Crema de setas con virutas de jamón Iberico

Sabéis que en Navidad soy muy fan de las recetas que lo tienen todo: fáciles, resultonas y con ese puntito especial que hace que parezcan mucho más elaboradas de lo que realmente son.

Y esta crema de setas con virutas de jamón ibérico es exactamente eso.

Perfecta como entrante en una comida especial o como cena ligera para esos días en los que necesitas algo calentito, con cero complicaciones.

Y si, como a muchas nos ha pasado alguna vez, se te ha echado el tiempo encima con los preparativos de la cena de Fin de Año o de repente te has visto teniendo que organizarla en el último minuto, esta receta te va a venir de maravilla.

Una receta con sabor a invierno, cremosa, reconfortante, con el sabor profundo de las shiitake bien pochadas y el toque umami del jamón, que eleva el plato en cuestión de segundos.

La puedes dejar lista con antelación, recalentar justo antes de servir y disfrutar sin agobios. Que para eso están estas fechas: para pasarlas alrededor de la mesa, pero no metida en la cocina hasta el último momento.

Porque al final, lo que más recordamos no es lo elaborado del menú… sino con quién lo compartimos.

Crema de setas con virutas de jamón ibérico

Ingredientes

  • 600 g de setas shiitake
  • 1 litro de caldo de verduras
  • 4 cucharadas de AOVE o mantequilla
  • 100 g de nata para cocinar
  • 2 chalotas
  • 40 g de harina integral
  • 2 dientes de ajo
  • 1 cucharadita de sal
  • ½ cucharadita de pimienta negra
  • 2 ramas de tomillo
  • 50 g de jamón ibérico en virutas

Elaboración

  1. Limpia las shiitake con un paño o brocha y retira el pie. Corta en trozos.
  2. Pela y pica finamente los ajos y las chalotas.
  3. En una cazuela grande, añade el AOVE y pocha ajos y chalotas a fuego medio. Añade las setas y saltea unos minutos.
  4. Incorpora la sal, pimienta, tomillo y harina. Rehoga 1 minuto.
  5. Añade el caldo y cocina a fuego lento durante 15 minutos.
  6. Saltea unas shiitake laminadas aparte y reserva.
  7. Retira el tomillo, tritura la crema y vuelve a ponerla en la cazuela. Añade la nata y cocina 5 minutos más sin hervir.
  8. Ajusta de sal y pimienta, sirve caliente y decora con las setas y el jamón.

And if, as has happened to many of us at some point, time has run away from you with New Year’s Eve preparations or you suddenly find yourself hosting at the last minute, this recipe will come to your rescue.

A winter-flavoured recipe: creamy, comforting, with the deep taste of well-sautéed shiitake mushrooms and the umami touch of Iberian ham, which elevates the dish in seconds.

You can make it ahead of time, reheat it just before serving and enjoy without stress. That’s what these days are for: gathering around the table, not being stuck in the kitchen until the last minute.

Because in the end, what we remember most isn’t how elaborate the menu was… but who we shared it with.

Mushroom Cream Soup with Iberian Ham Shavings

Ingredients

  • 600 g shiitake mushrooms
  • 1 litre vegetable stock
  • 4 tbsp extra virgin olive oil or butter
  • 100 g cooking cream
  • 2 shallots
  • 40 g wholemeal flour
  • 2 garlic cloves
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 thyme sprigs
  • 50 g Iberian ham shavings

Method

  1. Clean the mushrooms with a cloth or brush, remove the stems and chop.
  2. Peel and finely chop the garlic and shallots.
  3. In a large pot, heat the olive oil and gently sauté the garlic and shallots. Add the mushrooms and cook for a few minutes.
  4. Add salt, pepper, thyme and flour. Cook for 1 minute, stirring.
  5. Pour in the stock and simmer gently for 15 minutes.
  6. Sauté some extra sliced mushrooms separately and set aside.
  7. Remove the thyme, blend the soup, return it to the pot, add the cream and cook for another 5 minutes without boiling.
  8. Adjust seasoning, serve hot and garnish with sautéed mushrooms and Iberian ham.

GINGERBREAD CHRISTMAS COFFEE

Los que amamos el café sabemos que no hay nada comparable al aroma de un buen café recién molido. No hace falta explicarlo: lo reconoces apenas entras por la puerta. Y si además lo mezclas con especias navideñas, canela en rama y un toque de jengibre, lo que tienes entre manos ya no es solo una taza de café… es un momentazo para disfrutar, sola o en compañía. Un respiro entre tanto ajetreo navideño.

Esta receta es perfecta para regalarte una pausa bonita, acompañar ese café de una galleta o un trocito de bizcocho caseros y simplemente sentarte a disfrutar. Nada más, nada menos.

