no he podido resistirme a prepararla. En esta ocasión he acompañado mis crepes de harina de garbanzo con unos espárragos verdes y huevos pasados por agua para incluir una buena dosis de fibra y compensar así los excesos que se avecinan.

También es una receta perfecta para cocinar con los más pequeños: les encanta preparar crepes, se entretienen mientras pasáis tiempo juntos y, además, se acostumbran a probar opciones más saludables y llenas de sabor.

Y como siempre, puedes adaptarla a tu gusto:
– Añade aguacate, tofu marinado o unas setas salteadas.
– Sustituye la sojanesa por hummus o crema de anacardos si prefieres variar.

Como ves, es una receta ideal si hay personas intolerantes al gluten y/o lactosa en casa y queréis compartir un desayuno en familia.

Crepes de harina de garbanzo

Ingredientes

Crepes

  • 1 taza (250 ml) de agua
  • 2 tazas de harina de garbanzos
  • Sal, ajo en polvo, cúrcuma (opcional) y pimienta al gusto
  • Unas gotas de aceite de oliva virgen extra para la sartén

Sojanesa

  • 100 ml de bebida de soja sin azúcar
  • 200 ml de aceite de girasol o de oliva suave
  • 1 cucharada de zumo de limón o vinagre de manzana
  • ½ cucharadita de sal
  • 1 cucharadita de mostaza (opcional)

Elaboración

Crepes

  1. En un bol, mezcla el agua con la harina de garbanzos hasta obtener una masa lisa y sin grumos.
  2. Añade sal, ajo en polvo, cúrcuma si la usas y pimienta al gusto, y mezcla de nuevo hasta integrar.
  3. Calienta una sartén antiadherente a fuego medio con unas gotas de aceite de oliva.
  4. Vierte aproximadamente 1/4 de taza de la masa y mueve la sartén para formar una capa fina.
  5. Deja que se dore por un lado, despega con cuidado los bordes y dale la vuelta para cocinar el otro lado.
  6. Repite el proceso con el resto de la masa. Sirve las crepes con sojanesa y las verduras que más te gusten, o con espárragos verdes y huevos pasados por agua.

Sojanesa

  1. Añade todos los ingredientes al vaso de la batidora en el orden indicado.
  2. Bate con el brazo apoyado en el fondo del vaso, sin moverlo, hasta que emulsione.
  3. Luego sube y baja suavemente el brazo para integrar todo.
  4. Ajusta el sabor si hace falta.
  5. Guárdala en la nevera y úsala durante 4–5 días.

After so many days of sweet, spiced, Christmas-flavoured recipes, today we’re switching things up a bit. Because there are also December mornings when your body craves something savoury, filling and with a good dose of protein.

These days, like many of you, I have endless errands ahead of me: Christmas shopping, running around with the kids, queues to see the Three Kings’ pages, to-do lists that never end… In short, days when I know I won’t stop and I need a breakfast that helps me keep up the pace without running out of energy mid-morning.

Today I remembered one of my dear friend @oh.mamiblue’s recipes and couldn’t resist making it. This time, I served my chickpea flour crepes with green asparagus and soft-boiled eggs to add fibre and gently balance out all the festive indulgence.

It’s also a perfect recipe to make with kids: they love preparing crepes, it keeps them entertained while you spend quality time together, and they slowly get used to healthier, flavour-packed options.

And as always, you can adapt it to your taste:
– Add avocado, marinated tofu or sautéed mushrooms.
– Swap the soya mayo for hummus or cashew cream if you prefer.

It’s an ideal recipe if someone at home is intolerant to gluten and/or dairy and you still want to enjoy a cosy family breakfast together.

Chickpea Flour Crepes

Ingredients

Crepes

  • 1 cup (250 ml) water
  • 2 cups chickpea flour
  • Salt, garlic powder, turmeric (optional) and pepper, to taste
  • A few drops of extra virgin olive oil for the pan

Soya Mayo

  • 100 ml unsweetened soy milk
  • 200 ml sunflower oil or mild olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • ½ teaspoon salt
  • 1 teaspoon mustard (optional)

Instructions

Crepes

  1. In a bowl, whisk the water and chickpea flour until smooth and lump-free.
  2. Add salt, garlic powder, turmeric if using, and pepper to taste. Mix again until combined.
  3. Heat a non-stick pan over medium heat with a few drops of olive oil.
  4. Pour about 1/4 cup of batter into the pan and swirl to create a thin layer.
  5. Let it brown on one side, gently loosen the edges and flip to cook the other side.
  6. Repeat with the remaining batter. Serve with soya mayo and your favourite vegetables, or with green asparagus and soft-boiled eggs.

Soya Mayo

  1. Add all the ingredients to the blender jug in the order listed.
  2. Place the immersion blender at the bottom and blend without moving it until emulsified.
  3. Then gently move the blender up and down to fully combine.
  4. Adjust seasoning if needed.
  5. Store in the fridge and use within 4–5 days.

Hay recetas que no necesitan presentación… pero merecen una historia. Y esta empieza, como muchas de las mejores cosas, con unos plátanos demasiado maduros y una tarde cualquiera en la que el cuerpo pide dulce, pero no azúcar por azúcar, sino algo con mimo, con sustancia… que siente bien y no sea una bomba para el estómago.

Tarta de chocolate sin gluten


Siempre viene bien tener en la nevera algo dulce para picar entre horas, en mi caso, que sea de chocolate, ¡por favor!


Cuando hace unos días me invitaron de Anthropology para que hiciese alguna receta primaveral, enseguida me vino a la cabeza esta tarta de chocolate sin gluten, con flores. Es lo que en inglés llaman chocolate fudge, que viene a ser como "dulce de chocolate".

El montaje y decoración de la mesa lo tenia claro, una vez entras en la tienda online de Anthropology te vuelves loco con todo lo que tienen, platos de flores, jarras de flores, base dorada para la tarta, bols para cocinar...

Tagliatelle al limone, receta sin gluten




Últimamente estoy escuchando muchos casos, entre ellos amigas y conocidos cercanos, con intolerancia al gluten, sobre todo niños que acaban de ser diagnosticados como celíacos. Cada vez sois más los que necesitan recetas sin gluten y sobre todo aquellas recetas como ésta de tagliatelle al limone (o tallarines al limón, sin gluten) que os recuerden a la pasta que habéis tomado siempre en casa.

Colaborando con pastas Gallo, me propusieron preparar una receta utilizando cualquiera de sus pastas sin gluten. Así que decidí preparar unos tallarines al limón, una receta muy sencilla y deliciosa que además podéis preparar con cualquier otro tipo de pasta que queráis.

Recetea de brownie sin gluten | VIDEORECETA


Para los que me seguís desde hace tiempo, sabéis que una de mis debilidades son los brownies. He hecho el brownie clásico americano (con todos los trucos para que salgan unos brownies perfectos), brownies veganos, blondies y hasta unas galletas de brownies.

Puesto que este viernes día 27 de mayo es el Día Nacional del Celíaco, he colaborado en esta receta de brownie sin gluten, para celíacos, junto a la marca de productos sin gluten Schär, utilizando una harina especial si gluten ideal para pasteles y galletas. Muchas veces me preguntáis qué harinas podéis utilizar para elaborar postres sin gluten, dependiendo de qué es lo que váis a preparar podéis usar una u otra. El Mix Pâtisserie - Mix C de Schär está hecho de harina de maíz, almidón de maíz y harina de semilla de algarroba. Además tampoco lleva leche ni huevo, por lo que es apta para intolerantes a la lactosa.
