Receta fácil de HUMMUS DE GUISANTES ¡lista en dos minutos!


No sé si existe el concepto fondo de nevera, pero si no, creo que ha llegado el momento de inventarlo.

Ahora que septiembre nos ha devuelto de golpe a los horarios, los colegios, el trabajo y a esa pregunta recurrente de qué cenar entre semana, yo tengo clarísimo qué cosas quiero encontrar cuando abro la mía.

Y no hablo de tener el menú de los próximos siete días perfectamente organizado en táperes idénticos. Ojalá mi vida funcionara siempre así. Hablo de esas dos o tres preparaciones que puedes dejar hechas y que, llegado el momento, te solucionan una comida o una cena sin tener que empezar de cero.

Y un buen hummus siempre está entre ellas porque pocas recetas dan tanto juego con tan poco esfuerzo.

Puedes ponerlo en el centro de la mesa con unas crudités y un buen pan, untarlo en una tostada, preparar un sándwich, añadir una cucharada generosa a un bowl con verduras o utilizarlo como punto de partida para una cena improvisada con lo que tengas por la nevera.

Y como el hummus clásico probablemente ya te lo sabes de memoria, hoy vamos a darle una vuelta y preparar un hummus de guisantes.

Es fresco, cremoso, tiene ese color verde maravilloso y se prepara prácticamente en dos minutos.

La base sigue siendo la que ya conoces de sobra: garbanzos, tahini, limón, ajo y un buen aceite de oliva virgen extra. Pero añadimos guisantes y unas hojas de menta que le dan un punto mucho más fresco y diferente.

Y aquí tampoco tienes que complicarte la existencia. Los garbanzos pueden ser perfectamente de bote. Los guisantes, frescos si los tienes, pero también congelados o incluso en conserva.

Porque, al final, esa es precisamente la filosofía de este tipo de recetas, que se adapten a tu vida y no al revés.

Pones todos los ingredientes en la batidora, trituras y ajustas la textura con un poquito de agua si ha quedado demasiado espeso. Y en apenas unos minutos tienes un tarro de hummus de guisantes esperando en la nevera y, de paso, una pequeña parte de las comidas de los próximos días solucionada.

Porque comer rico y nutritivo entre semana no siempre depende de cocinar muchísimo. A veces depende simplemente de tener algo bueno a lo que recurrir cuando no tienes tiempo, ganas o ninguna de las dos cosas.

Así que guárdate esta receta porque sospecho que uno de estos días, cuando abras la nevera a última hora preguntándote qué demonios vas a cenar, te vas a alegrar bastante de encontrar ese tarrito verde esperándote.

Y si ahora mismo estás pensando que los guisantes no te entusiasman y que mejor ni intentarlo, tranquila, la idea del fondo de nevera admite variantes. Puedes probar también con mis recetas de hummus de calabaza y ajos asados o de hummus de remolacha.

Lo importante no es tanto cuál elijas como tener uno preparado cuando llegue ese momento del día en el que cocinar desde cero te parece una idea francamente poco apetecible.

Hummus de guisantes

Ingredientes

  • 400 g de garbanzos cocidos (en casa o de bote, mejor ecológicos)
  • 150 g de guisantes frescos, congelados o en conserva. Si son frescos los herviremos 7 minutos hasta que estén tiernos.
  • 3 chdas de zumo de limón
  • 2 chdas de tahini (pasta de sésamo, si no tienes no pasa nada)
  • 1 diente de ajo picado (yo quito la Lila central)
  • unas hojas de menta (podéis no echarle)
  • 2 chdas de aceite de oliva
  • sal y pimienta negra


Preparación

  1. Colamos los garbanzos si son de bote y los lavamos bien, escurrimos.
  2. Echamos junto con todos los ingredientes en nuestro vaso de batidora y trituramos.
  3. Si quedase muy espeso y seco, podemos echar un poquito de agua, pero muy poco cada vez para no pasarnos.

I don’t know if there’s such a thing as a fridge staple, but if there isn’t, I think it’s about time we invented the concept.

Now that September has suddenly thrown us back into schedules, school, work and that recurring question of what on earth to make for dinner during the week, I know exactly what I want to find whenever I open my fridge.

And I’m not talking about having the next seven days’ meals perfectly organised in identical containers. I wish my life always worked like that. I’m talking about those two or three things you can prepare in advance that, when the time comes, can rescue lunch or dinner without having to start from scratch.

And a good hummus is always one of them, because few recipes are this versatile for so little effort.

You can put it in the middle of the table with some crudités and good bread, spread it on toast, make a sandwich, add a generous spoonful to a bowl of vegetables or use it as the starting point for an improvised dinner with whatever happens to be in the fridge.

And since you probably know classic hummus by heart by now, today we’re going to give it a little twist and make pea hummus.

It’s fresh, creamy, has that gorgeous green colour and takes practically two minutes to make.

The base is still the one you already know so well: chickpeas, tahini, lemon, garlic and a good extra virgin olive oil. But this time we’re adding peas and a few mint leaves, which give it a much fresher and slightly different flavour.

And there’s no need to make life complicated here either. The chickpeas can absolutely come from a jar or tin. Use fresh peas if you have them, but frozen or even tinned peas work too.

Because, ultimately, that’s exactly the philosophy behind this kind of recipe: it should adapt to your life, not the other way round.

Put all the ingredients into a blender, blend everything together and adjust the texture with a little water if it’s too thick. In just a few minutes, you have a jar of pea hummus waiting in the fridge and, at the same time, one small part of the next few days’ meals already sorted.

Because eating delicious, nutritious food during the week doesn’t always depend on doing loads of cooking. Sometimes it simply comes down to having something good to reach for when you don’t have the time, the inclination or either of the two.

So save this recipe because I suspect that one of these days, when you open the fridge late in the day wondering what on earth you’re going to have for dinner, you’ll be very glad to find that little green jar waiting for you.

And if you’re thinking right now that peas aren’t really your thing and you’d rather not even try it, don’t worry, the whole fridge-staple idea leaves plenty of room for alternatives. You can also try my roasted pumpkin and garlic hummus or my beetroot hummus.

What matters isn’t so much which one you choose, but having one ready for that moment of the day when cooking something from scratch sounds like a thoroughly unappealing idea.

Pea hummus

Ingredients

  • 400 g cooked chickpeas (home-cooked or from a jar or tin, preferably organic)
  • 150 g fresh, frozen or tinned peas. If using fresh peas, boil them for 7 minutes until tender.
  • 3 tbsp lemon juice
  • 2 tbsp tahini (sesame paste; if you don’t have any, don’t worry)
  • 1 garlic clove, chopped (I remove the central shoot)
  • A few mint leaves (optional)
  • 2 tbsp olive oil
  • Salt and black pepper


Method

  1. If using chickpeas from a jar or tin, drain and rinse them well.
  2. Place them in a blender with all the remaining ingredients and blend until smooth.
  3. If the hummus is too thick and dry, add a little water, but only a small amount at a time so you don’t overdo it.

Receta de helado sin azúcar con solo 3 ingredientes y un truco 🍧🍧🍧


Septiembre ha llegado y vuelven los horarios, las agendas empiezan a llenarse, los días se van haciendo un poquito más cortos día tras día y esas tardes eternas de piscina o playa empiezan a quedarse atrás.

No sé tú, pero yo todavía no estoy preparada para soltar el verano del todo y, mientras siga haciendo calor, pienso seguir preparando helado.

Quizá la vuelta a la rutina hace que todo te dé pereza y lo último en lo que estás pensando es entrar en la cocina más de lo estrictamente necesario. Pues espera y ¡toma nota porque esta receta es para ti! Una receta fácil donde las haya y con solo 3 ingredientes: plátanos maduros, frambuesas congeladas y un poco de leche o nata. Nada más.

Las cantidades tampoco tienen que ser exactas. Como tantas recetas que preparo en casa, esta la hice completamente a ojo.

Yo usé una heladera de las baratas, una de esas que cumplen perfectamente su función sin necesidad de hacer una gran inversión. Pero si no tienes una en casa, sigue leyendo porque ¡te comparto un trucazo!

Pasa la mezcla a una bolsa de congelación con cierre zip y métela en el congelador. A las dos horas, sácala y machácala bien con un mortero. Vuelve a congelar y repite el proceso un par de veces más. De esta forma estarás rompiendo los cristales de hielo que se van formando y conseguirás una textura mucho más cremosa, bastante parecida a la que obtendrías utilizando una heladera.