Sírvetelo en tu taza favorita, pon una lista suave de música de invierno y olvídate del reloj unos minutos.
Es diciembre. Estás en casa. Y está bien dedicarte un momento para ti, para disfrutar de la calma y el silencio, aunque sea por un rato.

Gingerbread Christmas Coffee

Ingredientes

  • 250 ml de leche entera o bebida vegetal
  • ¼ cucharadita de jengibre molido
  • ¼ cucharadita de canela molida
  • 1 rama de canela
  • ½ taza de café recién hecho
  • Nata semi montada (sin azúcar)
  • El endulzante que prefieras
  • Una galleta navideña bonita (opcional, pero muy recomendable)

Elaboración

  1. En un cazo, calienta la leche junto con el jengibre, la canela molida y la rama de canela. Infusiona a fuego suave durante unos minutos, removiendo de vez en cuando.
  2. Mientras tanto, prepara tu café. Si puedes, que sea recién molido.
  3. Mezcla la leche especiada con el café, añade el endulzante que prefieras (o no pongas ninguno) y sirve caliente.
  4. Añade una cucharada generosa de nata semi montada por encima y decora, si quieres, con una galleta navideña.

Those of us who love coffee know there’s nothing quite like the aroma of freshly ground coffee. There’s no need to explain it: you recognise it the moment you walk through the door. And if you mix it with Christmas spices, a cinnamon stick and a hint of ginger, what you have in your hands is no longer just a cup of coffee… it’s a proper moment to enjoy, on your own or with company. A little pause in the middle of all the holiday bustle.

This recipe is perfect for treating yourself to a beautiful break, pairing that coffee with a homemade cookie or a slice of cake, and simply sitting down to enjoy it. Nothing more, nothing less.

Serve it in your favourite mug, put on a gentle winter playlist and forget about the clock for a few minutes.
It’s December. You’re home. And it’s okay to give yourself a moment — to enjoy calm and silence, even if it’s just for a while.

Gingerbread Christmas Coffee

Ingredients

  • 250 ml whole milk or plant-based milk
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon
  • 1 cinnamon stick
  • ½ cup freshly brewed coffee
  • Lightly whipped cream (unsweetened)
  • Sweetener of your choice
  • A pretty Christmas cookie (optional, but highly recommended)

Method

  1. In a small saucepan, heat the milk with the ginger, ground cinnamon and cinnamon stick. Let it infuse over low heat for a few minutes, stirring occasionally.
  2. Meanwhile, make your coffee. If you can, use freshly ground coffee.
  3. Mix the spiced milk with the coffee, add sweetener if you like (or none at all), and serve hot.
  4. Top with a generous spoonful of lightly whipped cream and decorate, if you want, with a Christmas cookie.

CHOCOLATE CHRISTMAS PUDDING

Christmas Pudding de chocolate

Montar una mesa bonita en Navidad es mucho más que decorar.
Es una forma de decir: “estás en casa”, “estás invitada”, “te he estado esperando”.

Es desplegar ese mantel que reservamos para las ocasiones especiales, colocar unas velas, unas servilletas de tela, algo de vegetación que hayamos recogido en un paseo por el campo o en nuestra floristería favorita… y, en el centro, un postre que esté a la altura de todo ese mimo.

Este Christmas Pudding de chocolate cumple todos los requisitos:
es fácil de preparar, está elaborado con ingredientes saludables y que encuentras en tu supermercado o en la tienda de tu barrio, y cuando lo colocas sobre un soporte bonito, con su glaseado brillante cayendo por los lados, parece sacado de una postal navideña.

Es jugoso, profundo, con notas de cacao y plátano, sin exceso de azúcar.
Ideal como broche final para una comida especial en compañía de tus personas favoritas.

Si este año te animas a organizar la comida o la cena en casa, piensa en esto:
una mesa bien puesta transforma cualquier encuentro.
Y no necesitas complicarte. Unas ramas de pino, unas velas, unas copas y una vajilla bonita… y este pastel en el centro... la calidez está servida.

Preparar una mesa bonita es una de las tareas que más disfruto en estas fechas.
De alguna forma, me permite entrar en flow y dejar salir mi parte más creativa mientras el resto del mundo se queda en pausa.