Y ya está. Así de fácil tienes un helado casero de plátano y frambuesa preparado con tres ingredientes y sin necesidad de complicarte absolutamente nada.

Porque sí, septiembre está aquí. Volveremos a madrugar, recuperaremos horarios y, poco a poco, iremos guardando bañadores, sombrillas y capazos. Pero nadie ha dicho que tengamos que hacerlo todo el mismo día, ¿no?

Helado de plátano y frambuesa con solo 3 ingredientes

Ingredientes

  • Plátanos muy maduros, pelados, troceados y congelados durante al menos 4 horas
  • Frambuesas congeladas
  • Leche vegetal, leche de vaca o nata, la que más te guste (si es nata, mejor)

Las cantidades las hice a ojo, pero calculad que usé unos 4 plátanos muy pequeños, un puñado de frambuesas y unos 120 ml de leche.


Elaboración

  1. Tritura todos los ingredientes en la batidora hasta conseguir una mezcla cremosa.
  2. Si la mezcla sigue bien fría y congelada, puedes tomar el helado al momento.
  3. Si quieres conservarlo, pásalo a una bolsa de congelación con cierre zip y mételo en el congelador.
  4. Al cabo de 2 horas, sácalo y machácalo bien con un mortero para romper los cristales de hielo que se hayan formado.
  5. Vuelve a congelar y repite el proceso unas 2 veces más para conseguir una textura mucho más cremosa.

September is here, schedules are back, diaries are starting to fill up, the days are getting just a little shorter and those endless afternoons by the pool or at the beach are slowly being left behind.

I don’t know about you, but I’m definitely not ready to let go of summer just yet and, as long as the weather stays warm, I fully intend to keep making ice cream.

Maybe getting back into a routine makes everything feel like a bit more of an effort, and the last thing on your mind is spending any longer in the kitchen than absolutely necessary. Well, keep reading and take note, because this recipe is for you! It couldn’t be easier and you only need 3 ingredients: ripe bananas, frozen raspberries and a little milk or cream. That’s it.

The quantities don’t need to be exact either. Like so many of the recipes I make at home, I made this one completely by eye.

I used a very inexpensive ice cream maker, one of those simple machines that does the job perfectly well without requiring a big investment. But if you don’t have one at home, keep reading because I’ve got a brilliant little trick for you.

Transfer the mixture to a zip-lock freezer bag and put it in the freezer. After two hours, take it out and give it a really good bash with a pestle. Freeze it again and repeat the process a couple more times. By doing this, you break up the ice crystals as they form and end up with a much creamier texture, surprisingly similar to what you’d get from using an ice cream maker.

And that’s it. That’s how easy it is to make homemade banana and raspberry ice cream with just three ingredients and absolutely no unnecessary fuss.

Because yes, September is here. We’ll start getting up early again, our usual schedules will return and, little by little, the swimsuits, beach umbrellas and baskets will be packed away. But nobody said we had to do everything on the same day, right?

3-ingredient banana and raspberry ice cream

Ingredients

  • Very ripe bananas, peeled, chopped and frozen for at least 4 hours
  • Frozen raspberries
  • Plant-based milk, dairy milk or cream, whichever you prefer (cream will give you an even creamier result)

I made the quantities by eye, but as a rough guide I used around 4 very small bananas, a handful of raspberries and approximately 120 ml milk.


Method

  1. Blend all the ingredients together until smooth and creamy.
  2. If the mixture is still very cold and frozen, you can enjoy the ice cream straight away.
  3. If you want to keep it for later, transfer it to a zip-lock freezer bag and place it in the freezer.
  4. After 2 hours, take it out and give it a good bash with a pestle to break up any ice crystals that have formed.
  5. Return it to the freezer and repeat the process about 2 more times to achieve a much creamier texture.

Receta de pizza-quiche de brócoli y queso de cabra🥧🥦


Que levante la mano a quien no le haya ocurrido algo así... Estás de vacaciones, el día se alarga más de la cuenta, vuelves a casa tarde, cansada, con hambre y con exactamente cero ganas de cocinar.

A mí también me ha pasado. Y no una ni dos veces, sino ¡cientos!

Y en esos momentos intento recordar algo que, a veces, se nos olvida cuando queremos llevar un estilo de vida saludable, no hace falta hacerlo todo perfecto para hacerlo bien.

Y sí, podría decirte que prepares una masa casera. Que mezcles las harinas, amases, dejes reposar... pero son las ocho y media de la tarde, acabas de llegar de la playa o la piscina y tú y yo sabemos que hoy eso no va a ocurrir.

Así que compras una buena masa de pizza refrigerada en el súper más cercano y con ella, un brócoli, unos huevos, parmesano y queso de cabra y seguimos.

Lo que sucede después es una especie de cruce entre pizza y quiche que probablemente no gane ningún premio entre los puristas de ninguna de las dos, pero en casa nos parece brutal. Una auténtica locura.

Primero aso el brócoli para que se dore y gane muchísimo más sabor. Mientras tanto, precocino la masa y preparo una mezcla de huevos, leche, parmesano y queso de cabra.

Después solo queda juntarlo todo y dejar que el horno haga su trabajo.

Y ahí tienes la cena.

El brócoli ligeramente tostado, el queso de cabra cremoso, el parmesano y una base crujiente consiguen que comer verduras resulte bastante más emocionante que encontrarte un triste brócoli hervido en el plato.

Pero, sobre todo, tienes una cena rica y fácil que has preparado sin complicarte la vida.

Porque para mí comer bien también es esto. Es saber elegir cuándo merece la pena hacer algo desde cero y cuándo una buena opción comprada en el supermercado puede solucionarte la cena.

Sin culpa. Sin intentar alcanzar una perfección que, sinceramente, tampoco necesito durante mis vacaciones.

Así que guárdate esta receta de pizza-quiche de brócoli y queso de cabra para uno de esos días de verano en los que llegues a casa pensando que lo último que te apetece es meterte en la cocina y cocinar.

Pizza-quiche de brócoli y queso de cabra

Ingredientes

  • 1 brócoli
  • 1 masa de pizza refrigerada
  • ¼ taza de leche
  • 4 huevos eco
  • ¼ taza de parmesano
  • 120 g de queso de cabra


Elaboración

  1. Asa el brócoli al horno a 220ºC durante 20 minutos.
  2. Hornea la masa de pizza a 220ºC durante 10 minutos.
  3. Mezcla la leche, los huevos, el parmesano y el queso de cabra.
  4. Añade el brócoli asado a la mezcla y vierte sobre la base de pizza precocida.
  5. Hornea durante 30 minutos a 160ºC.

Hands up if this has ever happened to you... You’re on holiday, the day runs away with you, you get home late, tired, hungry and with exactly zero desire to cook.

It happens to me too. Not once or twice, but hundreds of times!

And in those moments, I try to remind myself of something we sometimes forget when we’re trying to live a healthy lifestyle: you don’t have to do everything perfectly to do it well.

And yes, I could tell you to make your own pizza dough. Mix the flours, knead it, leave it to rest... but it’s half past eight in the evening, you’ve just got back from the beach or the pool, and you and I both know that’s not happening tonight.

So you pick up a good refrigerated pizza dough from the nearest supermarket and we carry on from there.

And while you’re there, grab some broccoli, eggs, Parmesan and goat’s cheese.

What happens next is somewhere between a pizza and a quiche. It probably wouldn’t win any prizes with purists from either camp, but at home we think it’s absolutely brilliant. Honestly, it’s ridiculously good.

First, I roast the broccoli so it gets nicely golden and develops loads more flavour. Meanwhile, I pre-bake the pizza base and mix together the eggs, milk, Parmesan and goat’s cheese.

Then all that’s left to do is bring everything together and let the oven do the rest.

And there’s dinner.

The lightly roasted broccoli, creamy goat’s cheese, Parmesan and crisp base make eating vegetables a lot more exciting than finding a sad pile of boiled broccoli on your plate.

But above all, you’ve got a delicious, easy dinner that you’ve made without making life difficult for yourself.

Because, for me, eating well is also about this. It’s knowing when something is worth making from scratch and when a good supermarket option can quite happily rescue dinner.

No guilt. No trying to reach some idea of perfection that, quite honestly, I don’t need on holiday either.

So save this broccoli and goat’s cheese pizza-quiche recipe for one of those summer days when you get home thinking the very last thing you want to do is spend time in the kitchen.

Broccoli and goat’s cheese pizza-quiche

Ingredients

  • 1 broccoli
  • 1 refrigerated pizza dough
  • ¼ cup milk
  • 4 organic eggs
  • ¼ cup Parmesan
  • 120 g goat’s cheese


Method

  1. Roast the broccoli at 220ºC for 20 minutes.
  2. Bake the pizza dough at 220ºC for 10 minutes.
  3. Mix together the milk, eggs, Parmesan and goat’s cheese.
  4. Add the roasted broccoli to the mixture and pour all over the pre-baked pizza base.
  5. Bake for 30 minutes at 160ºC.

Receta express 🍓🥤 Batido de proteínas con fresas y melocotón 🍑


Hay una cosa que nunca debería ocurrir después de entrenar, que es llegar a casa con un hambre terrible y descubrir que no tienes absolutamente nada preparado.

Bueno, sí puede ocurrir y, de hecho, ocurre bastante a menudo.

Precisamente para evitar que esto pase, tengo algunas recetas express que se preparan prácticamente antes de que te dé tiempo a pensar qué vas a comer.

Este batido de fresas y melocotón es una de ellas.

Necesitas cuatro ingredientes, sí solo cuatro, una batidora y un par de minutos.

Si te soy sincera, es una receta que preparo completamente a ojo. Un puñado de esto, un chorrito de aquello, triturar… y listo.

Aunque tranquila, que esta vez lo he medido todo para compartirte las cantidades exactas.

La combinación es sencillísima: fresas (si están congeladas, mucho mejor porque conseguirás un batido más fresco y cremoso), yogur, zumo de melocotón y una cucharada de proteína en polvo.

Y aquí está precisamente el pequeño detalle que hace que este batido sea algo más que fruta triturada.

La proteína.

Cada vez intento prestar más atención a incluir una buena cantidad de proteína en mis comidas y, especialmente después de entrenar. Entre el yogur y la proteína en polvo consigues un batido mucho más completo y saciante sin complicar la receta.

Las fresas y melocotón son una combinación que funciona de maravilla, es una mezcla fresca, ligeramente dulce y con ese punto ácido de las fresas que hace que no resulte nada pesado.

Y ahora, en verano, todavía tiene más sentido.

Yo suelo tener fresas congeladas porque, aparte de que me encantan, me salvan de más de un apuro. Llegas de entrenar acalorada, abres el congelador, lo echas todo en la batidora y, dos minutos después, tienes algo frío y delicioso esperando.

Sin pesar, sin cocinar y prácticamente sin recoger.

Si quieres prepararlo exactamente como yo, te dejo las cantidades más abajo, aunque tienes permiso absoluto para hacerlo a ojo. De hecho, posiblemente la segunda vez ya ni las mires.

Batido de fresas y melocotón con proteína

Ingredientes

  • Un puñado de fresas (si son congeladas, mejor)
  • ¼ de taza de yogur
  • 150 ml de zumo de melocotón (a ser posible ecológico y sin azúcares añadidos)
  • 1 cucharada de proteína en polvo


Elaboración

  1. Tritura bien todos los ingredientes y disfruta de un batido rico en vitaminas, buenísimo y con aporte extra de proteína gracias al yogur y la proteína.

There’s one thing that should never happen after a workout: getting home absolutely starving and realising you have nothing ready to eat.

Well… it can happen. And, actually, it happens quite often.

That’s exactly why I keep a few express recipes up my sleeve, the kind you can make almost before you’ve even had time to decide what you’re going to eat.

This strawberry and peach smoothie is one of them.

You need four ingredients — yes, just four — a blender and a couple of minutes.

If I’m being completely honest, this is one of those recipes I usually make entirely by eye. A handful of this, a splash of that, blend… and done.

But don’t worry, this time I actually measured everything so I could give you the exact quantities.

The combination couldn’t be simpler: strawberries (frozen are even better because they make the smoothie colder and creamier), yogurt, peach juice and a spoonful of protein powder.

And that’s precisely the little detail that turns this smoothie into something more than just blended fruit.

The protein.

I’m paying more and more attention to including a good amount of protein in my meals, especially after training. Between the yogurt and the protein powder, you end up with a much more complete and satisfying smoothie without making the recipe any more complicated.

Strawberries and peach are such a good combination: fresh, lightly sweet and with that little tang from the strawberries that keeps the whole thing from feeling heavy.

And now that it’s summer, it makes even more sense.

I usually keep frozen strawberries at home because, apart from loving them, they get me out of trouble more often than I can count. You come home hot after training, open the freezer, throw everything into the blender and two minutes later you’ve got something cold and delicious waiting for you.

No weighing, no cooking and almost nothing to clean up.

If you want to make it exactly as I do, I’ve left the quantities below, although you have my full permission to make it by eye. In fact, chances are you won’t even look at them the second time.

  • 1 tablespoon protein powder


Method

  1. Blend all the ingredients thoroughly and enjoy a delicious smoothie packed with vitamins and an extra boost of protein from the yogurt and protein powder.

Paté vegano de boniato y lenteja


Si hoy abrieras la nevera de mi casa, hay muchas posibilidades de que encontraras un tarro de este paté, incluso si estamos en una casa de vacaciones.

Y está ahí simplemente porque forma parte de nuestra vida.

Durante el curso tiene un destino bastante claro: la merienda de Lucas. Es, con diferencia, una de sus favoritas para llevar al colegio y, cada vez que el tarro se termina, sé que no tardará mucho en preguntarme cuándo vuelvo a prepararlo.

Pero cuando llega el verano, ese mismo tarro cambia de misión. Pasa de la mochila del colegio a la nevera portátil.

Nos acompaña a la playa, a la piscina, a un picnic improvisado o cuando salimos a navegar. Y siempre ocurre lo mismo, alguien abre el tarro, busca una buena barra de pan y, casi sin hablar, van pasando de mano en mano hasta que empiezan a desaparecer las rebanadas y el tarro se ve cada vez más vacío.

Creo que ese es el mejor piropo que puede recibir una receta.

Que nadie pregunte qué lleva. Solo dónde está el cuchillo para volver a untar otra rebanada.

Posiblemente, a estas alturas te estés preguntando qué esconde este tarrito para que guste tanto. Y la respuesta es fácil, está lleno de ingredientes que realmente aportan cosas interesantes.

La proteína vegetal de la lenteja roja que, combinada con un buen pan integral, mejora todavía más su perfil proteico, los anacardos, ricos en grasas mono y poliinsaturadas y minerales, y el boniato, que aporta fibra, vitamina A, vitamina C, ácido fólico, potasio y ese punto ligeramente dulce que hace que el conjunto resulte todavía más apetecible.

Al final, casi sin darte cuenta, tienes un paté vegano con proteína, verduras, frutos secos y muchísimo sabor y que, contra todo pronóstico, te va a chiflar.

Creo que esa es la verdadera razón por la que nunca falta en nuestra nevera.

Porque puedes prepararlo con antelación, aguanta perfectamente varios días y sirve igual de bien para una merienda, un aperitivo antes de comer, una cena ligera o para picar algo rico después de un baño.

Es una de esas recetas que simplemente funcionan. Y, cuando una receta consigue eso, termina convirtiéndose en un básico de casa.

Paté de boniato y lentejas

Ingredientes

  • 1 cebolla pequeña o chalota
  • ½ diente de ajo
  • 140 g de lentejas rojas
  • 1 boniato pequeño o medio grande
  • ½ taza de anacardos activados (dejados en remojo al menos 4 horas o bien 15 minutos en agua hirviendo)
  • 1 cucharadita de pimentón
  • 1 cucharadita de cúrcuma
  • 2 cucharaditas de aceite de oliva virgen extra
  • Sal y pimienta negra recién molida
  • 1 cucharadita de vinagre de vino tinto
  • Pan de calidad para untar


Elaboración

  1. Saltea la cebolla y el ajo en un cazo con un poco de aceite hasta que la cebolla esté translúcida.
  2. Añade las lentejas y el boniato troceado y cubre con agua. Hierve durante 15 minutos o hasta que el boniato esté blando.
  3. Tritura junto con el resto de los ingredientes.
  4. Rectifica de sal y pimienta y sirve untado sobre una tostada de un buen pan (recordad que sea siempre integral, con al menos un 70 % de harina integral, mejor de espelta o centeno).