Christmas Pudding de chocolate

Ingredientes

Para el pudding

  • 90 g de cacao en polvo, tamizado
  • 150 ml de agua hirviendo
  • 250 g de mantequilla ecológica, a temperatura ambiente
  • 2 plátanos muy maduros
  • 120 g de azúcar de coco (o 2 plátanos más)
  • Las semillas de 1 vaina de vainilla o 2 cucharaditas de extracto de vainilla
  • 5 huevos ecológicos
  • 90 g de harina de arroz integral
  • 30 g de harina de almendra
  • 30 g de harina de trigo sarraceno

Para el glaseado de chocolate

  • 90 g de chocolate negro (85% cacao)
  • ¼ de taza (60 ml) de nata para montar
  • ½ cucharadita de extracto de vainilla

Elaboración

  1. Precalienta el horno a 160 ºC.
  2. Mezcla el cacao en polvo con el agua hirviendo y remueve. Si queda muy espeso, añade un poco más de agua hirviendo.
  3. Bate la mantequilla, los plátanos, el azúcar y la vainilla a máxima velocidad durante unos 5 minutos.
  4. Añade los huevos uno a uno, batiendo entre cada adición.
  5. Incorpora la mezcla de harinas y mezcla con una espátula hasta integrar, sin sobrebatir.
  6. Forra un molde con papel de hornear y vierte la masa.
  7. Hornea durante 55 minutos o hasta que, al pinchar con un cuchillo, salga limpio.
  8. Deja enfriar 10 minutos en el molde y después desmolda sobre una rejilla.
  9. Prepara el glaseado: calienta los ingredientes a fuego bajo y remueve con una cuchara de madera hasta que quede liso y brillante.
  10. Vierte el glaseado sobre el pastel y acompaña con nata montada sin azúcar, si te apetece.

It’s unfolding the tablecloth you save for special occasions, lighting a few candles, placing linen napkins, adding a little greenery you picked up on a walk or from your favourite florist… and, right in the centre, a dessert that matches all that care.

This chocolate Christmas pudding ticks every box:
it’s easy to make, it uses wholesome ingredients you can find at any local shop, and once you place it on a pretty stand —with that glossy glaze dripping down the sides— it looks like it came straight out of a Christmas postcard.

It’s moist and rich, with deep cocoa notes and the natural sweetness of banana, without being overly sugary.
The perfect finale to a special meal shared with the people you love.

a beautifully set table can transform any gathering.
And it doesn’t have to be complicated. A few pine branches, some candles, nice glasses and plates… and this cake in the centre — warmth, served.

Chocolate Christmas Pudding

Ingredients

For the pudding

  • 90 g cocoa powder, sifted
  • 150 ml boiling water
  • 250 g organic butter, at room temperature
  • 2 very ripe bananas
  • 120 g coconut sugar (or 2 extra bananas)
  • Seeds from 1 vanilla pod, or 2 teaspoons vanilla extract
  • 5 organic eggs
  • 90 g wholegrain brown rice flour
  • 30 g almond flour
  • 30 g buckwheat flour

For the chocolate glaze

  • 90 g dark chocolate (85% cocoa)
  • ¼ cup (60 ml) heavy cream / whipping cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 160°C.
  2. Mix the cocoa powder with the boiling water and stir. If it feels too thick, add a little more boiling water.
  3. Beat the butter, bananas, sugar and vanilla on high speed for about 5 minutes.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the flours and fold in with a spatula just until combined.
  6. Line a baking tin with parchment paper and pour in the batter.
  7. Bake for about 55 minutes, or until a knife inserted into the centre comes out clean.
  8. Let cool in the tin for 10 minutes, then unmould onto a wire rack.
  9. Make the glaze: gently heat the ingredients over low heat, stirring with a wooden spoon until smooth and glossy.
  10. Pour the glaze over the pudding and serve with unsweetened whipped cream, if you like.

GRANOLA DE NAVIDAD

Granola de Navidad

La receta de esta granola es bestial. Yo la hago todo el año muy parecida, pero para darle el toque navideño le añado especias como canela, clavo, anís, cardamomo, semillas de cilantro, nuez moscada y jengibre. Las mezclo un poco a ojo y las voy incorporando a mis recetas.

Porque si algo brilla por su ausencia en estas fechas es el tiempo. Entre comidas, regalos, compromisos varios y los niños en casa, cocinar con calma es casi un lujo. Por eso me gusta anticiparme y tener algunas preparaciones listas para resolver desayunos o meriendas en dos minutos y sin apenas esfuerzo.

Esta granola es una forma fácil y rápida de empezar el día desayunando de forma saludable.
Y lo mejor: los peques pueden prepararse el desayuno solos, cosa que —reconozcámoslo— en vacaciones se agradece muchísimo.

La miel cruda y el aceite de coco ayudan a que quede bien doradita, crujiente y con ese dulzor natural que no empalaga.

Pruébala con yogur, con bebida vegetal, como topping de postres... aunque te aviso: está tan, tan rica que acabaréis comiéndola a puñados, directamente del tarro.