If you opened my fridge today, there’s a very good chance you’d find a jar of this pâté inside, even if we happened to be staying at a holiday home.

And it’s there simply because it has become part of our everyday life.

During the school year, it has a very clear purpose: Lucas’s afternoon snack. It is, by far, one of his favourite things to take to school and, every time the jar runs out, I know it won’t be long before he asks when I’m going to make it again.

But once summer arrives, that same jar takes on a new role. It moves from the school backpack to the cool box.

It comes with us to the beach, the pool, an impromptu picnic or a day out sailing. And the same thing always happens: someone opens the jar, finds a good loaf of bread and, almost without saying a word, everything starts being passed from hand to hand until the slices begin to disappear and the jar looks emptier and emptier.

I think that’s the best compliment a recipe can receive.

Nobody asks what’s in it. They only want to know where the knife is so they can spread some more onto another slice.

By now, you’re probably wondering what’s hiding inside this little jar that makes everyone love it so much. And the answer is simple: it’s packed with ingredients that genuinely have something interesting to offer.

There’s the plant-based protein from the red lentils, which has an even better protein profile when paired with good wholegrain bread; the cashews, rich in mono- and polyunsaturated fats and minerals; and the sweet potato, which adds fibre, vitamin A, vitamin C, folic acid, potassium and that slightly sweet flavour that makes the whole thing even more irresistible.

In the end, almost without realising it, you have a vegan pâté packed with protein, vegetables, nuts and loads of flavour which, against all expectations, you’re going to absolutely love.

I think that’s the real reason it’s never missing from our fridge.

You can make it ahead of time, it keeps perfectly for several days and works just as well as an afternoon snack, an appetiser before lunch, a light dinner or something tasty to nibble on after a swim.

It’s one of those recipes that simply works. And when a recipe manages to do that, it eventually becomes a household staple.

Sweet potato and lentil pâté

Ingredients

  • 1 small onion or shallot
  • ½ garlic clove
  • 140 g red lentils
  • 1 small or ½ large sweet potato
  • ½ cup activated cashews (soaked for at least 4 hours, or for 15 minutes in boiling water)
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 teaspoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon red wine vinegar
  • Good-quality bread, for spreading


Method

  1. Sauté the onion and garlic in a saucepan with a little oil until the onion becomes translucent.
  2. Add the lentils and chopped sweet potato, then cover with water. Boil for 15 minutes or until the sweet potato is soft.
  3. Blend together with the remaining ingredients.
  4. Adjust the seasoning with salt and black pepper and serve spread over a slice of good bread (always choose wholegrain bread containing at least 70% wholemeal flour, preferably spelt or rye).

Postre de chocolate


Hoy te cuento un pequeño truco al que recurro para disfrutar mucho más del verano. Y no tiene nada que ver con madrugar para coger sitio en la playa, ni con encender el aire acondicionado antes de llegar a casa.

Tiene que ver con abrir la nevera después de una mañana de piscina o de un día entero de playa y saber que ya tienes el postre esperándote. Y un postre más saludable que cualquiera que puedas encontrar en un chiringuito.

Nada de niños pidiendo algo dulce de forma insistente. Ni tener que cocinar con treinta y tantos grados en la cocina. Solo abrir la nevera, coger una cucharilla y disfrutar.

No sé a ti, pero en verano lo único que me apetecen son recetas que se preparen en un momento y luego hagan todo el trabajo ellas solas mientras están en la nevera. Y esta cumple todos los requisitos y, encima, ¡está riquísima!


Tiene una textura suave y cremosa, un intenso sabor a cacao y el punto justo de dulzor para que resulte ligera a pesar del chocolate.


Y aquí llega el segundo truco del día, que creo que todavía vas a agradecer más.

Puedes preparar varias raciones de una sola vez y olvidarte del postre durante unos días.

Si tienes invitados o simplemente te gusta cuidar la presentación para que tus platos entren también por la vista, puedes añadirle unos frutos rojos, unas virutas de chocolate o unas hojas de menta justo antes de servir. Queda precioso y no tardas más de un minuto.

Aquí en casa, la mayoría de las veces no llega a tanto. Lo habitual es desmoldar, coger una cuchara... y desaparecer. Así de rápido, un visto y no visto.

Postre cremoso de chocolate

Ingredientes

  • 80 ml de agua fría
  • 2 láminas de gelatina
  • 500 ml de nata líquida
  • 80 g de azúcar de coco
  • 2 cucharaditas de extracto de vainilla
  • 110 g de cacao en polvo
  • 180 ml de leche entera


Elaboración

  1. Empieza hidratando las láminas de gelatina en el agua fría.
  2. Mezcla en un cazo todos los ingredientes excepto la leche y la gelatina. Lleva a ebullición mientras remueves continuamente.
  3. Añade la gelatina hidratada y remueve de nuevo a fuego bajo durante un minuto, hasta que se disuelva por completo.
  4. Pasa la mezcla por un colador, añade la leche entera y remueve bien.
  5. Reparte la mezcla en moldes individuales y deja enfriar en la nevera durante un mínimo de 4 a 6 horas.

Today I’m sharing a little trick I rely on to enjoy summer that bit more. And it has nothing to do with getting up early to claim a spot on the beach or switching on the air conditioning before you get home.

It’s all about opening the fridge after a morning by the pool or a full day at the beach and knowing that dessert is already there waiting for you. And a healthier dessert than anything you’re likely to find at a beach bar.

No children repeatedly asking for something sweet. No cooking in a kitchen that’s well over thirty degrees. Just open the fridge, grab a spoon and enjoy.

I don’t know about you, but in summer I only want recipes that come together in minutes and then quietly do all the work themselves while they sit in the fridge.

And this one ticks every box. Plus, it’s absolutely delicious.

It has a smooth, creamy texture, a rich cocoa flavour and just enough sweetness to keep it feeling light, despite all that chocolate.

And here comes the second trick of the day, which I think you’re going to appreciate even more.

You can prepare several portions at once and forget about dessert for the next few days.

If you have guests, or you simply like your food to look as good as it tastes, add a few berries, some chocolate shavings or a couple of mint leaves just before serving. It looks beautiful and takes less than a minute.

At home, most of the time, it doesn’t even get that far. Usually, it’s unmould, grab a spoon... and gone. Blink and you’ll miss it.

Creamy chocolate dessert

Ingredients

  • 80 ml cold water
  • 2 gelatine leaves
  • 500 ml whipping cream
  • 80 g coconut sugar
  • 2 teaspoons vanilla extract
  • 110 g cocoa powder
  • 180 ml whole milk


Method

  1. Start by soaking the gelatine leaves in the cold water.
  2. Place all the ingredients except the milk and gelatine in a saucepan. Bring to the boil, stirring continuously.
  3. Add the soaked gelatine and continue stirring over a low heat for one minute, until completely dissolved.
  4. Pass the mixture through a sieve, add the whole milk and stir well.
  5. Pour the mixture into individual moulds and leave to set in the fridge for at least 4 to 6 hours.

Rollitos de calabacín rellenos de ricotta y kale


Si el calabacín te aburre, es porque nunca lo has comido así.

Puede sonar a una afirmación un poco arriesgada, pero espera a probar estos “canelones” sin pasta y luego hablamos.

Porque tengo una teoría. No existen los ingredientes aburridos, somos nosotros los que nos empeñamos en prepararlos siempre de la misma forma. Hervidos, a la plancha, en crema… y vuelta a empezar. Hasta que un día decides darles una oportunidad diferente y ocurre esto.

Láminas finas de calabacín convertidas en pequeños rollitos y rellenas de una mezcla increíblemente cremosa de ricotta, kale, espinacas, menta y limón. Todo sobre una buena base de tomate, un poco de mozzarella por encima y directo al horno hasta que empieza a burbujear y dorarse.

¿El resultado? Los “canelones” sin pasta que vas a querer hacer en bucle. Aunque ¡ojo!, hay un detalle que puede marcar la diferencia entre el éxito absoluto y encontrarte una piscina de agua en el fondo de la fuente.

El kale.

Después de escaldarlo, tienes que escurrirlo como si te fuera la vida en ello. Y cuando creas que ya no puede salir más agua, aprieta otra vez.

Este paso es clave para conseguir un relleno cremoso y con la textura perfecta.

A partir de ahí, la receta es fácil, fácil.

Mezclas el relleno, enrollas las láminas de calabacín, las colocas bien juntitas sobre el tomate, rellenas los rollitos de calabacín con la mezcla de ricotta y verduras, añades la mozzarella y dejas que el horno se ocupe del resto.

No es pasta, pero lo parece y están espectaculares de buenos.

Además, es una de esas recetas que consiguen algo maravilloso: que un plato lleno de verduras deje de sentirse como “un plato de verduras”. Porque para cuando los sirves, nadie piensa en el kale, las espinacas o los tres calabacines que acabas de poner sobre la mesa. Están demasiado ocupados intentando coger el siguiente rollito.

Rollitos de calabacín rellenos de ricotta y kale

Ingredientes

Para un molde de 22 x 30 cm:

  • 200 g de hojas de kale frescas sin tallo (escaldadas y MUY bien escurridas, apriétalas con las manos hasta sacar toda el agua, esto es clave)
  • 2 huevos
  • 360 g de ricotta fresca
  • 50 g de espinacas baby troceadas
  • ¼ taza de menta fresca picada
  • 2 cucharaditas de ralladura de limón
  • 3-4 calabacines en láminas finas a lo largo, cortados con mandolina a ser posible (unas 24 láminas)
  • 500 ml de tomate triturado o tomate frito
  • 50 g de mozzarella rallada


Elaboración

  1. Precalienta el horno a 180ºC.
  2. Escalda el kale (hierve 2 minutos y pasa a agua helada), escúrrelo y apriétalo bien hasta que no suelte ni una gota. Pícalo fino y ponlo en un bol grande.
  3. Añade los huevos, la ricotta, las espinacas, la menta, la ralladura, sal y pimienta. Mezcla bien.
  4. Pon una cucharada colmada de relleno en el extremo de cada lámina de calabacín y enrolla.
  5. Vierte el tomate en la fuente y coloca los rollitos bien juntitos.
  6. Espolvorea la mozzarella y hornea 30 minutos o hasta que esté dorado.
  7. Deja templar un poco antes de servir (si puedes esperar 😅).

If you think courgettes are boring, it’s because you’ve never eaten them like this.

That might sound like a slightly bold statement, but wait until you’ve tried these pasta-free “cannelloni” and then we’ll talk.

Because I have a theory. There’s no such thing as a boring ingredient. The problem is that we insist on cooking the same ingredients in exactly the same way. Boiled, grilled, blended into soup… and then we start all over again. Until one day, you decide to give them a completely different chance and this happens.

Thin slices of courgette turned into little rolls and filled with an incredibly creamy mixture of ricotta, kale, spinach, mint and lemon. Everything sits on a generous layer of tomato sauce, with a little mozzarella scattered over the top, then goes straight into the oven until it starts bubbling and turning golden.

The result?

The pasta-free “cannelloni” you’re going to want to make on repeat.

But be warned! There’s one small detail that can make the difference between absolute success and finding a swimming pool of water at the bottom of your baking dish.

The kale.

Once you’ve blanched it, you need to squeeze out the water as if your life depended on it. And when you think there couldn’t possibly be any water left, squeeze it again.

This step is key if you want a creamy filling with the perfect texture.

From there, the recipe couldn’t be easier.

Mix the filling, roll up the courgette slices, arrange them snugly over the tomato sauce, fill the courgette rolls with the ricotta and vegetable mixture, add the mozzarella and let the oven take care of the rest.

It’s not pasta, but it certainly looks the part, and they’re seriously delicious.

And this is also one of those recipes that manages to do something wonderful: it makes a plate full of vegetables stop feeling like “a plate full of vegetables”. Because by the time you serve it, nobody is thinking about the kale, the spinach or the three courgettes you’ve just put on the table. They’re far too busy trying to grab the next roll.

Courgette rolls with ricotta and kale

Ingredients

For a 22 x 30 cm baking dish:

  • 200 g fresh kale leaves, stems removed (blanched and VERY well drained — squeeze them with your hands until you’ve removed all the water, this is key)
  • 2 eggs
  • 360 g fresh ricotta
  • 50 g baby spinach, chopped
  • ¼ cup fresh mint, chopped
  • 2 teaspoons lemon zest
  • 3-4 courgettes, thinly sliced lengthways, preferably using a mandoline (about 24 slices)
  • 500 ml crushed tomatoes or tomato sauce
  • 50 g grated mozzarella


Method

  1. Preheat the oven to 180ºC.
  2. Blanch the kale (boil for 2 minutes, then transfer to ice-cold water), drain it and squeeze it really well until there isn’t a drop of water left. Finely chop it and place it in a large bowl.
  3. Add the eggs, ricotta, spinach, mint and lemon zest, then season with salt and pepper. Mix well.
  4. Place a heaped tablespoon of filling at one end of each courgette slice and roll it up.
  5. Pour the tomato sauce into the baking dish and arrange the rolls snugly together on top.
  6. Sprinkle with the mozzarella and bake for 30 minutes or until golden.
  7. Leave to cool slightly before serving (if you can wait 😅).

Receta de tartaletas de pera súper fáciles



Hay días en los que me apetece pasar tiempo en la cocina experimentando.

Y otros en los que quiero el resultado, sin todo el trabajo que suele haber detrás.

Y esta receta nació claramente para los segundos.

Imagina la escena: sacas del horno unas tartaletas individuales, doradas, crujientes por los bordes, con la pera ligeramente caramelizada por encima y las sirves todavía calientes con un poco de nata.

Aquí es cuando todo el mundo piensa que llevas media tarde en la cocina. Solo tú sabes la verdad y no hace falta que la cuentes, a menos que quieras.

Estas tartaletas de pera son increíblemente fáciles de preparar, pero tienen ese aspecto de postre elaborado que siempre suma puntos y causa furor cuando llegan a la mesa.

La base se prepara mezclando los ingredientes en un bol. Sin amasar, sin rodillo, sin tiempos de reposo y sin llenar la cocina de harina.

Y luego encima, la pera. No necesitas mucho más.

Un poco de sirope de arce antes de entrar en el horno hace que se dore lentamente, se vuelva más dulce y quede ligeramente caramelizada por los bordes.

Y esto no te va a pillar por sorpresa. El verdadero momento de peligro llega cuando salen del horno.

Porque la receta dice que hay que volver a pincelarlas con un poco de sirope de arce y servirlas calientes con nata.

Lo que no dice es cuánto cuesta esperar a que se enfríen lo suficiente como para no quemarte.

Son perfectas para improvisar un postre, para una merienda especial, para llevar el postre a una cena en la que no eres la anfitriona o para esos días en los que quieres preparar algo rico sin dedicarle horas.

Y, entre nosotras, tampoco hace falta explicar lo fáciles que son.

Hay secretos que merece la pena guardar.

Tartaletas de pera

Ingredientes

  • 60 g de harina de almendras (almendra molida)
  • 50 g de harina de avena
  • 100 g de almendra picada o almendra en láminas
  • 2 claras de huevo
  • 4 cucharadas de sirope de arce
  • 1 pera conferencia
  • 2 cucharadas de sirope de arce extra para servir


Elaboración

  1. Precalienta el horno a 180ºC. En un bol, mezcla la harina de almendras, la harina de avena, las almendras picadas o en láminas, las claras de huevo y el sirope de arce hasta obtener una especie de masa.
  2. Engrasa 4 moldes de tarta individuales con un poco de mantequilla y divide la masa entre los moldes. Presiona bien. Hornea durante unos 12 minutos.
  3. Corta la pera por la mitad verticalmente y usa una cuchara de café para retirar el corazón. Corta cada mitad de nuevo por la mitad, de manera que tengas 4 cuartos de pera. Corta cada cuarto en láminas a lo largo.
  4. Coloca cada cuarto de pera sobre una base de tarta. Pincela con el sirope de arce extra, reservando un poco para después, y hornea durante 15 minutos o hasta que estén doradas y crujientes por los bordes.
  5. Retira del horno y vuelve a pincelar las peras con el sirope de arce restante.
  6. Sirve con un poco de nata y disfruta calientes.