Si en casa no sois muy fans de las especias, no pasa nada. Te dejo también mi receta de granola de chocolate que gusta a todo el mundo.

Se conserva en recipientes herméticos fuera de la nevera durante toda la Navidad (si es que llega… jeje).

Granola de Navidad

Ingredientes

  • 400 g de copos de avena
  • Un puñado de almendras picadas gruesas
  • Un puñado de avellanas picadas gruesas
  • 1/2 taza de semillas variadas (girasol, calabaza, lino…)
  • Especias navideñas al gusto (canela, clavo, anís, cardamomo, semillas de cilantro, nuez moscada, jengibre…)
  • Un buen puñado de copos de coco deshidratado
  • 80 ml de miel cruda
  • 60 ml (1/4 de taza) de aceite de coco fundido

Elaboración

  1. Precalienta el horno a 170 ºC y prepara una bandeja de horno forrada con papel vegetal.
  2. En un bol grande, mezcla los copos de avena, las almendras y avellanas picadas, las semillas y las especias navideñas.
  3. En otro bol pequeño, mezcla la miel cruda con el aceite de coco fundido hasta que queden bien integrados.
  4. Vierte la mezcla líquida sobre los ingredientes secos y remueve muy bien hasta que todo quede ligeramente humedecido y cubierto.
  5. Extiende la granola en una capa uniforme sobre la bandeja de horno, sin compactarla demasiado.
  6. Hornea a 170 ºC durante unos 15 minutos, removiendo a mitad de tiempo para que se dore de manera uniforme.
  7. Cuando esté doradita y huela a especias y a Navidad, saca la bandeja del horno y deja que la granola se enfríe por completo (se volverá más crujiente al enfriar).
  8. Guarda en tarros herméticos a temperatura ambiente.

ENGLISH VERSION

This Christmas granola is insanely good. I make a similar version all year round, but to give it a festive twist I add spices like cinnamon, cloves, anise, cardamom, coriander seeds, nutmeg and ginger. I mix them more or less by eye and sprinkle them into all sorts of recipes.

At this time of year, the one thing we seem to have less of is time. Between festive meals, gifts, get-togethers and the kids at home, cooking slowly and calmly can feel like a luxury. That’s why I love having a few things ready that make breakfasts and snacks come together in two minutes with almost no effort.

This granola is such an easy and quick way to start the day with a wholesome breakfast.
And the best part: kids can prepare their own breakfast, which —let’s be honest— is very much appreciated during school holidays.

The raw honey and coconut oil help it turn beautifully golden and crunchy, with a natural sweetness that doesn’t overwhelm.

Stored in airtight jars at room temperature, it will keep for the whole festive season (that is, if it lasts that long!).

Enjoy it with yogurt, your favourite plant-based milk, as a topping for desserts… though I should warn you: it’s so good you’ll probably end up eating it by the handful straight from the jar.

If your family isn’t too keen on spices, don’t worry. You can always try my chocolate granola, which is a guaranteed crowd-pleaser.

Christmas Granola

Ingredients

  • 400 g rolled oats
  • A handful of roughly chopped almonds
  • A handful of roughly chopped hazelnuts
  • 1/2 cup mixed seeds (sunflower, pumpkin, flax…)
  • Festive spices to taste (cinnamon, cloves, anise, cardamom, coriander seeds, nutmeg, ginger…)
  • A generous handful of unsweetened coconut flakes
  • 80 ml raw honey
  • 60 ml (1/4 cup) melted coconut oil

Instructions

  1. Preheat the oven to 170 ºC and line a baking tray with parchment paper.
  2. In a large bowl, combine the oats, chopped almonds, chopped hazelnuts, mixed seeds and festive spices.
  3. In a small bowl, whisk together the raw honey and melted coconut oil until smooth.
  4. Pour the honey and coconut mixture over the dry ingredients and mix very well until everything is lightly coated.
  5. Spread the granola out in an even layer on the prepared baking tray, without pressing it down too much.
  6. Bake at 170 ºC for about 15 minutes, stirring halfway through so it toasts evenly.
  7. Once it’s golden and your kitchen smells like Christmas, remove from the oven and let the granola cool completely (it will crisp up as it cools).
  8. Store in airtight jars at room temperature.

Trufas de coco y Nutella

Después de unos días de vacaciones obligadas (y digo obligadas porque ser madre y autónoma cuando tu hijo tiene un puente de siete días es imposible seguir la rutina de trabajo diaria), he vuelto a la carga con las recetas, esta vez, con Nutella® como ingrediente estrella para los que, como yo, sois unos adeptos a esta delicia, tomad nota de estas trufas de coco rellenas de Nutella®.