Some days, I feel like spending time in the kitchen experimenting.

And then there are other days when I want the result without all the work that usually comes with it.

And this recipe was clearly made for the latter.

Picture the scene: you take a few individual tartlets out of the oven, golden and crisp around the edges, with lightly caramelised pear on top, and serve them while they’re still warm with a little cream.

This is the moment when everyone assumes you’ve spent half the afternoon in the kitchen. Only you know the truth, and there’s really no need to tell them unless you want to.

These pear tartlets are incredibly easy to make, but they have that sophisticated dessert look that always earns you extra points and causes a sensation when they arrive at the table.

The base is made simply by mixing the ingredients together in a bowl. No kneading, no rolling pin, no resting time and no covering the kitchen in flour.

And then, on top, the pear. You really don’t need much more.

A little maple syrup before they go into the oven allows the pear to slowly turn golden, become sweeter and caramelise slightly around the edges.

And this probably won’t come as a surprise. The real moment of danger comes when they leave the oven.

Because the recipe says you should brush them again with a little maple syrup and serve them warm with cream.

What it doesn’t tell you is just how difficult it is to wait until they’ve cooled down enough not to burn your fingers.

They’re perfect for putting together a last-minute dessert, for a special afternoon treat, for taking dessert to a dinner when you’re not the host, or for those days when you want to make something delicious without spending hours in the kitchen.

And, between us, there’s really no need to tell anyone just how easy they are.

Easy pear tartlets

Ingredients

  • 60 g almond flour (ground almonds)
  • 50 g oat flour
  • 100 g chopped or flaked almonds
  • 2 egg whites
  • 4 tablespoons maple syrup
  • 1 Conference pear
  • 2 extra tablespoons maple syrup, for serving


Method

  1. Preheat the oven to 180ºC. In a bowl, mix the almond flour, oat flour, chopped or flaked almonds, egg whites and maple syrup until a dough-like mixture forms.
  2. Lightly grease 4 individual tart tins with a little butter and divide the mixture between them. Press down firmly. Bake for about 12 minutes.
  3. Cut the pear in half lengthways and use a teaspoon to remove the core. Cut each half in half again so that you have 4 pear quarters. Thinly slice each quarter lengthways.
  4. Place one pear quarter on top of each tart base. Brush with the extra maple syrup, reserving a little for later, and bake for 15 minutes or until golden and crisp around the edges.
  5. Remove from the oven and brush the pears again with the remaining maple syrup.
  6. Serve with a little cream and enjoy while still warm.

Lasaña con boloñesa de lentejas y bechamel de tomate


Cuando alguien prueba esta lasaña se sorprende al descubrir que no lleva carne.

Luego, cuando la prueba, le da exactamente igual.

Porque no pretende ser una versión triste de la lasaña tradicional ni convencerte de que las lentejas son carne. Simplemente, ya lo sabes y es un plato delicioso por sí mismo.

La boloñesa de lentejas forma parte de una de las recetas de mi libro Cocina para la Tribu, que co-escribí con Vero Sanchez (oh.mamiblue). Porque cuando una receta funciona de verdad en una casa con varias personas y diferentes gustos, merece un sitio especial.

Además, esta receta tiene la ventaja de que te ayuda a llenar el plato de verduras sin que nadie les preste demasiada atención.

Calabacín, zanahoria, apio, champiñones...

Todo se cocina despacio junto al tomate, las especias y las lentejas hasta formar una salsa rica, aromática y reconfortante.

Luego llega la bechamel. La capa que une todo y convierte una buena lasaña en una lasaña memorable.

Y cuando sale del horno, dorada por encima y burbujeando por los lados, ocurre algo curioso: nadie pregunta dónde está la carne.

Lo que sí preguntan es si puede repetir.

Lasaña con boloñesa de lentejas y bechamel de tomate

Ingredientes

Para la boloñesa

  • 3 cucharadas de aceite de oliva virgen extra
  • 1 cebolla dulce, picada fina
  • 3 dientes de ajo, machacados
  • 2-3 piezas de cada: verduras varias (calabacín, zanahoria, champiñones, apio…)
  • 600 g de tomate en conserva con su jugo
  • 1 cucharada de tomate concentrado
  • 400 g de lentejas pardinas cocidas o guisantes cocidos.
  • 1 cucharadita de tomillo fresco (u orégano)
  • 1⁄2 cucharadita de pimentón dulce
  • Sal y pimienta negra recién molidas

Para la bechamel

  • 450 g de leche entera eco y de pasto
  • 60 g de mantequilla eco y de pasto
  • 1/2 cebolla
  • 60 g de harina
  • Sal y pimienta blanca (o negra)
  • Una pizca de moscada

Además:

  • Láminas de pasta de cocción al horno
  • Queso parmesano rallado


Preparación

  1. Ponemos una sartén con las 3 chas de aceite de oliva. Sofreímos todas las verduras unos 7 minutos.
  2. Añadimos el tomate pelado en conserva y el tomate concentrado junto con la sal, pimienta y tomillo.
  3. Cocinamos a fuego medio, removiendo de vez en cuando para que no se pegue, hasta que haya reducido ligeramente el tomate (unos 20 minutos).
  4. Añadimos las lentejas o los guisantes cocidos y mezclamos.
  5. Preparamos la bechamel en cazuela o thermomix: echamos una cucharada del tomate en la olla o thermomix, picamos la cebolla y sofreímos con la mantequilla 3 minutos.
  6. Añadimos la harina y preparamos el roux cocinándola con la mantequilla 2 minutos más.
  7. Añadimos la leche y cocemos 7 minuotos aroma vel. 4 (o en la olla removiendo bien).
  8. Montamos lasaña: pincela mantequilla en molde, capa bechamel, tomate, pasta, tomate, bechamel pasta, tomate bechamel pasta y tomate bechamel, queso parmesano y 180ºC 35-40 minutos (si es pasta al forno).

When someone tries this lasagna, they’re surprised to discover it doesn’t contain any meat.

Then, once they taste it, they couldn’t care less.

Because it’s not trying to be a sad version of traditional lasagna or convince you that lentils are meat. You simply know it isn’t, and it’s a delicious dish in its own right.

This lentil bolognese is part of one of the recipes from my book Cocina para la Tribu, which I co-wrote with Vero Sanchez (oh.mamiblue). Because when a recipe truly works in a home with several people and different tastes, it deserves a special place.

Another good thing about this recipe is that it helps you fill the plate with vegetables without anyone paying too much attention to them.

Zucchini, carrot, celery, mushrooms...

Everything cooks slowly with the tomato, spices and lentils until it becomes a rich, aromatic and comforting sauce.

Then comes the béchamel. The layer that brings everything together and turns a good lasagna into a memorable lasagna.

And when it comes out of the oven, golden on top and bubbling around the edges, something funny happens: nobody asks where the meat is.

What they do ask is whether they can have seconds.

Lasagna with lentil bolognese and tomato béchamel

Ingredients

For the bolognese

  • 3 tablespoons extra virgin olive oil
  • 1 sweet onion, finely chopped
  • 3 garlic cloves, crushed
  • 2-3 pieces of each: assorted vegetables (zucchini, carrot, mushrooms, celery…)
  • 600 g canned tomatoes with their juice
  • 1 tablespoon tomato paste
  • 400 g cooked pardina lentils or cooked peas.
  • 1 teaspoon fresh thyme (or oregano)
  • 1⁄2 teaspoon sweet paprika
  • Salt and freshly ground black pepper

For the béchamel

  • 450 g organic, pasture-raised whole milk
  • 60 g organic, pasture-raised butter
  • 1/2 onion
  • 60 g flour
  • Salt and white pepper (or black pepper)
  • A pinch of nutmeg

Also:

  • Oven-ready lasagna sheets
  • Grated Parmesan cheese


Method

  1. Place a pan over the heat with the 3 tablespoons of olive oil. Sauté all the vegetables for about 7 minutes.
  2. Add the canned peeled tomatoes and the tomato paste, along with the salt, pepper and thyme.
  3. Cook over medium heat, stirring from time to time so it doesn’t stick, until the tomato has reduced slightly (about 20 minutes).
  4. Add the cooked lentils or peas and mix.
  5. Prepare the béchamel in a saucepan or Thermomix: add one spoonful of the tomato sauce to the pot or Thermomix, chop the onion and sauté it with the butter for 3 minutes.
  6. Add the flour and prepare the roux, cooking it with the butter for 2 more minutes.
  7. Add the milk and cook for 7 minutes, aroma speed 4 (or in the pot, stirring well).
  8. Assemble the lasagna: brush the dish with butter, then layer béchamel, tomato, pasta, tomato, béchamel, pasta, tomato, béchamel, pasta, and tomato béchamel. Finish with Parmesan cheese and bake at 180ºC for 35-40 minutes (if using oven-ready pasta).

Receta express de Crepes de limón


¿Cuántas veces te has parado delante de la nevera abierta y has dicho: “No tengo nada”?

Y casi nunca es verdad.

Lo que suele ocurrir es más bien que no tenemos nada preparado, ni pensado. Nada que parezca, de entrada, un desayuno bonito o una merienda improvisada.

Pero entonces abres la despensa y encuentras un resto de harina en un tarro. Después, un huevo y un poco de leche en la nevera. Medio limón olvidado en la encimera.

Y, de repente, esa cocina que parecía no tener muchas posibilidades empieza a parecerse a un buen plan.

Estas crêpes de limón nacen de un momento así, de uno de esos días en los que la despensa está en mínimos, pero aún te apetece comer algo rico y con un pequeño giro que haga que no suene a lo de siempre.

Porque podrían ser unas crêpes más, con un poco de azúcar por encima.

Pero aquí el azúcar de coco y el chorro generoso de limón cambian la historia. Les dan frescor, contraste y ese punto ácido que recuerda a verano, a sobremesa larga y a vacaciones cerca, aunque todavía estés en casa.

Y lo mejor es que no necesitas casi nada: una masa sencilla, una sartén caliente y unos minutos en la cocina. El limón se encarga del resto.

Es una receta exprés, sí y también la prueba de que, a veces, no hace falta tener la cocina llena para preparar algo que esté bueno y te alegre el día.

Crêpes de limón

Ingredientes

  • 60g de harina (la que quieras)
  • Una pizca de sal
  • 1 huevo ecológico
  • 4 cucharadas de leche (la que quieras)
  • 1 cucharada de aceite de oliva virgen extra
  • 1 cucharada de mantequilla
  • Azúcar de coco para espolvorear
  • Un chorro de limón


Elaboración

  1. En un bol, mezcla la harina con la pizca de sal. Añade el huevo, la leche y el aceite de oliva virgen extra, y bate bien hasta conseguir una masa fina, sin grumos y bastante ligera. Si ves que queda demasiado espesa, puedes añadir un poquito más de leche hasta que tenga una textura fluida.
  2. Calienta una sartén antiadherente a fuego medio y añade un poco de mantequilla. Cuando se haya derretido, vierte una pequeña cantidad de masa y mueve la sartén con suavidad para repartirla bien por toda la superficie. La idea es que quede una capa fina.
  3. Cocina la crêpe durante uno o dos minutos, hasta que los bordes empiecen a despegarse y la superficie se vea cuajada. Dale la vuelta con cuidado y cocina unos segundos más por el otro lado.
  4. Repite el proceso con el resto de la masa, añadiendo un poco más de mantequilla si lo necesitas.
  5. Sírvelas recién hechas, espolvoreadas con azúcar de coco y con un buen chorro de limón por encima. Ese contraste entre el dulzor suave del azúcar y la acidez del limón es lo que hace que una receta tan simple se vuelva especial.

How many times have you stood in front of an open fridge and said: “I have nothing to eat”?

And it’s almost never true.

What usually happens is that we don’t have anything prepared or planned. Nothing that immediately looks like a beautiful breakfast or an improvised afternoon treat.

But then you open the pantry and find some leftover flour in a jar. Then an egg and a little milk in the fridge. Half a lemon forgotten on the counter.

And suddenly, that kitchen that seemed to have no possibilities starts looking like a pretty good plan.

These lemon crêpes were born from one of those moments, from one of those days when the pantry is almost empty but you still feel like eating something delicious with a little twist that makes it feel different.

Because they could just be another batch of crêpes with a little sugar on top.

But here, the coconut sugar and the generous squeeze of lemon completely change the story. They bring freshness, contrast and that citrusy touch that tastes like summer, long lunches and holidays nearby… even if you’re still at home.

And the best part is that you barely need anything: a simple batter, a hot pan and a few minutes in the kitchen. The lemon does the rest.

It’s a quick recipe, yes, but also proof that sometimes you don’t need a fully stocked kitchen to make something delicious that brightens your day.

Lemon Crêpes

Ingredients

  • 60g flour (any kind you like)
  • A pinch of salt
  • 1 organic egg
  • 4 tablespoons milk (any kind you like)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • Coconut sugar for sprinkling
  • A generous squeeze of lemon


Method

  1. In a bowl, mix the flour with the pinch of salt. Add the egg, milk and extra virgin olive oil, then whisk well until you get a smooth, lump-free and fairly light batter. If it feels too thick, add a little more milk until it reaches a pourable consistency.
  2. Heat a non-stick frying pan over medium heat and add a little butter. Once melted, pour in a small amount of batter and gently swirl the pan so it spreads evenly across the surface. The goal is to create a thin layer.
  3. Cook the crêpe for one or two minutes, until the edges begin to lift and the surface looks set. Carefully flip it over and cook for a few more seconds on the other side.
  4. Repeat the process with the remaining batter, adding a little more butter if needed.
  5. Serve them freshly made, sprinkled with coconut sugar and finished with a generous squeeze of lemon juice. That contrast between the gentle sweetness of the sugar and the acidity of the lemon is what turns such a simple recipe into something special.

Gratín de patatas de mi madre


Hace un tiempo te compartí mi receta del gratín de patatas con aceite picante y toque de lima (la encuentras AQUí). Esa receta nació de la versión tradicional de mi madre porque, como ya sabes, que me cuesta muchísimo no meter mano, cambiar algo, añadir una especia o ajustar ingredientes para darles un poco mi estilo.

No puedo evitarlo. Aunque quiera.

Pero pensando en ello, me di cuenta de que, hasta ahora, nunca había compartido la receta original. La de siempre. La que lleva haciéndose en casa desde hace años y que, sinceramente, no necesita absolutamente ningún cambio para ser espectacular.

Y hoy es el día.

Una receta sencilla de hacer. Sin modernidades, con ingredientes que encuentras en la tienda de confianza de la esquina: patatas, queso, nata y leche.

Si tienes prisa, puedes prepararla en 45 minutos subiendo la temperatura del horno. Pero si tienes tiempo y paciencia, hazme caso y prueba la versión lenta. La de toda la vida, la que hace mi madre. La de temperatura baja y muchas horas.

Ahí es donde ocurre la magia.

Las patatas se vuelven casi cremosas. El queso se funde entre las capas. La nata y la leche espesan lentamente mientras el romero perfuma toda la cocina.

Y el olor… El olor de esta receta me trae muchísimos recuerdos. Y ojalá termine ocurriendo lo mismo en tu casa después de prepararla una y otra vez.

Es de esos platos que aparecen en el centro de la mesa y hacen que todo el mundo deje de hablar un momento. Y eso siempre me parece una muy buena señal.

Receta de gratín de patatas de mi madre

Ingredientes

  • 1 kg de patatas
  • 400 ml de leche entera (mejor si es eco y de pasto, ya sabéis, por eso de que tiene omega 3 y no omega 6)
  • 200 ml de nata espesa (esta ya me cuesta más encontrarla fresca)
  • 1/4 nuez moscada (yo la rallo de una que traje de Sri Lanka, no hace falta irse tan lejos)
  • 200 g de queso parmesano rallado
  • 200 g de queso Gruyère rallado
  • Sal y pimienta recién molidas
  • Un par de ramitas de romero


Preparación

  1. Pela las patatas y córtalas en rodajas finas, más que finas que las de mi vídeo si puedes (si tienes una mandolina irás más rápida que yo).
  2. Echa la leche, nata, ajos, nuez moscada, romero, sal y pimienta, en una cacerola baja y lleva a fuego bajo hasta que rompa a hervir.
  3. Añade las patatas a la cazuela con la leche y nata y deja hervir a fuego bajo durante unos 6 minutos, removiendo con cuidado con una cuchara de madera de vez en cuando. (Podemos no hervir la patata pero la cocción en el horno será más lenta).
  4. Dispón una capa de patatas en una cazuela para horno (previamente untada con mantequilla), espolvorea con una capa de ambos quesos. Repite hasta que tengas unas 3 capas de todo.
  5. Rocía con la crema restante de la cocción y un poco más de nata si ves que queda muy espeso.
  6. Hornea a 130ºC durante unas 3 horas o bien a 180ºC durante 45 minutos (siempre quedará mejor a menos temperatura y más tiempo).

Some time ago I shared my recipe for potato gratin with spicy oil and a touch of lime (you can find it here). That recipe was born from my mother’s traditional version because, as you already know, I find it really hard not to tweak things, change something, add a spice or adjust ingredients to give them a little bit of my own style.

I can’t help it. Even when I try.

But thinking about it, I realised that, until now, I had never shared the original recipe. The one we’ve always made. The one that has been prepared at home for years and that, honestly, doesn’t need absolutely any change to be spectacular.

And today is the day.

A simple recipe to make. No modern twists, with ingredients you can find in your trusted corner shop: potatoes, cheese, cream and milk.

If you’re in a hurry, you can make it in 45 minutes by increasing the oven temperature. But if you have time and patience, trust me and try the slow version. The traditional one, the one my mother makes. The one cooked at a low temperature for many hours.

That’s where the magic happens.

The potatoes become almost creamy. The cheese melts between the layers. The cream and milk slowly thicken while the rosemary perfumes the whole kitchen.

And the smell… The smell of this recipe brings back so many memories for me. And I hope the same ends up happening in your home after making it again and again.

It’s one of those dishes that appears in the centre of the table and makes everyone stop talking for a moment. And that always feels like a very good sign to me.

My mother’s potato gratin recipe

Ingredients

  • 1 kg potatoes
  • 400 ml whole milk (ideally organic and grass-fed, you know, because of the omega 3 and not omega 6)
  • 200 ml thick cream (this one is harder for me to find fresh)
  • 1/4 nutmeg (I grate one I brought back from Sri Lanka, no need to go that far)
  • 200 g grated Parmesan cheese
  • 200 g grated Gruyère cheese
  • Freshly ground salt and pepper
  • A couple of rosemary sprigs


Method

  1. Peel the potatoes and slice them thinly, even thinner than the ones in my video if you can (if you have a mandoline, you’ll be faster than me).
  2. Pour the milk, cream, garlic, nutmeg, rosemary, salt and pepper into a shallow saucepan and place over low heat until it comes to a boil.
  3. Add the potatoes to the saucepan with the milk and cream and simmer over low heat for about 6 minutes, stirring carefully with a wooden spoon from time to time. (You can skip simmering the potatoes, but the oven cooking time will be longer).
  4. Arrange a layer of potatoes in an ovenproof dish (previously greased with butter), then sprinkle with a layer of both cheeses. Repeat until you have about 3 layers of everything.
  5. Pour over the remaining cooking cream and add a little more cream if you see it has become too thick.
  6. Bake at 130ºC for about 3 hours, or at 180ºC for 45 minutes (it will always turn out better at a lower temperature for longer).

Bizcocho de chocolate


Seamos sinceras, hay recetas que pruebas una vez… y desaparecen.

Y luego están las otras. Las que llegan, a veces incluso por casualidad, sin hacer demasiado ruido y terminan formando parte de tu vida para siempre.

Este bizcocho de chocolate pertenece a ese segundo grupo.

Recuerdo perfectamente la primera vez que lo preparé. Pensé aquello de “bueno, vamos a ver qué tal”… y terminó pasando algo bastante habitual cuando hay chocolate de por medio en esta casa: desapareció antes de que llegara a enfriarse del todo... buena señal.

La receta original se la tomé prestada a @lasrecetasdemj aunque, a estas alturas, ya sabes que rara vez puedo evitar adaptar las cosas y que tengan mi propio estilo. Menos azúcar, ingredientes más interesantes nutricionalmente y ese equilibrio entre postre rico y postre que además te siente bien.

Porque sí, se puede hacer un bizcocho de chocolate increíblemente jugoso sin necesitar medio paquete de azúcar.

Gran parte del secreto de este bizcocho son los plátanos maduros. Aportan dulzor, humedad y esa textura tierna que hace que aguante perfecto varios días… si consigue sobrevivir tanto tiempo, claro.

Y luego está el chocolate. Ese chocolate que se funde ligeramente dentro del bizcocho mientras se hornea y crea pequeñas zonas casi cremosas que hacen que cada trozo sea distinto al anterior.

El resultado es intenso, húmedo, aromático y peligrosamente adictivo… empiezas cortando “un trocito pequeño”… y acabas volviendo a la cocina un rato después a por más ¿te suena?

Y ahora necesito saberlo ¿eres de las que espera pacientemente a que el bizcocho enfríe… o también te quemas los dedos intentando coger un trozo caliente? 😏



Bizcocho de chocolate

Ingredientes

  • 140g de harina de espelta integral
  • 60g de cacao puro en polvo
  • 1y1/2 chdta levadura química
  • 1/2 chdta de sal
  • 1/2 chdta de canela molida
  • 50g de azúcar de coco (MJ lo hace con 150g de azúcar blanco)
  • 3 plátanos maduros
  • 80g aceite oliva o coco (yo he usado de coco)
  • 1 huevo L
  • 1 chdta extracto vainilla
  • 180g chocolate negro mínimo 70%


Elaboración

  1. Precalentamos horno 180ºC y mezclamos harina, levadura, cacao, sal y canela.
  2. Batimos azúcar, vainilla y huevo con batidora de varillas hasta que doble su volumen.
  3. Machacamos los plátanos junto con el aceite fundido y lo echamos a la mezcla de huevo.
  4. Incorporamos la mezcla de harina poco a poco mezclando con una espátula.
  5. Echamos 130g del chocolate picado con un cuchillo y volcamos sobre un molde engrasado. Echamos el resto de chocolate por encima.
  6. Horneamos 50 minutos y dejamos enfriar durante 10 minutos. Pasamos a una rejilla.

Let’s be honest: there are recipes you try once… and then they disappear.

And then there are the others. The ones that arrive, sometimes almost by chance, without making too much noise, and end up becoming part of your life forever.

This chocolate cake belongs to that second group.

I remember perfectly the first time I made it. I thought, “well, let’s see how this turns out”… and then something quite common happened when chocolate is involved in this house: it disappeared before it had even completely cooled. And that is always a good sign.

I borrowed the original recipe from @lasrecetasdemj although, by now, you already know I can rarely resist adapting things a little my way. Less sugar, more nutritionally interesting ingredients, and that balance between “delicious dessert” and “something that also makes you feel good”.

Because yes, you can make an incredibly moist chocolate cake without needing half a packet of sugar.

A big part of the secret of this cake is the ripe bananas. They add sweetness, moisture and that tender texture that keeps it perfect for several days… if it manages to survive that long, of course.

And then there’s the chocolate. The kind that melts slightly inside the cake as it bakes, creating little almost-creamy pockets that make every slice different from the last.

The result is intense, moist, aromatic and dangerously addictive… you know how it goes: you start by cutting “just a small piece”… and end up going back to the kitchen a little later for more.

And now I need to know:
are you one of those people who patiently waits for the cake to cool… or do you also burn your fingers trying to grab a warm piece? 😏


Chocolate cake

Ingredients

  • 140 g whole spelt flour
  • 60 g pure cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 50 g coconut sugar (MJ makes it with 150 g white sugar)
  • 3 ripe bananas
  • 80 g olive oil or coconut oil (I used coconut oil)
  • 1 large egg
  • 1 tsp vanilla extract
  • 180 g dark chocolate, minimum 70%


Method

  1. Preheat the oven to 180ºC and mix the flour, baking powder, cocoa, salt and cinnamon.
  2. Beat the sugar, vanilla and egg with an electric whisk until doubled in volume.
  3. Mash the bananas together with the melted oil and add them to the egg mixture.
  4. Gradually fold in the flour mixture with a spatula.
  5. Add 130 g of the chocolate, chopped with a knife, and pour the batter into a greased tin. Scatter the remaining chocolate on top.
  6. Bake for 50 minutes and leave to cool for 10 minutes. Transfer to a wire rack.
